Blame The Rain

We woke up to big bursts of thunder this morning. Along with torrential rain.

No Tuesday AM run for me.

“You know you’re a food blogger when…”

…You go outside in your pajamas in a thunderstorm  trying to find a small bit of natural light.

Today’s oats were great – a mix of Scottish and rolled that was a creamy porridge.

The Mix

  • 2 tbsp Scottish oats + 2 tbsp rolled oats (= one serving. Scottish oats have a small dry portion size)
  • 1/4 cup milk
  • 1/2 cup water
  • 1 tbsp chia seeds
  • 1/2 banana
  • Pinch salt (actually, wait, I forgot the salt!! That’s probably why they were so bland today..)
  • Uncle Sam cereal crunch
  • Blob ‘O jam
  • Sunflower butter
  • Coconut

    Fingers crossed that it clears up by the weekend! Here in CT, we’re destined for 10 days of rain. Hello, Noah’s Ark, part II.

    I love that you’re a believer in a pinch of salt + oats…it really makes the difference and makes the flavors pop.

      Yeah, in MA we have a very sad outlook with the weather forecast. I’ll run in the rain, but not in a thunderstorm, but it definitely feels more like a day to watch a movie and stay inside.

        I feel your pain, all…in Chicago it’s been cold, windy and rainy for days on end. Today we have sun, but the temp is stuck in the 50s and “breezy” is putting it mildly. A very anti-climatic spring, huh?

    Haha I do that, I’ll take pictures on the ground outside. Weather like that may put a dent in your plans, but isn’t it nice? I love thunderstorms!!
    I’ve never tried a pinch of salt in oats, but every recipe I have calls for a “pinch of salt” so there must be a reason. I’ll try this a.m. and see what’s up!

    Rainy days really are no fun for the most part, unless you have nothin to do and all day to do it! I am jealous of your weekend forecast, dreary rain is predicted around my area 🙁

    Here in Portland we get a lot of rain- mostly drizzle- but rarely thunderstorms. I grew up in the midwest where we got wicked thunderstorms and thats actually something I really miss!

    We have rain in the forecast every day for the next 10 days!! It feels like it will never stop raining. I think the husband thought I was crazy recently when I took my plate of food outside to photograph it! You can’t get a good picture in artificial light. (Or if you are me, you really can’t get a great in any light. 🙂 I wish I could take great pictures. Do you have any posts where you’ve talked about how you take pictures?

    Eek it looks wet! Probably means England will get it – someone told me once that whatever weather the US on the east coast has, England gets a few days later. Bah! I don’t want torrential rain :'(

    I hear ya on the gloomy rain – we’ve been getting the same for the past 2 weeks, but this weekend (thank goodness) is looking better. I totally hear ya on the going outside in your pj’s… In the winter it was too cold and I couldn’t be bothered, but lately I’ve been starting to do the same!

    We have the same forcast here in DE. Its much easier to deal with a rainy week when my days off for the 10 year anniversary getaway with the husband looks so nice.

    I finally got a loaf of Dakota…just as my whole wheat cinnamon chip was running out too. What’s your favorite way to eat the Dakota? I was thinking of smearing some hummus on it and having that with a green salad.

        I picked up Whole Grain Goodness last week and made a couple amazing almond butter/strawberry jam sanndwiches.

          My very favorite is the GH jam – sold in the stores. The raspberry is incredible! Nice and chunky. I also like Crofter’s Superfruit American and anything made by hand like Jam According to Daniel.

    Your green bowl is so pretty! And no, you didn’t send me your copy of The Help. You asked if anyone wanted it when we met for dinner with a group when you were passing through Charlotte months and months ago. I took you up on the offer and I’m so glad I did because it was a really great book and I can’t wait to see the movie when it comes out.

    I only have a spec of natural light in my apartment so when it rains im done for!

    I cant even go on the “shared” porch to take photos either.

    I do my best with a ghetto light set up 😉

    We are finally getting some sunshine here but I can feel your pain on the rain! I heard all of this rain is going to drive up the cost of groceries and I am already starting to notice it – has anyone else seen prices go up? Guess I have to get more creative with my meal planning!

    I hear ya! It’s now been raining for 3 days in a row and there is no end in sight in the forecast. The rain was so loud this morning it woke me up. But, it did inspire me to make pancakes! Usually, not a weekday treat for me 🙂

    I have been wondering about this forever. Do you ever top your oats with milk or is all that liquid used for cooking? I can’t imagine not topping mine every morning with milk. Just curious.

    YES!!!

    Or you bring your magic bullet with you when traveling, only b/c you’re too scared to lug your vitamix and possibly damage it. But you may just “have” to make something in it that just cant wait til you get home. Yep. guilty as charged 🙂

    I said the same thing last night! The forecast in San Diego today is rainy, but the weekend is supposed to be warm and sunny. I just hope I have enough time to relax and enjoy it!

    Those oats look delish! By the way, do you use unsweetened coconut or regular?

    hey Kath! I live in OH but my fam is in KY and came to visit last weekend. They brought me ww great harvest bread (sooo good!!) and almond/cranberry oatmeal. The oatmeal was so good and I was wondering since you are an oatmeal goddess if y’all are having oatmeal in your store?

      Well like I said, the Scottish oats have a smaller portion size dry but they absorb more water. I made this actually for two people – 1/4 cup Scottish and 1/4 cup Rolled.
