Celebratory Lunch!

Woooo hoooooooo! Done with the semester!!! Both of my exams went really well. I’ve got a week and a half off (filled with traveling and events) until my night school chemistry starts and a month before my slam-packed summer school session starts.

Christy and I celebrated the end of Medical Terminology with wine at Cupps.

I ordered my very favorite salad with a scoop of the best black bean hummus in the world. I shared a third of the hummus with Christy but otherwise ate every bite of the salad!

The wine left me a little tipsy and dehydrated, but it was worth every sip 😉 We walked it off after lunch.

But here’s the sad news: Cupps is closing!!!! 😥 In 4 days. I’m SOOOO SAD!!! This was the last time to get my favorite salad, dressing and hummus. I’m going to email them for the recipe. But the good news is the EarthFare they are building across from Winthrop just got its sign up today, so it should be opening in a few weeks! I’ll have another fun lunch spot soon.

My muesli did strange things with my hunger. I was hungry at 9:30 (only 2 hours later!) and then growling at 10:30. I drank some water and then ate some of my emergency trail mix around 11:30. That did the trick and kept hunger at bay until our 1:00 lunch date.

    That’s so sad that Cupps is closing! It always looks like such a cute place to have lunch! Do you know why they’re closing??
    Congrats on being done with exams! Enjoy the next couple of weeks before your schedule gets crazy!

    PS-Wine in the afternoon sounds wonderful!

    Kath, for the cheese danish pancakes, do you have to let the batter sit at all so the oats absorb some of the liquid? If so, how long do you let it sit for? Thanks!

    Please share the black bean hummus recipe if you are able to get it from Cupps. I love hummus and black beans, so the combo sounds divine!!

    How about one of the entree salades with balsamic on the side and a broth based soup. That should fill you up be healthy?

    Justy, I’m not sure why they’re closing because it’s always busy, but I think the owners are overworked.

    I thnk that 3/4 lb of butter is 3 sticks. So that would be 24 tablespoons. (8 Tblsp in a stick)

    I want to join a gym when I go back home for summer & have many near-by options
    -Gold’s
    -24 Hour Fitness
    -Life Time Fitness

    Any suggestions? I like doing mainly cardio & I really like classes!

    Just thought I’d point out that the oats should be blended (in a blender/with a stick blender) for that pancake recipe! Enjoy them…they’re yummy 🙂

    I celebrated the end of my semester today with lunch out and wine, too! Well done and enjoy your brief break before it all starts up again. Your haircut looks reallly nice and I agree – Christy is so pretty!

    LT-
    Are you wanting to only join for a summer? Some gyms (I’m a member of Gold’s) require you to have at least a one year contract. I have a two year contract, which makes my monthly fee lower, but I’m pretty sure both 24 hour fitness, and Lifetime are similar.

    Although..maybe they are all franchises and they can each chose how they do things.

    Just look into it before you join. “Membership directors” can also be kind of pushy (sorry, if I am offending anyone, this was just my experience), so don’t let your self get talked into anything, unless you are ready to commit.

    I would order either:
    Vegetable lasagna made with polenta and Baita Friuli OR
    Baby spinach with mushrooms and red peppers in a warm pancetta, shallot and balsamic vinaigrette (dressing on the side) OR
    If I wasn’t senstive to wheat I would get one of their whole-wheat crust pizzas YUM

    Depends on how hungry you are – but I am sure the lasagna would be good for leftovers too!

    Looks like a delicious menu – enjoy it!

    so i’m buying an elliptical with some of my grad money and I need some help! I really want a life fitness one but they are way too much. Does anyone own a nordic or another brand? do you like it and where did you purchase it? thanks guys!

    It’s an herb-olive oil dressing. Maybe with a little vinegar? It’s like rosemary heaven. I’m so sad I won’t be able to get it anymore. I don’t use the oil – just spoon out the herbs, so I don’t know how cost-effective it would be to make it myself.

    I’m still wearing my heart rate monitor, if that’s what you mean, because I wear it for reasons other than looking at calories burned – it’s a great personal trainer on the wrist.

    That hummus always looks so amazing! Sorry it’s closing!

    I’m almost done with my exams…and then similar to you, I only have about 2 weeks off before I start back up again! Oh well, just gotta keep chugging away! I’ll enjoy every minute of my break though!

    LT- I’m a member of 24 Hour and I like it for the most part. They have great FREE classes (Turbo kickboxing, hip hop, yoga, pilates, and many others) and you can’t beat their hours. I have an all-gym membership so I can go to several locations.

    One thing you might not like about this place is that the sales people can be a little pushy and some clubs are a little meat market-like, especially in the weight room. I don’t pay attention to the last part and just walk in like I own the place. Good luck with your choice!

    I am a member of 24 hour fitness and LOVE it. I am addicted to several of their classes, my favorites being athletic training and core central because they both combine cardio and strength for a fantastic and quick workout

    mel, a few years back we bought elliptical Nordictrack CX 1055. It’s worked great for us. I’d recommend a maintenance plan, ours got a little temperamental, the rubber wheels/ball bearings needed changing on two occasions, fan needed repair, but overall, a great investment, has the different levels/incline/preset courses etc. Hope that helps.

    LT, I go to lifetime and LOVE it. It’s a great gym. There are no contracts but know that when you join any gym you will have to give three months notice to end your membership. At lifetime you don’t have a contract but when you decide to leave you will have to pay three more months but this is true of all or most gyms. I don’t know much about 24 hour my friend went there and then switched to lifetime. I personally love lifetime they have great classes and great customer service. If you do join barbell strength is a kick butt class and the cycle classes are great.
