Booor-ing Breakfast

I was going to whip up a new pumpkin oatmeal concoction this morning, but when it came down to it I didn’t have time to gather all the ingredients before the oats were done – so I was boring and went with my usual combo of peanut butter and almonds (we’re out of walnuts!)

I’m taking this morning off of working out out because I’ve got a 9 a.m. doctor’s appt. followed by class and didn’t feel like getting up at 4:45 to squeeze it all in. I’ve got the afternoon off from Cultural Foods (turned in my 15-pager yesterday!) and I’m using it to study Physio. I may make a trip to the gym this afternoon, or go for a walk if the weather holds up, or just cozy up with my notecards. Whatever hits me at 4pm is what I’ll do!

Speaking of textbooks…

This breakfast was 475 kcal, 10 grams fiber and 20 grams protein. Should hold me over well until my early 11:45 lunch before class. Too bad I have to drive all the way to Winthrop and pack a lunch just for this one class, but it’s one I can’t skip today so I have no choice.

Hope the sun is shining where you are because it totally stood me up this morning.

    aww, so sorry that you didn’t get to have the breakfast that you intended on having – but hey, that bowl of oatmeal with almonds doesn’t look boring to me!! It looks scrumptious!! :0)

    the sun is actually shining here for once – thank goodness, since we had such a BRUTAL winter!! hope the sun eventually comes out where you are though.

    I only have one class today too :0) hope yours goes by quickly!

    Good morninng Kath! I have started watching “Get Fresh with Sara Snow” on FIT TV and Discovery Health. She is all about fresh food and promoting an organic and green lifestyle. She is so cute and makes yummy food on her show as well. If you have not seen it, I think you should. You would like it. Have a great day!

    Seriously, when it comes to breakfast sticking with the same thing is not boring, it’s totally comforting. It’s hard for me to swtich it up in the morning. 🙂

    By the way, I mixed pumpkin & banana in my oatmeal earlier this week and it was tres fab. You couldn’t really taste the pumpkin but it made everything more creamy/puddiny… yum! And we hope to hit 50 degrees in Pittsburgh today which would be ah-ma-zing.

    For those of you who cook your oatmeal at night for the morning….do you cook it all the way? I cooked my oats last night, they were a disgusting block this morning. Even with microwaving them this morning the consistency was unappealing.

    Hi beth-

    I cook them the night before (whether steel cut or old fashioned) and in the morning I add a little water and microwave… and take out the bowl after each minute to mix… prob about 2.5 minutes total in the microwave. They are a block at first but then become just the right consistency! good luck!

    Hey! I have that same book for a class I took last year! Some pretty tough stuff.. in regard to your exercise, how many METs does the machine say your working at? Do you ever pay attention to that?

    Beth – I just put all the ingredients the night before into my container and stick the whole thing in the fridge (oats, water, milk, cinnamon, vanilla, banana slices). The next day I heated for 1.30, stir and break down the banana, then heat for an additional 2.00. Perfect every time!

    I find it hard to “switch it up” in the mornings too. I’m just like you Kath – oats are my mainstay. At least there’s a TON of different things to mix in to make them completely different.

    Betsy – Your blog looks great! Any way you’ll reveal the recipe for that delicious looking pumpkin bread and/or brownies? They both look fab! I’m from Mt. Lebanon, btw, but now live in Atlanta. Love Pgh!

    Kath (or anyone else!) – have you ever tried Bob’s Red Mill Muesli? My Mom picked a package up for me and it is really yummy and has a good nurtrition profile. I had it alone today but think I’ll try it tomorrow with oats – as an oatmeal lover, I think you might enjoy it!

    Kath-I made your breakfast from yesterday (the banana “hot dog”) and you are officially a genius! It was possibly the greatest thing ever-and so much fun to eat! It was a constant struggle in between wanting to eat it as fast as I could because it was so delicious, and trying to slow myself down to savour it. Thanks for such innovative ideas! I tell everybody about your blog because they see me making these great foods-but I’ve always just stolen them from you!

    Patty, I just had that for breakfast yesterday! I heat it up in a pan with milk for now, but in the summer I plan to soak it overnight in milk like the Swedes (it is the Swedes, right?) and eat it cold. Anyway, I think it’s really yummy too!

    Side note: My husband doesn’t understand why I need oatmeal, granola AND meusli (“Aren’t they all the same thing?” Meanwhile, he insists on at least 4 open boxes of cereal at all times. You know, so he has OPTIONS.)

    I have to admit, I had the “hotdog” breakfast this morning too! It just worked out that we had hotdog buns (from this weekends bbq) and bananas! I don’t think I’m going back to eating pb and banana sandwiches with the banana cut into slices between 2 pieces of bread, so much easier to eat this way!

    Flax Seed vs. Fish Oil- Which one?!?!

    Hello ladies (and obviously Kath). I currently take a a daily multi (One-A-Day Womens). I eat a pretty balanced diet with lean protein, low fat dairy, whole grains, fruits and veggies (more fruit than veggies I admit). I know Flax and Fish Oil are both good sources of Omega III fatty acids. I was hoping someone could help me out with which one I should be supplementing my intake with. Currently, I put a heaping spoonfull of flax in my morning breakfast but I’m thinking I might be better off with the fish pills. I love fish but only eat it once every couple of weeks or so. Any advice or articles that might help?

    yeah, waking up at 4:45 is no fun. I would love to work out in the mornings to get it out of the way, but waking up around 2:30 doesnt sound like such a good idea to me. Enjoy your day off.

    I’ve been working out faithfully (never less than 45 minutes per day, often 1.5 hours. I eat 1400 calories per day on a zone type diet (per doctor suggestion). I initially lost a decent amount of weight, now the scale is stuck/has been for last month. I’ve put it in my basement/it’s grounded. “Bad scale, bad bad scale!.” I’m trying to just go by how clothes feel. I know they say your body settles into a weight at which it’s comfortable. I’m a petite/not tall or big boned girl. How can my happy weight possible be 143/size 10/12. I do have PCOS (diagnosed this year) and have been hypothyroid for a while, the endocrine system is a wacky thing isn’t it, and I’m terrified, since we’re planning to get pregnant in the near future that I’m really going to balloon. I know I shouldn’t fret about numbers, living healthfully is always a good choice. I guess just forget the scale, pursue good nutrition/fitness goals and just deal with it/be happy I guess.

    I’m totally new to milk alternatives, ie- soy, almond, hemp, etc.
    What do you all recommend? Brands? Flavors?
    I know everyone’s tastes are different, but I’d love to hear what you guys have tried.
    Also, anything absolutely horrible I should stay clear of??

    Not boring at all, I love almonds! (even more than walnits :D) I wish I could come up with as many different and fun new breakfast options as you do! I can get stuck in a rut and eat the same thing every day for months on end if I’m not careful.

    rachel k- check out their website www.panerabread.com they have all the NI available. Just be advised that you can make the sandwiches much healthier by taking asking for no cheese or mayo or both. They have some great things. I love their soups. Black Bean and the veggie are my favorite. I usually get the pick two with a turkey sandwich on wheat, cup of soup and fruit instead of chips. I have also had their grilled chicken panini and that was great!

    1 pkt Kashi Truly Vanilla Oatmeal w/Flax
    1/2 mushed banana
    1/3c. Fiber 1 cereal
    15g Bear Naked High Sierra Trail Mix

    Delicious!

    The French onion soup with out croutons or cheese is still great and only like 90 calories. Chicken soup and vegetable soup are super low in calories too!

    Hi everyone, food un-related, but we live in an “ipod” world and i was wondering if anyone could help! my ipod has the folder with the exclaimation point on whenever i turn it on… i have done everything and it wont go away, any suggestions? (resetting doesnt work, and when i hook it up to my computer it looks like its updating but never does, then the folder comes back 🙁 )

    I hope you’re still reading the comments- I have to tell you about my discovery, I found a good thick Greek yogurt!!!! I just found it at Metro today, it’s Astro Original Balkan Style yogurt. It tastes just like Fage, it’s so thick and creamy and delicious. Buttt there’s some bad news too- the only kind I could find was sort of high in fat, with 7g per 1/2 cup serving. I don’t mind because I’d rather have a higher fat that sugar content with my yogurt and this tastes really good so I think I found my brand 🙂 I really like that there’s just milk ingredients and bacterial cultures in this one, and just 3g of sugar. If you find it, I hope you try it!! Did you ever try going to Eden? And don’t you just LOVE that the sun is finally out?!?

    Rachel K, Panera posts nutritional info online. Unfortunately, most things are pretty bad for you. I seem to recall their salmon salad isn’t too bad for you and one of their sandwiches (literally, only one is ok). Check out their website before you go, otherwise you may overload on calories without even knowing it. It does taste good, though!

    I just went to Panera for lunch! I usually get the salmon salad which is tasty and good for you (only around 400 cal) but today I went for the Fandango salad which was a little higher in fat but still around the same calories. It was sooo good! Of course I had to get some of their bread as a side…totally worth it.

    Kelly L-There are studies that have shown that the omega 3’s in fish oil capsules are not as easily absorbed by the body as the omega 3’s in real food (flax seeds, fish, walnuts). I would suggest trying to incorporate these foods into your diet. If you can’t, you can try the suplements or Omega 3 eggs/milk/foods to which manufacturers have added the fatty acids.

    Kim-It sounds to me like you are working out a lot and not getting enouch fuel. Double check that you’re getting in all recommended nutrients in the correct amounts and then perhaps increase your calorie intake a bit. If you weigh about 140, your resting metabolic rate is probably around 1400-1500 and if you’re exercising a lot, you need to feed your body a bit more so that it doesn’t think it’s starving! Also, you could try changing up your workouts a bit. Try a new class or switch up your days/routines.

    Anne – the pumpkin bread is great isn’t it? Be forwarned, as kath mentioned, mine also went moldy in about 4-5 days, even after putting it in the fridge on the 4th day 🙁 guess i’ll just have to eat it faster next time!

    I made the pumpkin bread last saturday night and froze half the loaf, then defrosted it in the fridge a couple days ago and still no mold. Maybe try freezing it next time?

    That is indeed the ipod sign of death. When mine did that, i googled for possible remidies, and apparently some people find success in dropping it – it is sometimes caused by an internal connection type problem that dropping or smacking it on a hard surface can sometimes fix. That was not the case with mine, and I would really think about it before you try it, but I’m just throwing it out there.

    I love oatmeal too, I have it every morning. I’ve experimented with all sorts of flavor combinations, but I’ve finally settled on my favorite: Peanut Butter & Jelly Oatmeal. It’s so simple too. Yet I’ve also made a pumpkin oatmeal, where I added some peanut butter and homemade pumpkin mousse (a healthy kind of course) and it was also scrumptious. I’ll share that recipe soon enough… Keep up the good work, I’m lovin this site!

    Apologizing in advance for this lengthy post.

    KIM (re: PCOS),
    I too was diagnosed w/PCOS a little over 2 years ago. I initially met with a dietitian, as well as an endocrinologist (working together in a practice) to discuss what I needed to be doing. As for diet, I was initially placed on a 1400 calorie diet to lose some weight. (at that time I was 27, 5’5″, 152 lbs.). I was not trying to get pregnant at the time, so I did not feel a “rush”. The doctor suggested just adjusting the diet/exercise, no meds since I wasn’t trying to get pregnant. I didn’t lose much initially.

    Went I went back (probably 6 weeks later), the doc asked how much exercise I was doing. Told him: 45-60 min cardio + approx. 1/2 hour strength, 3-4 days/week. He told me to cut back on the exercise, reduce the cardio to 20 min. He said all of that exercise was likely causing stress on my body, therefore aggrevating the PCOS, cortisol/stress and preventing weight loss.

    I was extremely hesitant to cut back at first (if the weight wasn’t coming off with all of that exercise, then how would it come off if I exercised less?!?). Well, one day, I’m at the gym and something inside of me said, “just try what the doctor says”. I couldn’t (and still can’t), cut down to 20 min cardio, but I cut down to 25 min + 5 min cool down. Don’t you know it…the pounds came off…quickly!! (I’m talking 2 months…3 months max!). I now weigh 135 (at 5’5″, 29 years) and have maintained this for close to 2 years. I did this by REDUCING my exercise, as well as listening very closely to the dietitian. Each time I go back, my blood work is VERY NORMAL…they practically don’t even want to see me anymore (just every 6 months to “make sure” I’m still okay).

    Of course…I would still like to lose 5 – 10 more pounds, but feel I am at my healthy weight. People comment on how good I look and continually ask me if I’m losing more weight (no…although I wish!!!).

    Bottom line…seems as though doc was right, too much exercise was stressing my body, causing it to cling on to the extra weight. It was amazing how quickly it all came off (wish these other 5 – 10 lbs would come off so quickly!)
