Productive morning ending shortly with an early lunch! What did I do differently today that caused me to get so hungry so early? I forgot the nut (seed) butter!! I swear that tablespoon makes such a difference in satiety! I could have gone another 45 minutes or so, but I have errands to run this afternoon and wanted to get lunch over with so I could get out of the house!

I made a fantastic open-faced sandwich on a thick slice of Dakota bread –

Topped with a layer of Whole Foods Lemon Hummus, 3 slices of sharp white cheddar and sliced avocado.

So thick I had to eat it with a knife and fork – which was actually quite nice!

    I agree, adding just a spoon of nut butter can make a huge difference in satiety. Love the look of your sandwich!

    I definitely always notice when I forgo the nut butter in breakfast. 11:30 rumbling tummy is the sign to let me know! 🙂

    I need to get some of this lemon hummus you speak of!! Or make some, I suppose. Lunch was early for me too today. I think it was because I had a really hard workout this morning so I’m extra hungry!

    your lunch looks sooo good! Haha it’s making me wish I could have that rather than what I brought to work! I haven’t had chips in ages, needs to be remedied!

    That looks delicious Kath!! I am going to try and do something with some avocados tomorrow! I have some fresh tomatoes from my garden that I really want to mix with something and I may make guacamole! 🙂 This is my first year having a garden and things definitely taste better fresh off of the vine!
