Stack Of Breakfast

Waffles for breakfast! Following a great night’s sleep. And a fun forecast ahead!

I made Cait’s Plate style stack with yogurt drizzled throughout. I mixed chia, cinnamon and maple syrup in some Oikos and heated it for 30 seconds – too much! It separated just a little and got too runny. Next time: 15 seconds.

I’m computer working until lunchtime! BERF has been much more of an undertaking than I ever imagined – but in lovely way : )

    Waffle stacks look so pretty! 🙂 I always want to make them for breakfast and then I forget. I love the dollop of sunbutter on the top! Yum!

    Mmm, craving some yogurt so I can try something like this. We already have the [homemade] frozen waffles ready to go. Time to buy some milk and pull out the yogurt maker (after a couple months hiatus on a dairy-free diet).

    Where do you buy chia seeds and how caloric are they??? Do they taste and when you eat them are they hard?

      Chiaseedsdirect.com is the cheapest, but you can find them at most health food stores now. They are 60 calories per tablespoon and they are like poppyseeds

    I brought a small mason jar with greek yogurt and chia seeds to lunch for work yesterday. People were fascinated!
    PS-I’m using mason jars more and more and love that Ball sells plastic lids for them (both regular and wide mouth). Make it so easy!

    Look delicious! This is probably a stupid question, but do you own a waffle maker, or is there another way to make homemade waffles? I would love to make them, but I don’t want to purchase a big cooking toy as my apartment is so tiny!

      I don’t have one…I don’t think I’d use it and until we have a giantttt kitchen, I don’t really want one. But these are Kashi frozen and are 85% as good

    Oh boo that the yogurt got a little runny but at least the end result was still delicious! That’s definitely what counts 🙂 I definitely need to try the chia, cinnamon and maple syrup combo in the yogurt – that sounds delicious!

    I haven’t made or had waffles in a long time. We put my waffle maker away when we bought our house and I haven’t had the opportunity to get it out and make anything with it since!
