Bread Heads

What happens when three bread heads get together for dinner?

They eat vegetables!

We grilled all kinds of good stuff – all smothered in olive oil, salt, and smoked paprika! I took the sliced sweet potato and microwaved it for a good 6 minutes first to soften it, then I put it on the grill for outer crusting.

Plus zucchini, shrooms, bell pepper and bacon

I made a bean salad with about 3 cups of beans Karen brought us (thanks Karen!! They were delicious!)

Smoky Bean Salad

Serves 4-5

  • 3 cups beans, cooked
  • Half a tomato
  • Grilled bacon
  • Grilled 2 chopped, grilled bell peppers
  • 2 ears of grilled corn
  • 2 tbsp chopped fresh oregano (thanks Faith!)
  • 2 tbsp sour cream
  • 1 tsp smoked paprika

Mix all together in a bowl and serve

The simple flavors were great!!

We also had a big bowl of garden greens with the grilled shrooms, zucchini and garlic gold oil

For dessert we broke out the brittles. These brittles are SO F’IN GOOD!!!!!!!!!!!!! We tried the cashew, pistachio and hazelnut tonight. Hazelnut is still my fav, but I sure love the cashew too!

    ahh I love brittle! at the restaurant I am interning at they serve peanut brittle as their “to go” gift and I can nosh on it all day! Especially the first few days of work! 🙂

    Mmm – that food all looks so delicious. I’ve never had grilled sweet potatoes but this post makes me want to try them and soon!

    PS – I love, love, love that table – you may have done a “home neat home” post on it (or just another post that I may have missed), but where did you get it?? did you buy it distressed?

    Oh yum, it took me a while to get into grilling for the season – crappy Boston weather – but I’m fully into it and fully intending to recreate everything you posted here. So intrigued by bacon on the grill, I wonder if I can get away with a tempeh version hmm… Everything looks delish!

    Wow. Sounds like Christmas time in the summer! I never eat brittles except around the holidays. Must change that!

    Hi Kath! Quick question re: the sweet potatoes- did you literally slice them, slap them on a plate and microwave for ~6 min before grilling (any flipping, covering, etc?) Really want to make these but want to be sure I soften ’em up the right way first!! Thanks! xoxo

    As if we need to eat more bacon…..I have to tell my husband about the grilling idea! We have a gas grill and a charcoal (that we got last year). Never knew why my husband needed another grill until he started cooking with that charcoal. YUMMY YUM! I love anything grilled, but the other night he made a pasta salad with charcoal-grilled chicken and corn…..I didn’t think I was going to be able to stop eating. Although I do need to convince him to grill more veggies!

    I once saw a tip to cut a romaine heart (or whatever tightly-packed variety of lettuce you have) in half, optionally brush the cut face with olive oil, and roast it on the grill for just a few minutes until it gets just a little color around the edges and grill marks. Bet that would jazz up the grill-tastic salad and veg menu as well! I haven’t tried it, but if you do let us know!

      I got mine at World Market (the only place I could find it!) and it’s just regular “Smoked Paprika”

    I tried this for dinner tonight and my anti-bean husband LOVED it!!! It was so tasty!! I grill all the time and never thought of putting bacon on the grill! Tried it tonight and it worked – this is the new bacon method. I hate cooking it inside – I usually take my Presto griddle outside and plug it in and cook bacon outside and this is even less clean up to cook it on the grill. Great job!!

      We have a Weber gas grill. We actually don’t clean it – irresponsible of us! I let the flames lick the grates to “sanitize” before the next round of food.
