Cheesecake For Breakfast

It was so cold when I woke up that I went downstairs to retrieve my laptop and noodled around on the internet in bed for a bit (the intention was to start some research).

When I emerged from my bedroom I saw these silly bears staring back at me from the guest room! Matt gets dressed in there on his early mornings and the bears had snuck into his jeans last night. They looked pretty well-behaved this AM 🙂

Then I decided to skip yoga (cold and I’m a little sore from running) and took a shower first thing. I miss doing that! Made me feel like an adult! I’m planning an evening workout with Victoria and couldn’t stand to go unshowered for the majority of my day.

Then came breakfast. I made these Strawberry Fig Cheesecake Oats with some leftover ricotta, greek yogurt and cooked strawberries.

The Mix:

  • 1/3 cup oats, vanilla soy milk, water, half medium banana, pinch salt
  • 2 small figs
  • 2 tbsp wheatberries
  • 2 tbsp part skim ricotta
  • 1/2 cup strawberries, cooked in the microwave for 45 seconds (you should have seen the liquid they produced that would have watered down my oats!)
  • 1 tbsp TJ’s greek yogurt mixed with a few drops maple syrup
  • A walnut brain
  • Edging of Naturally More

This was good, but not my favorite mixture. The ricotta was noticeable and i don’t like ricotta! I never have. Cottage cheese would have been better!

    I’ve never seen a cat slide like that with their legs splayed out… love it. My cats love to get their heads stuck in tissue boxes!

    You probably have covered this before but do you every eat the steel cut oats? To simplify to cooking I soak 1/4 cup in 1 1/2 cup H2O overnight in a large microwave safe mixing bowl then cook 8-10 minutes in microwave or until desired consistency. If you don’t like the taste that is one thing but if it is the long cooking process the soaking is a way around it. Have a great day!

    allison- 1) add tomato sauce to a homemade pizza 2) bake an eggplant and cover it with tomato sauce 3) bake a spaghetti squash and cover it with sauce when finished

    Mmmm, those cheesecake oats sound good.

    I actually have tried my oatmeal topped with a little bit of actual dessert cheesecake, and it’s really good! You only need to add a little bit of cheesecake since it’s so rich, but is it ever yummy! A nice treat, for sure.

    stinks these oats are not as good as they look. i was just copying it into my recipe ‘to make’ folder on my computer desktop, but then saw that they weren’t too yummy!
    but, i am going to make them anyway and replace the ricotta with cottage cheese (since my family doesn’t buy ricotta regularly anyway). i’ll let you know how they are next week when i am home for break!

    can’t wait for lunch!!

    You two and the bears— TOO cute!! Even if that wasn’t your fave combo for oats, they sound and look divine! I’ve only had ricotta in a savory setting, so I may be on the same boat with you for feeling iffy about them in oats. Pumped to see what the give away is!

    I’m with you on not liking ricotta in my oats. I tried it once, and it wasn’t for me. I have yet to try cottage cheese though.

    I don’t like steel cut because the portion size is so small! They don’t bulk up and get creamy like rolled oats do. And I dont’ think they are as sweet. I like steel cut every now and then though.

    I’ve never been a fan of oatmeal….until I ventured out of my comfort zone and made your classic whipped banana version. YUM! I am a huge fan of this breakfast now. I haven’t really experimented with many different ingredients, but have recently added ground flax and a sprinkle of coconut. 🙂
    Here is my question-I really enjoy soy milk in my chai teas and lattes so I tried it in my oatmeal recently instead of my usual skim. However, my oatmeal seemed less creamy and the oats seemed more chewey. Why? What can I do with the soy milk to make a creamy oatmeal again?!

    That’s a great idea to stir greek yogurt into the oats — I’m always looking for ways to add more protein to oatmeal. Do you ever stir in ground flaxseed for added fiber?
