Catch Up + Mustard

As is only natural for a new mom, I got really behind on my work last week. I had BERF and Real Health posts to write and some KERF business to catch up on. Sundays are usually our day to spend around the house, doing laundry and things, to prepare for the upcoming week and have some family time. Today while Matt worked on a few of his Sunday bakery things [inventory + ingredient ordering] with the baby napping against his chest, I was able to get a few hours worth of my work done. Feels so good to be caught up and ahead so I can spend this week focused on Mazen – especially now that I’ve noticed he is interested in toys!

The morning began with some good late sleeping and hearty French toast! Topped with seared pears and apples, granola and Nutty Butter.

Sarah brought me two of her latest flavors as a birthday gift – Pumpkin Spice and Cranberry Shortbread. I don’t know what about this made it shortbread, but I loved the taste/texture.

After M’s morning snack, we all went to the gym together for the first time! Karen met us there for some babywearing fun while Matt and I both worked up an efficient sweat. I did 26 minutes on the elliptical and some good weight lifting. I can’t wait to get back to my Pump Challenge class. I’m trying to challenge myself on my own, but it’s just not quite the same!

I can tell a storm is looming and we’re not even in the direct path. I hope those of you who are stay very safe.

We actually made two dinners tonight – tacos for today and baked potato soup for tomorrow! Stocking up.

Our tacos featured some grass-fed beef I bought at the farmer’s market plus greens, green pepper + carrots cooked, pickled jalapenos, salsa, greek yogurt and lots ‘O cheese.

I bought some Garden of Eatin taco shells and wasn’t all that happy – how are you supposed to fit ingredients in here without it breaking!?!?

A while after dinner, I ended the night with a little mug of vanilla bean ice cream. Gotta use it up before it’s too cold to think about anything frozen! [Except for the birthday cupcakes and slice of Larbs’ birthday cake in my freezer. I’m saving those for a special occasion!]

    I love those days when you can get a lot done.

    Do you usually have to-do lists going, either on paper or on your computer or phone?

    I used to write lists down, but use the Reminders app on my iPhone, which works great!

    I have that issue every time I eat tacos at home. I just break the shells in half from the get go and create mini tostadas. Much easier to eat!

    I haven’t had Sweet Karen’s nachos in so long because of a night class. I might change Taco Tuesday to Friday untilthe end of the month. Or December. I do miss them.

    I would have to say that baby playing is the only thing that makes laundry folding a little more enjoyable.. 🙂 I am not a momma yet, but I sure do know how nice it feels to get all caught up on house work and actual work! Complete bliss!

    If you warm the shells in the oven, they will still be cripsy but warm enough to pull apart a bit more to fill witout breaking. You little Mazen is getting cuter and cuter!

    Kath, i think it’s great you get all your work done and are getting back into fitness… i’m not sure what happened to me when i had Rowan last year – i just couldn’t get anything done! I think i am only just getting myself back together LOL!

    I am going to have to steal your taco meal idea, my mouth actually watered!

    I have not yet found a taco shell that is made so you can get ingredients in there! I’ll watch the comments to see if anyone has a brand recommendation. I just buy tortilla chips and make salads. Or soft tortillas for soft tacos. Maze is very cute!

    I don’t have good luck with hard shell tacos. They ALWAYS fall apart on me! I’ve switched to a small handful of tortilla chips instead. Works great – we have tacos on the menu for this week too. Can’t wait; one of my favorite foods.

    Just a suggestion….When you heat the shells up, so you link them together? You insert one end of a taco shell into the end of the next and so on, they prop themselves open. Say you do 4 shells, you form a taco shell square….Hard to describe, but as they heat up they stay open and wide.

    That Pumpkin Pie/spice butter looks amazing! I just bought some pumpkin butter from Trader Joe’s and it’s really good. Does your friend Sarah sell hers? In regards to hard taco shells, we make our own by getting a corn tortilla and just frying it a little and then flipping it and folding it over. We haven’t found store-bought shells that are good.

      It’s the Chicco Travel Activity Mat, but I’m not crazy about it. The design is not very good so it doesn’t stand up very well. I just ordered a Skip Hop one that’s a real playmat

    It never fails for hard shell tacos to break on me. There’s just too much good stuff to go in. Mine always end up being a taco salad instead.

    Hard tacos are such a tricky thing! I can never fit in enough ingredients before it breaks. That’s why I stick to the soft ones. Pliable and just as yummy.

    YUM, pumpkin pie nutty butter! Sounds amazing. I gave up on hard tacos shells a long time ago. If I’m in the mood for them I normally just break them up and make a taco salad.

    Hahahaha the only thing that makes it shortbread is that it kind of reminded me of a Girl Scout Trefoil Cookie…and Nutty Butters have to have delicious treats for names. 🙂

    Do you freeze cakes/cupcakes with the frosting and everything? Does it taste the same when you thaw it out?

      Yes. My mom taught me the trick is to unwrap them frozen or the frosting sticks to the foil. They don’t taste AS good, but they still taste very good!

    You need this! http://m.buy.com/product/details/232239989?listingID=221828539 I found mine on amazon, but I guess they don’t carry it anymore. 🙁 I use the TJ yellow corn tortillas and no oil (oil makes them slip off in my experience) and they turn out great!

    I have the same issue with those taco shells. I like to use the small soft tortilla ones, then stick them in a warm skillet for a while, then flip. It gives them a little bit of a satisfying crunch and you can fit many more toppings in. 🙂 Glad you were able to get caught up on some work!

    Ohh I didn’t know that Garden of Eatin’ did taco shells. Although, yes, those are quite skinny, ha! Looks like a yummy taco bowl though. I’m hunkered down here in NYC and now I can’t stop thinking about Mexican food. Thanks a lot. 😉

    I usually stick to homemade soft tortillas or taco salad with crunched up hard shells because my shells inevitably break every single time and it frustrates the heck out of me!
