Carbs + Barbs

My parents picked a great day to come to lab – it was homemade pasta day!! We each were assigned two recipes and got to work.

Kelsey and I were assigned Austro/Hungarian Style Drop Noodles. Here’s the recipe. It was super simple, but I have to say they weren’t my favorite:

WW and AP flour noodles (the WW were way better!)

The AP were a little too mushy. I would probably prefer dry pasta to this recipe – it was a lot of work for not the highest quality product.

K and I were also assigned to a Four Cheese Sauce Recipe (with cream = not low-cal!)

My taste testing included a sample of each kind of pasta: 3-cheese, gnocchi, a matzo ball, raw noodle dough. Plus a ravoili and more noodles. I sampled more than you see here – 5 more pieces?

My parents had a lot of fun in lab (although they left for a good 2 hours while we cooked and came back for the taste test). My dad said the lab was more pleasurable than he was expecting. Guess he is used to seeing chemical reactions and gross tomato sauce being evaluated 😉

The carb fun continued after lab to Great Harvest!!! I left my camera in the car, but Matt was able to let us sample a handful of things: Ambrosia bread, Savannah bar, turtle bar. When we got home no one wanted lunch!!

After some downtime (my mom now loves The Office!) we did get a little hungry in the 2:00 hour. I made us salads!

That was over an hour ago, but I’m feeling my stomach start to rumble again! I might need some yogurt soon. Dinner isn’t until 8pm.

Our weather is horrible and we haven’t gotten in a walk. Dad (who is as much of a weather nerd as I am – we discuss it constantly) says there should be a break in rain from 4-5pm when we could go walking. I hope so – I have couch fever!

Tonight is hor d’oeuvres at Karen’s and then dinner at Mama Ricotta’s (again! Karen booked it for our company last Friday when she liked it so much).

    I love making homemade pasta, especially with the kitchenaid mixer attachments. I’ve posted a few times about it, and I like the fresh stuff much better than dried. It almost has a ‘spongy’ texture? Although the best pasta dough recipes have quite a bit of egg yolk! That looked like a lot of fun in lab; have fun with your parents! I think my mom may be come visiting in september 🙂 miss the family

    Glad Cliff and Norm are having fun with you and that you fed them Hugh Jass salads! I also converted my parents to Office fans, though they still struggle to get the “that’s what she said” jokes.

    That salad looks soooo good, I am making one just like that when I get home. Don’t get me wrong I like Thai food but not for every meal :-). Your pasta also looked great. You just gave me some first meals home ideas.

    the reason the AP flour noodles didn’t work is because you have to use semolina flour from durum wheat, the higher protein content makes it really strong in structure

    What exactly is the class for? Do you measure the nutrition of each item? Or is it to learn how to cook different things?

    It’s a Great Harvest bread with fruit and icing. Yum!

    Everything from ingredients to sensory analysis to new products. This lab was learning about the different ways to make pasta (one of the more fun ones!) but last week was more chemistry with leaveners and measuring volumes. It’s all just to get to know food science.
