<3 Leftovers. They make lunch so easy to pack!

This would be a hearty salad – spinach, carrots, zucchini – topped with leftover pasta, goat cheese and a small American Lamb burger from Tuesday night!

    What a lunch! Lamb, whole wheat pasta, and squash!?! Perfect! Leftovers definitely make the best lunches… I’m partial to dumping chopped, roasted veggies on top of baby romaine or, better yet, putting the veggies on top of good wheat bread with lots of fresh mozzarella… yum!

    I haven’t graduated anything since 2005! And I’ve never had the chance to wear one of those spiffy caps (they aren’t popular here in Canada I guess!).

    I graduated in winter of 2008, and high school in 04. I too love biscoff and first discovered it when traveling to and from europe. I need to get some soon. Sounds like a tasty and filling lunch!

          Yes and no. It supposedly can mix like a FP but I’ve never tried hummus or a chunky thing in it.

    Your salad looks amazing!

    I graduated with my Ph.D in Biochemistry this year. It’s still surreal when people at work call me Dr. Frannie (well, they call me by my last name, but I would like to keep that private). Also crazy to think that I’ve been in the education system for 20 years (I’m 25, which is still a young Ph.D by National Science Foundation stds)…

    oh, I LOVE biscoff! 🙂 one of the spas I used to work with had them in the waiting area… and I LOVE flying Delta just for that reason 🙂

    No graduations this year for me.. but I have bro graduating with his MBA, another friend with an MBA, a graduated lawyer, and a bunch of friends that are graduating into Mommy-hood 😉

    Baffled by two things: that you graduated from h.s. in the 2000s. Makes me feel old. Go, class of ’89! And, that you actually have a chocolate chest that has chocolate in it. If there is chocolate in my house, it is gone in 3 days. No more. Moderate eating instincts astound me.

    I graduated from graduate school in May, and it feels sooo nice! Everyone says I’ll miss it once I start work, but I don’t think so. It’s going to be SO nice to be able to enjoy my weekends rather than worry about getting projects done.

    Just graduated with my BSN on May 1st…and about to start my first “real” job at Vanderbilt University Medical Center on July 12th! It feels awesome/bittersweet to be done and kind of surreal that I’ll be a “real nurse” and not still a student nurse.

    I have to say that I really love your blog and have been inspired to eat more REAL food through your example (I feel that my days of eating “light” Yoplait yogurt are numbered :-)) And your low and slow sweet potato recipe is awesome! Keep up the good work!

    Potentially stoopid question, but what’s a salutatorian? Is it similar to a valedictorian? 😳 At our graduation, the Head Girl gave the address but I don’t think American schools tend to have head girls or prefects!

    I graduated with a B.A. (Hons) in Politics and History in 2003 and a M.A. in Modern Irish History in 2005. I want to graduate again!

      It’s 2nd place!!! I was technically the valedictorian at the end of our 4 years of high school (I pulled head in the last semester) but as of December of our senior year they had to choose and I lost by 0.001 of a GPA point 🙁 I got to give the welcome address and the val gave a longer speech.

        Thanks for the explanation, Kath! I’d never heard of it before!

        It just dawned on me what looked different about your grad photo – gowns! It was bugging me all yesterday! We don’t wear them for graduation until 3rd level. Even then, I refused to wear my cap because I disliked the symbolism of it (chaps don’t wear the caps in Ireland, only girls 😡 ).
