Continuing The X’s And O’s

The husband gave me my v-day card late last night (he was holding out for suspense!) He hand-painted the bears, who have been animated since 2002. It was probably the most romantic card he’s ever written too 😳

OK, enough cheese!!

I stumbled down the stairs this morning and little headachy and definitely not very chipper, so he made the breakfast. And used the same bowl as yesterday to fill up with oats! Gasp!

I topped mine with a brownie heart from Diana’s cupcakes 🙂

Which I promptly crumbled over everything

Today’s Ingredients:

  • 1/3 cup oats, milk, water, 1/2 large banana, pinch salt
  • 1 tbsp wheatberries
  • 1 tbsp ground flax
  • ~1/3 cup chopped strawberries (I figured out the key to berries in oats!! I think they are too watery to be cooked in, but I heated these separately in the microwave for 20 seconds and then mushed them in as a topping – perfect way to enjoy strawberries and maintain the thick creamy oat style!)
  • Chocolate brownie heart
  • Coconut butter
  • Spoonful Barney Butter

OK. Today is 100% Biochem. Except that we are having company for lunch. The husband’s aunt and uncle are in town and are coming over to see our house. We’re serving this potato soup plus the husband is making bread.

So my agenda:

  • Now: Shower
  • 10:30-11:30: Prep study materials
  • 11:30-12p: Spot clean house
  • 12-3p: Lunch + hospitality
  • 3p: Blog
  • 3-6p: Study at Panera with Victoria
  • 6-7p: Workout at YMCA Express next to Panera
  • 7p: Party leftovers for dinner
  • 8-9p: Last minute studying
  • 9p: Get in bed

    wow! the husband is so artistic! I mean I knew from some of the other cards you have featured but WOW. He should make customized ones as a side hobby/job. I bet he’d get a lot of customers!

    That card is simply adorable! What an artist!

    Mmm, those oats are perfect. I usually heat up my berries in the micro before adding them to my oatmeal as well. I just think the texture is better.

    Have fun studying! I was just wondering what the coconut butter tastes like and what positive health benefits it has. I know that people used to avoid coconut fat because it’s saturated, but now I see it everywhere so the tide must be changing. Thanks! 🙂

    I like berries cooked right in the oats – never seems to affect the outcome for me, but maybe I’m less concerned about texture each time. I think I like them better than bananas (probably because I just like berries better).

    The popularity of coconut is likely just based on its fabulous flavor. While it does have a higher saturated fat content, many of us healthy eaters have a diet relatively low in sat fat, so a little in the form of coconut butter (1 tsp) isn’t going to make any difference. It tastes like of like a waxy coconut icing.
