Cheeseburger & Fries

Not your average burger & fries

 this !

IMG_0779 (1024x768)  IMG_0781 (1024x768)

Then again, neither is this: Banana Hot Dogs + Fries.

I made my way to the gym at 11:30 for an hour of cardio + abs. I did a circuit today with 15 minutes on my bike to get there, 20 on the Stepmill, 20 on the ET, 10 abs, 15 bike. Since I did the stairs yesterday and am planning the ET at Winthrop tomorrow, I didn’t want to do too much of any one thing. I am dreading biking to the gym less and less since my “Life’s About The Journey” post.

Once home and showered, I was starving for lunch! I had the end piece of this mini loaf while I waited for lunch to cook.

IMG_0777 (1024x768)

My burger was a portobella mushroom, brushed with olive oil and baked for 10 minutes. Then topped with a little sharp cheddar and place on a bread bun with ketchup, mustard and pickle.

IMG_0787 (1024x768)

IMG_0780 (1024x768)

And on the side – kale chips!! I planned this lunch into my grocery list this week.

IMG_0785 (1024x768)

Plus a bowl of strawberries on the side –

IMG_0783 (1024x768)

I am SO full now!!! I guess the kale is more filling that it appears as airy crisps.

Kath’s Mid-Winter “I’m Freezing All The Time” Warm-Up Routine

After an hour of desk work, I am normally frozen top to bottom. Here’s my newest 10 minute routine that warms me up:

  1. Put a cup of water in the microwave on high for 3 minutes to be ready when you’re done. Set out teabag to flavor it.
  2. Add another layer to your 3 layers to equal 4. I like my heavy Davidson Lacrosse sweatshirt.
  3. Put on gloves (I put on my computer gloves)
  4. Do 5 minutes of housework to increase your heart rate. I like vacuuming. Sweeping and mopping are also good, as is anything that involves moving!
  5. Resume desk work with hot tea in hands.

We’re having some new friends over for a casual dinner tonight so we can give them some Great Harvest bread. I’m making Butternut + Lentil Soup from a mix I got as a gift 🙂

I feel like I haven’t seen the husband in ages!!! I have a very faint memory from the middle of the night when I said “Did your alarm go off?” in confusion, and his car is gone, which means he was running late. I hope he didn’t sleep through his alarm!

Your lunches are very inspiring… now I know what I’m having for dinner. Thanks!

Love your warmup workout. I do almost the same thing at work while I microwave water for tea except I do wall push ups or squats instead of housework.

Kath, can you use any kind of kale to make those kale chips? I think I’ve heard that one type is better than others?? They look so tasty, and I love your “cheeseburger and fries” lunch.

Sadly, I’ve never learned to like kale chips. 🙁 I’ve tried a few times and I’m just not a fan. I do like kale in soup though! It’s chewier than spinach, which I don’t like cooked at all.

Love those kale chips! I’ve been experimenting with kale lately and you’ve certainly been an inspiration. I love how “volumetric” it is, especially when you bake it like that. It’d be fun to compare that with the nutritional profile of the same volume of potato chips!

    Kath,

I have to say once again it is very uplifting reading your blog and knowing that is is possible to eat healhfully. I read the book Intuitive Eating previously and I have tried to read it again recently, but I can’t seem to get through it. However, I think the 10 points they have are good and I am planning on keeping those in mind when I eat. I also just oredered Fit From Within and I am very excited to receive that, because I think it will give me more insight on how to continue to eat healthy and intuitively. Also, I notice you enjoy wine, my husband and I do too, on average how many times a week would you say you drink and how much? I think that is one area where I struggle because we are fairly social people.

    Thanks!

    linds ,
I think the kale with the curly edges does the best. Better than the kind that is flatter. We only have one kind in our grocery stores here, so that makes it easy.

    Lisa ,
375* for the chips. Had I just done the shroom, I would have used 400*.

    Meredith
    Anthropologie this weekend.

    Katie ,
Good for your for working on intuitive eating 🙂 I have to say, I am torn on the subject of alcohol. I do love wine, and drinking, and being social with a big wine glass or a pint of beer, and I would never give it up entirely for its enjoyment and wonderful taste, but my body does NOT like alcohol. Not only do I get hung over (and black out) very, very easily (sometimes I can feel just 1 glass the next day), but my weight doesn’t like alcohol either. I tend to retain water when I drink and nearly ALL of my pig-out sessions are correlated with alcohol. I’d say I drink once a week (usually on the weekend) and have 1-2 drinks. But that’s just an average. If I’m on vacation it’s usually once a day (just 1 drink, or sometimes much more). It just depends! But I was always most successful with my weight loss when I went through a week AND a weekend without alcohol or a party.
