Black Out Run

Today has been one of those blah days when I don’t want to focus on anything. Blame the weather and my need to be available to answer questions for the crews over here today. Our new bathroom fan now works and the dining room light was moved!! Now we just have a gaping hole to patch…and a fixture to buy! We’re hosting Thanksgiving dinner in here, but honestly, I’m not sure either is going to get done in a week’s time. I just hope nothing falls from the attic onto the turkey!

In the middle of feeling blah, I decided that I did not want to run this afternoon with lunch jumping around in my stomach. I wanted to run RIGHT THEN. The next thing I knew I was running downtown. I really don’t even remember putting my running clothes on! There was no time to think – I was out the door faster than I could make the decision to go. I ran to the bakery [IN COLD RAINING DRIZZLE!] to say hi to Matt and back. It was quick but enough to leave my legs that that jumping tired muscle feeling that I love.

Lunch was an old favorite.

I picked up an avocado yesterday and also had some white beans in the fridge, so I assembled a sandwich I found in Real Simple magazine years ago. August 2006 to be exact! I’ve been mashing beans on bread ever since.

The recipe calls for white beans, olive oil, salt and pepper to be mashed together and then layered with avocado and sprouts. I didn’t have sprouts so I used smoked paprika instead. Yum!

On the side was a gourmet salad of candied nuts (a bakery sample), Frog Hollow Farm cherries and Blue D’Auvergne! ( <—long time no eat!)

Peppermint tea on the side and 2 Wilbur’s chocolate buds to end.

    Mmmmm avocado. 🙂 I haven’t had one is quite a while because of the price this time of year. Your lunch looks fabulous, and I’m glad that you were able to get a nice run in this afternoon. Your house is coming along so well! 🙂

    I bet my roommate would LOVE that sandwich–she’s huge on avocado. Last night, she discovered one hidden in the fridge & and ate it with a spoon even though it’s goodness-knows-how-old. I’m not a fan of avocado, though….the texture just doesn’t mesh well with me!

    I’m sorry about your blah day. I, too, am having one of those! I blame it on the dreary weather and the fact that today is my “friday” since we’re leaving on vacation tomorrow. Longest.day.of.my.life.

    i love mashed beans on sandwiches… it’s almost like a poor man’s hummus! and the combo of beans/avocado never fails.

    i love black out runs… that’s how i feel when i run super early in the morning. don’t know how it happened or what it felt like, but i got it done!

    mmm I could go for some blue cheese! Luckily I’m going home on Thanksgiving break from college tomorrow so I can hit my mom up for some 😉 Your photographs always make healthy food look beautiful, it’s inspiring! (Of course the only inspiration I got out of this was cheesy – ah well, I like what I like.

    I love smashing beans onto toast… yummy. I also love putting hummus on toast. It makes a great base for a sandwich.

    avocado on toast mmmm. I haven’t been craving avocados since the summer for whatever reason. Are they still in season? Maybe my body knows they aren’t! Anyways, beautiful lunch and I hope that run cleared away your blah’s!

    I’ve never thought to smash beans on bread! It’s almost like hummus! And I just got an e-mail that my Adagio tea has been delivered to my apartment (how nice of them to tell me!) so I can’t WAIT to get home this evening and try one out!!! But which to start with… hmmm.

    You can always tape a piece of white paper over the hole in your dining room ceiling for the Thanksgiving dinner. How nice that you had the electrician handy!

      Great idea! Also, in my parents’ house there was an old woodstove hole that was covered up by this metal thing that looked just like a paper plate, and for years that’s what I thought it was. So maybe I should just put a paper plate up there!

    Lunch looks wonderful! Nothing like simplistic bliss.
    Funny, I just got back from having Indian food for lunch and I wanted to sprint right then, too. Unfortunately, I didn’t have my runnin’ shoes. Will have to wait til tonight. Maybe its just in the air.

    I’m feeling a little blah, too. It’s cold and damp here in NJ and I was trying to work on my NaNoWriMo work, but I can’t focus. Guess it’s hard to figure out what a character is doing if I can’t figure out what I’m doing! On to a better day tomorrow!

    Your salad was similar to mine today! I’ve had a great day here–my hip kind of hurts though–I taught an intense Zumba class, so that’s probably why. HAh.

    I’m having a bit of a blah day too. It’s been very rainy and dark all day. But it’s almost the weekend! Hooray! 🙂

    I love mashed avocado on toast. It’s one of my go-to lunches on especially busy days. I also posted about a quick tortilla pizza today, using leftover cannellini bean dip instead of tomato sauce. So good!

    Oooh that sandwich looks lovely!! Of course, ANYTHING with avocado looks lovely to me.
    I’m attempting to make enchiladas with homemade tortillas tonight, and am now thinking that a side of avocado might just be the perfect addition.

    Yesterday was my ‘blah’ day…today I feel like I have more energy for some strange reason…perhaps the frigid air ‘snapped it out of me’ on my run this morning! Love the idea of smashed beans on bread with avacado! I was productive and finally baked my dairy,egg,soy and peanut/tree nut free oatmeal chocolate chunk cookies my son has been hounding me to bake all week…poor child had no ‘sweet treat’ all week! I feel better now! Had our first sign of winter in southern ontario today..snow!

    Smoked paprika is a great idea! You could also use cumin. My favourite open-faced sandwich is tomato and avocado with cumin!

    This is an amazing lunch! Smoked paprika on avocado must have been delicious. You could also add endive and onion with the avocado and mix it into a salad. I made that this weekend and it was so yummy.

    YUMMO…I love avocado (and white beans) on just about anything. You can find both in my cupboard/fridge at all times.

    Sorry about your sun-less, blah day, but have faith – an awesome one is just around corner.

    My last two weeks have been “blah”! Not sure if it’s just because the days are shorter or what, but I had no desire to work out, and wanted to eat everything in the house! I missed the tired leg feeling and finally got back on track tonight 🙂

    I love the launching out the door for a run routine. Sometimes the window of opportunity is very very small and you’ve gotta take it! Lunch looks awesome — love white bean mash 🙂
