Younger Than Springtime

Wishful thinking:

IMG_5644Blog

Another jar bites the dust!

JarzBlogIMG_5654Blog

Chia Charger, you were so good to me.

IMG_5648Blog

I filled this bad boy with:

  • 1/3 cup Coach’s oats (I love these cooked, but not overnight. I need more rolled oats!)
  • 1/3 cup greek yogurt
  • 1/2 cup milk
  • 1 tbsp chia seeds
  • 1/2 cup frozen berries
  • Peanut butter residue

Hot diggity tea

IMG_5650Blog

It may be colder outside, but the cheerfulness of this week’s warm weather is still in the air. A sweet Robin is dancing around my desk window!

Hello, this recipe is kinda vague. Do you just leave it out on the counter to ferment or place it in the fridge? Do you microwave it first, please explain.
        Thanks.

I’ve got to try this chia charger… or better yet, I need to try to make my own chia infused nut butters at home. I bought a big bag of peanuts at Whole Foods last weekend with the intention of making peanut butter, but so far I’ve just been eating them by the handful. 🙂

Kath, I know a few weeks ago there was a big to do on here about the your lack of content.. I have to agree. I am moving on to other healthy living blogs and I know that you don’t really care and that’s ok but I just wanted to maybe get you to think about it at least for a moment. I have probably been reading your blog for 3 years or so, even have your app on my phone. I guess as time goes on we all grow and change, but your blog isn’t growing with me. I know your gig is to make a photographic journal of your food intake but I really think you waste your knowledge and talent on just taking pictures of the food you eat (which is pretty much the same old thing everyday). You are a registered dietician and you don’t even really share any of that knowledge with your readers, if someone asks you a specific question about say “what are the benefits of chia seeds and why do you choose them?” you pretty much just give a link to another site somewhere. I don’t know, something has just changed on your blog and it is time for me to go. I wish you well and may you have continued success, but please reconsider your content and maybe change things up with maybe a topic of week regarding say nutritional supplements, diabetes, obesity, vitamins, water intake, fat loss, weight training and aerobic activity, caloric intake vs intuitive eating … anything really that a RD would address.. I would find any of that more interesting than just a photographic journal of your food intake. Please don’t anyone respond in ugly fashion to my post, the intent of this is not to start a Kath bash but to maybe have Kath think about posting some sort of nutritional content on her blog other than photographic journal . It was a good ride while it lasted, but I gotta move on.

    P. S. and i know it isn’t gonna happen, but it has really bugged me that you don’t iron your linens that you photograph on.. it really takes away from your pics to see those folds.. but hey, that is just my OCD tendencies coming through and we all have our quirks. 🙂 best to you and your family Kath.. take care.

      Hey Cheryl,

Thanks very much for your comment. KERF has always been a food journal. Rather than answering the question “why should I eat healthy,” its mission has always been to answer “HOW do I eat healthy” via creative dishes and real life, real food photographs of meals. Most people (especially ones who come here) know what to do or why healthy eating is important, but it’s harder to put it into action. Since day one, KERF has first and foremost been a food journal. The only thing that has changed was the removal of calorie counts when I stopped counting myself.

When I went back to school, my hope was to open a brick and mortar nutrition private practice. As my blog grew, that dream shifted to an online practice. Then the game changer happened: Matt and I decided to open a bakery. This meant trading in one side job for another, and I veered away from nutrition and towards entrepreneurship. I still finished my degree because I was so close to the end (and because education is never wasted!), but my career plans were no longer seeded in nutrition research.

I tell you this not to make an excuse, but to point out that any lack of nutrition research on KERF is not out of laziness – it is because the blog was never intended to become a nutrition research site and my career plans changed away from building a separate one.

I share links out of efficiency. If I find a site that already lists all the same reasons I would on why chia seeds are beneficial, there’s no need for me to re-type everything. When someone asks for my opinion on a food or topic, I almost always give it give it in my own words, but facts are facts. There are tons of sites where you can go that summarize nutrition research that do it in a much more efficient and concise way than for me to spend time re-writing it all in my own words.

Nevertheless, I appreciate the feedback on why you are leaving and wish you the best in your blog searching journey!

I liked your response Kath, except for:

“The only thing that has changed was the removal of calorie counts when I stopped counting myself. ”

As a reader since 2008 I must politely disagree. If you went back and read blog entries from 2008/9 you will see much more a difference than that. I still read your blog and don’t plan on stopping, but it is a completely different blog than it used to be. As you said, plans/people/goals change. 🙂

I agree it was much more seeded in weight loss then, as I had just finished losing weight. I guess it comes down to that I as a reader wouldn’t want to read those kind of details, so I took some of the weight loss talk out over time. I guess I write what I am most interested in reading.

      Hi Holly,
I make baked oatmeal all of the time. My recipe (from Heidi Swanson) is a bit different, but very yummy. It keeps several days and has sort of a bread pudding type of consistency. We love it with a layer of bananas and then berries, topped with the oat mixture and then the milk/egg mixture. I put nuts in it but not on top as they always burn.

Love this! I am obsessed with the spoon you used in the photos! Where did you get it?
