Craving Karen

Back at Hotel Karen!!

After that small lunch today, I was sure craving carbs this afternoon!! Karen was too! We both had small bowls of cereal upon my arrival home. Kashi Vanilla Island and Quaker Oatmeal Squares –

Then we shared a banana a few hours later before we all went to exercise

Matt, Karen and I had the gym to ourselves. SUCH FUN!!! We chatted the whole time, and I did about twice as much weight lifting as I normally would have thanks to feeling content with my company. Score! I did 40 minutes of ellipticalling and about 20 of weights.

Karen and I finished up our workouts while Matt put together dinner. The evening meal is always fancier with 3 people!

We had an AMAZING caprese salad – maters, TJ’s seasoned mozz, basil, olive oil, balsamic, salt + pepper.

A pork tenderloin in a teriyaki sauce that was OUT OF THIS WORLD GOOD because Matt cooked it down into a thick, sweet glaze. Those are chunks of garlic clove in there!

Risotto, which was more like white rice than risotto. The cook cut some corners, and we lacked parmesan cheese, wine and butter, which we now know are pretty important for good risotto!

I left some risotto and pork on my plate and licked up my veggies 🙂

We moved the table into the natural light. SUCH a difference!

A few more hours later….Karen talked me into sharing her craving for Yoforia! I have to admit, I’m feeling extra hungry today (maybe because of that small snacky lunch!?) and wanted yogurt as much to quench hunger as for the sweetness!

We got to Yoforia to see they now have Peanut Butter flavor!!! It was everything I’d hoped for.

I went PB crazy with Resee’s Pieces, choco chips and a PB cup. I got a blob of Ferrero Rocher on top (the darker color) and decided it had ZERO flavor so I scooped it off and gave it to Matt. No sense wasting calories on a flavorless bite. The peanut butter underneath more than made up for it!

Perfect summer night!

Very excited to sleep in tomorrow and have just a few things on my agenda for the next few days.

We’re going to Charlottesville on Wednesday-Saturday to hunt for a rental house. I sent a bunch of emails to set up appointments today and have a few top contenders. House hunting would be the time of my life if I weren’t nervous at the same time about finding something before someone else snatches it up! I absolutely love evaluating real estate.

I have a hankering there will be pancakes in the AM!!

    I had peanut butter flavored fro-yo a few months ago at Whole Foods. While it was pretty good (better than the chocolate!), I thought the coconut flavor was the BEST!

    I want fro-yo! I’ve never had it before 🙁 But PB sounds just amazing. Your dinner looks great too! (Risotto fail! Ah well :P)

    Wow I’m impressed that after road tripping it back you two went and worked out. I would be all wound up to get things un packed, settled in, and clothing washed. Must be because the gym is so close, makes it easier.

    haha, yeah, that risotto looked a little sad. I tried making it without wine once and the same happened to me. That caprese salad looks delicious! I love those type of salads where you can just throw together a few simple ingredients and come out with something amazing 😀

    We don’t have froyo joints on Vancouver Island, but while in Hawaii I was mixing dutch chocolate and peanut butter flavors with reeses crumbles on top EVERY DAY. Oh my God I miss it already!!!

    That caprese salad looks so delicious! Must make!!!

    Oh wow, your dinner looks so wonderful! The green beans and the caprese salad would probably be my favorite part of that meal. 😛 I’ve never had risotto, but I bet it’s great.

    Oh gosh, self-serve froyo is my vice! I always love the PB flavor the best. 🙂

    I can empathize totally with your real estate-related stress! I just signed a contract on a house this past week, and was totally freaking out over the 4th of July weekend thinking someone else would snap it up before we had a chance to make an offer on Tuesday. It was a HUGE relief when all the papers were signed!

    Good luck in your hunt for the next house of KERF!! Can’t wait to see what you find! 🙂

    Sounds like you had a relaxing night! That yogurt looks so good! I agree with you though, If I am going to eat something, it better be worth whatever calories it has! I take stuff off too if it doesn’t add anything to the taste 😀

    The fro-yo looks DELISH! By the way, this is a great week to visit Charlottesville!! It is restaurant week — $26/person for a 3 course meal at somme really great places!:) I haven’t decided which ones to try yet… I just moved so I have so many to sample! You should definitely check it out:)

    I find that when I eat snacky meals that I’m hungrier throughout the day. For me, I think it is because I haven’t had the satisfaction of a full meal – just a bunch of what seem like snacks to me, even if they equal what my meal would have been anyway.

    Hey Kath! I’ve been a quiet reader for quite a while, but I always enjoy your pictures and stories! I’m a native Charlottesvillian (yep, actually *born* and raised there–unlike so many!). My husband and I only just moved away (to Turkey and, yes, I’m even attempting to blog about it!) a couple of weeks ago. BUT, if you ever want any suggestions of Charlottesville neighborhoods or feedback about a certain area, definitely feel free to ask!     natural sunlight makes such a difference to eat in … we have a kitchen table but never eat at it b/c the sun’s rays can’t reach it…

    Your caprese salad looks so yummy! I haven’t had good luck with TJ’s mozzarella– The one I bought ‘tasted funny’. Might have to try a different one from there!

    Peanut butter is my favorite fro yo flavor 🙂 Ahh I’m SO glad I bought my house in a “bad” market- it was stressful enough making a decision & worrying about somebody else taking it first- I can’t imagine doing it in a hot, fast-moving market!

    You should record yourselves apartment searching and make your own Kath Eats House Hunters! Haha! I love House Hunters and evaluating real estate too (love open houses!), but it definitely takes the fun away when you’re searching for your own place and are on a deadline.

    Glad you made it back safely! Matt seems to be enjoying dinner duty lately! Dinner looks delicious. I miss reeses pieces. I wonder if I can figure out a way to make them at home? Probably not, but a girl can dream. I love looking at houses too, but I would imagine it to be a little harder from a distance and on a specific time frame. Have a great day! Hopefully your Sunday will be filled with delicious pancakes!
