Blue Apron 15 Minute Meals + Harissa Chickpea Grain Bowls

We’ve been Blue Apron subscribers for several years now – going back to the pandemic days when we had a toddler and needed the convenience of recipes and ingredients delivered to our doorstep. Blue Apron 15 Minute Meals

The new-ish Blue Apron 15 Minute Meals they have added are truly game changers for our meal plan. Ingredients come partially or all-the-way cooked so that you just prep the fresh portion of the recipe and dinner is ready SO FAST. I’ve been planning on one or two 15 minute meals into our meal plans and adding a third longer recipe (usually salmon!) that we cook on a weekend night. Here is a recent recipe we made: 

Harissa Chickpea Grain Bowls

Spotlight ingredient: Pre-Cooked Farro

In this recipe, the farro was pre-cooked. So all we had to do was heat it in the microwave and season it with olive oil, salt and pepper. 

Harissa Chickpeas

The chickpeas got a harissa paste and lemon juice coat and were lightly fried in a sauté pan. 

Garlic-Tahini-Maple Dressing

Meanwhile, I prepped the salad dressing which was made with a garlic-tahini sauce, maple syrup, lemon juice, olive oil, salt and pepper.

Finally I assembled the bowls with fresh arugula, sliced apple, goat cheese, and pre-roasted sunflower seeds.  

Leftovers!

Whatever you don’t eat today, save for tomorrow! These bowls were perfect for a light Monday night dinner, we also had the leftovers for lunch the next day. Heartier appetites could also add chicken or fish as an extra topper.
