Bland Colors, Bold Taste!

Mushrooms, Bacon + Radicchio over Lentils

I realize this meal looks kind of gross, but the flavor was all there!! This came straight from our brains to the table too, so the “recipe” is one of those throw-together types.

  • 2 servings of brown lentils (1/2 cup dry) simmered in water until tender
  • 1 small head of radicchio, chopped and broiled for 15 minutes, tossing once or twice
  • 3 slices of bacon (all natural), chopped and cooked
  • 1 pound of mushrooms (button and cremini), sliced and cooked in the bacon drippings plus 1/2 a tbsp butter
  • Homemade vinaigrette made with equal parts (about 1 tsp each, all eyeballed) honey, olive oil, dijon mustard, lime juice, chopped fresh rosemary plus 1 tbsp balsamic vinegar
  • A sprinkle of grated Asiago cheese

Makes 2 servings, ~350 kcal each.

I was out most of the afternoon running between stores for a few items – literally! A funny side item:  When I’m short on time and don’t want to waste any not in a store, I often RUN across parking lots when I’m going from one end to the other because I’m too lazy to take the time to walk!! I don’t usually carry a big purse, so it’s easy to break into a jog. Just look out for cars! Sometimes the husband and I do it together when we’re parked at the edge of a lot at the mall or Wal-Mart or something. It’s fun to get your heart pumping for a moment!

Anyways, I was out all afternoon and didn’t bring a snack with me. I was mildly hungry from about 3:30-5 but food on the go (mostly places like Starbucks) is rarely “worth it” for me. I’d rather wait until I get home and have a good snack!

So when I got home at 6 I had a handful of Kashi crackers (about twice as many as here) to tide me until dinner, which we started preparing right away.

And we cracked open a bottle of Reisling I bought at World Market a few months ago. It was great! I had about 5 oz tonight.

    haha, oh my, the image of you dashing across a parking lot, dodging cars, IS quite amusing – in the nicest way possible! :0D definitely a fun way to get in a jog though, for sure!

    Its so funny you mention the running from car to store. My family used to do this too (mom, 4 brothers, 2 sisters, all between 7 and 18, dad) haha. We used to always be late and cold and we’d run from car, across parking lot to the store or sports rink. One time a friend was with us and we’re running and she was soo confused “why are we running!?”

    Kath,
    First…I LOVE your blog. I am so addicted to it. You are doing a fantastic job and are such a motivation to me.
    Second…I have never met anyone who loves the turkey/jam combo and I DO TOO!!!! If you ever want to try something that is my favorite ever…try pita bread with lite 1-2 Tbsp cream cheese, strawberry jam, and turkey. People say it sounds gross, but I just love it.
    Last…a quick question. Did you ever find trouble being “toned”? I am at a healthy weight…according to charts, but I feel that I am too flabby/untoned. Any suggestions?

    The dinner actually looks pretty tasty to me. How do you come up with ideas for meals off the top of your head? I always feel like I have to look at recipes.

    You know what I love? I love that you blog on the weekends. No one else does, but they should. It’s not like nutrition ends on Friday night and starts up again Monday morning.

    Or wait…DOES IT??!!

    ^^^LOL!!! I love that.

    Weekends generally are a bit more relaxed for me food wise, BUT my workouts stay very consistent, so the extra splurges don’t make a big difference overall. =)

    Kiala- i just wanted to say that blogging is a lot of work! It takes time to upload pictures, write a post, post the pics, answer questions. Right now Kath has a lifestyle which allows her to do so often. But weekends can be very busy for people and sometimes the blog gets put aside. Jeez

    Thanks for the great feedback on the blog!! Do you lift weights? If you don’t, that’s what you need to do! If you already do, try mixing it up. If you always use free weights, add machines or resistance bands. I recently started doing the assisted pull-ups and dips machine once a week and have noticed a big difference in my arm definition.

    Practice!! I’ve studied LOTS of recipes so I feel like I have a base of knowledge for what to start with and what to build on. We usually pick one ingredient and build from there. This one was lentils. What to do with it? I was craving mushrooms. What about a green? We just had kale, how about radicchio? How could we cook it? Broiled. But what about a sauce or binder. A viniagarette would be a nice strong taste. Oh, and we have leftover bacon, let’s put that on top. . Just think about what you like, what flavors are involved, and what you have on hand.

    That’s a really interesting dinner idea. I love mushrooms and lentils, but it never occurred to me to combine them in such a way. I will definitely try this recipe. Thanks for the inspiration, Kath!

    Kath, just wondering (I know I’ve probably seen it on here before since I’ve read every post, but) what kind of butter/spread do you generally use? I have been using Brummel and Brown made with yogurt for the longest time and just noticed that it has partially hydrogenated soybean oil! So I need a trans-free replacement…any suggestions?
