Classic Dipped Salad

Back in the day, I used to make salmon or tuna salad ALL the time. It was one of my favorite lunches to pack in my lunchbox when I toted lunch to school and work everyday. Something that might have looked like this or this. Kashi crackers were always involved.

Today’s salad was a spin on the old classic with a few extra mix-ins for fun:

  • 1/3 can of salmon (it was a huge can)
  • 1/4 cup brown rice
  • 1/4 cup cottage cheese
  • 1 big squirt mustard
  • 1 carrot, chopped and half a green pepper, chopped
  • Red pepper flakes
  • Pinch salt
  • ~1/2 tsp dried dill

I was going to add an orange but I was too hungry and wanted to sit and eat and then too full! So perhaps I will have that for a snack in a bit.

    That lunch looks terrific. I guess it is a sort of kind of sushi-ish bowl! I don’t eat fish, but I think I will work on a vegan version of this, it looks too good not to. Happy Friday to you!

    Perfect dip for a party or stuffed into little pita pockets or even rolled in a tortilla,,,oh the possibilities! Love the idea of cottage cheese instead of mayo! Delish!

    I used to eat tuna salad alot until I became vegetarian. I do make egg salad and I made and enjoyed some this week. Love your bowls~

    Ohh I like the addition of brown rice to your salmon salad. I think you were the one that gave me the idea of adding cottage cheese instead of mayonnaise, and now I can’t think of having it any other way. I bet the rice really adds a bunch of volume, which always makes lunches more fun to eat. Forces me to slow down a little. What brand of canned salmon do you buy? I got a few from Trader Joe’s but haven’t tried it yet. Looks like I know what I’ll be having for lunch now 🙂

      I usually just get a wild Alaskan at Whole Foods. The can is gone so I’m not sure of the brand. Trader Joe’s should be good and cheap – anything wild Alaskan! Their smoked herring are also incredible 🙂

    I love canned salmon – usually get Pink Salmon or Pacific Rose…never seen Alaskian!

    I didn’t realize you liked rice so much, it seems to be making its way into many of your meals lately…maybe it’s the bonus of the cooker! 🙂

    I love trying new foods and pretty much always like eating anything. But I have honestly never really given canned tuna or salmon a try. Something about fish in a can has always freaked me out, but yours always looks so good and fresh. What brands do you trust the most if I were to give it a try?

      I don’t know of any brands off the top of my head, but for salmon I always look for wild on the label. It can be pink, soho, king – but wild Alaskan is key! As much as I love seafood and DO like canned fish, I have to be in the right mood to eat it, and it’s not something I would describe as “totally delicious.” But it’s so good for me and such a cheap form of good protein that I still try to eat it regularly.

    Looks and sounds great! I too enjoy those salads, but mostly in the summer time. They are perfect after sitting in the fridge all night to soak up the goodness and then eaten cold the next day!! MMMM This is making me want summer!! 🙂

    Oh yum! I’ve been on a Chicken Salad kick lately. Diced chicken, apples, celery, raisins, almonds, little dijon and greek yogurt and a dash of curry powder. Yum…. I just ate it and it sounds good again! I might have to try salmon next time!

    I never tried canned salmon until a couple weeks ago. What did I ever do without it??

    I’ve never added rice to my tuna fish salad but I’ve made a tuna fish casserole with brown rice and cottage cheese that turned out super creamy and loved it so I’m sure it’s a great addition!

    I just tried this recipe using tuna (without the rice, because I burned it haha) and holy cow! SO good. I used celery to dip since I didn’t have any chips or crackers on hand. Just wanted to say thanks for a quick delicious lunch that’s definitely going to become a staple 🙂
