chef’s surprise

Per usual, I asked Matt what he wanted for breakfast. I have a hard time deciding and his vote is always the tie-breaker. Plus I’m always up first to get started!

His request: “Basic KERF oatmeal. No pumpkin.”

Ha! I asked if we could compromise with cottage cheese – freshly purchased!

I snuck pumpkin into mine anyways with a crumbled pumpkin muffin from the bakery.

Since we opened in June, I haven’t brought much home other than the occasional loaf of whole wheat for sandwiches and random things like granolas. I eat enough sweets nibbles while I’m at work as it is! But yesterday, Matt brought home some leftovers. I had no choice but to dig in!

Pieces were missing already. I have no willpower around wholesome sweets like this!

Cottage cheese blueberry oats with chia seeds, banana and pumpkin muffin on top. I always stir in the cottage cheese near the end of cooking.

Note how the Barney Butter melted in – this is how you get drippy nut butters if they aren’t at room temp. Rest your spoon in the hot oats and then lift it back out and swirl

    I’m just like that around wholesome baked goods. Ive started to stick a majority of it in the freezer almost immediately. Fortunately baked goods defrost fabulously!

    I love the idea of a crumbled muffin on top!

    The drippy, smooth nut butter on top looks delicious! I love it when things like that get all melty:)

    My husband doesn’t like pumpkin either! I find that to be pure craziness.

    I do the exact same with nut butters if they’re not at room temperature. The melty nut butter is key to a good bowl of oats in my opinion 🙂

    What type of cottage cheese do you purchase?

    I usually buy 1% Nordion Cottage Cheese that has xantham gum and a few other ingredients. There is a brand with just milk and salt but it’s really dry and not the same.

    I haven’t thought of putting cottage cheese in my oats before, is the texture like that of cottage cheese when cooked?

    Mmm…that pumpkin muffin looks tasty. After reading all your posts incorporating pumpkin, I went out to get some of the canned stuff to use in my oatmeal this morning. Both stores I went to were completely out! Next time I see some, I’m buying stocking up.

    That looks so delicious! and I’ve heard of cottage cheese in oats, but this just seems so odd to me! How much do you add to a normal serving of oats? And do you use less milk? I’m fascinated and confused at the same time…

      You make oats as you normally would and just stir in a 1/3 cup at the end (maybe start with less to see how you like it).

    I have to admit I have been eagerly waiting for CVille Clusters to appear again on OpenSky and now I have just found out that OpenSky does not deliver to Europe… Sucks! You always make it sound sooo good! I wanna taste it!!!
    Well, I love your blog and you inspired me into investing some more time and thoughts into my muesli. Putting nut butter into one’s muesli is the best idea ever! I have bought chia seeds now and I love them. They are a little like flax seed but not really.
    A muffin in my muesli one day will probably bring me to muesli heaven.
    Perhaps I’ll make it to CVille one day 🙂 Enjoy your Sunday!

    Pumpkin muffins are my favorite! I just bought my first (GIANT) can of pumpkin of this Fall and I’m so excited for all of the yummy pumpkin treats…and pumpkin oatmeal!

    Hrmm… cottage cheese in oats! That is a combo I had never thought of! I might have to try it! I have been in a pumpkin kick lately too… Pumpkin Quinoa Pancakes were had in our house this morning 🙂 I <3 Fall!!

    I can’t believe it’s only a week away…wow, you are knee deep in project pack, donate, declutter. I just went thru this…we moved into our current place about 6 weeks ago. And I have moved about 10 times in the past 10 years. Not all by choice, some by circumstance, and each time I donate more and more and more to Goodwill, Salv Army, etc.

    Good for you for packing LESS and giving away more. I always say at the other end when I am unpacking, or carrying in the boxes, why didn’t I donate even MORE! 🙂
