Breakfast in a jar.

Since I didn’t have any vegetables for dinner last night, I tied some into breakfast.

[Really, I just like kale in smoothies!]

When I was training for my half marathon last year, the only food I could stomach after a long run was a kale smoothie. I have no idea why, but they were so good. It’s been a while since I’ve had one – but I had some already-cleaned kale in my fridge ready to go.

Smoothie ingredients included:

  • 1/4 cup rolled oats
  • 1 big handful kale
  • 1/2 cup milk
  • 1/3 cup yogurt
  • 1 big banana
  • 3 ice cubes
  • 1/3 cup frozen berries
  • Toppings: Peanut Butter Hungry Bar, coconut, chia, Chia Charger 

Kale smoothies are best with a hint of cocoa powder, but I forgot it!

LOVED reading all of your book suggestions! And I was able to squeeze in a whole hour of Hunger Games last night. Even Matt complimented my lengthy reading hour. Book is getting good!

    I almost never make a smoothie that isn’t green – it’s such an easy way to get extra greens in. My non-smoothie drinking friends don’t believe me but you really don’t taste a difference with spinach!

    A Kale smoothie. I would think it would have an edgy taste but maybe the banana calms the taste? On any account, it looks really good! Enjoy your day!

    Do you find the taste of kale to be overpowering in a smoothie? I’ve always made smoothies with spinach but have been afraid to try kale.

    Kale is very difficult to get here… Can’t wait to be in the US to try some of the products you seems to enjoy! Whole Foods and Trader Joe’s, here I come 😉

    I made your Pumpkin spice Buckwheat bake’s recipe yesterday and it was so yummy! I’ll do it again for sure!

    This looks yummy but I feel like it might be difficult to eat out of the jar with the toppings! Do you mix it all in or just sip? SO MANY OPTIONS *OVERLOAD* lol

      Not in the near future. I think my running-for-hobby days are over. I just enjoy it for the euphoria now in 4-6 mile increments

    That smoothie looks so good but I eat so many greens (kale, spinach etc) and like to chew them.
    If I were to add them to a shake, I’ve def. over green myself, suffer from fiber overload and never be able to run more than a mile away from the nearest facilites. Guess there is ONE draw back from enjoying too many greens 🙂

    I always put spinach in smoothies, but never tried Kale. Something to look into! I have heard such great things about the Hunger Games. I think I’m going to pick up a book today.

    moving on. I like spinach or watercress, but not kale smoothies, something about the kale. Have you tried watercress? so nice!

    Love mason jars! I wish it wasn’t so cold in Minnesota, because I have been craving a smoothie. I just cannot bring myself to drink something cold in the AM when the house is already so cold!

    i put kale and/or spinach in almost all of my smoothies to sneak in veggies, but the color always looks so unappetizing!! yours look so pretty 🙂

    Love the colour combination today for your breakfast…love how your smoothie and mug match! The little rosettes are so dainty!

    We finally have snow In Southern Ontario! Beautiful run today in the softly falling snow! Spied a boy running out of his house in pure delight at the sight of the freshely fallen gift of snow…he dropped to the ground to build his first snowball of the season…priceless!

    I’m more of a fan of cocoa powder in my smoothies (I don’t tend to forget it..haha) I would have been right there reminding you!

    How do you get your kale to blend so well? Mine stays chunky, it’s probably just my blender though. I’ve found I have to use spinach with that blender if I want it to work. What type of blender do you use?

    The one and only time I made a kale smoothie, I didn’t destem the kale before throwing it in the blender(rookie mistake) and it did NOT taste very good! Since then, I’ve stuck with spinach. But perhaps I should give kale another try….

    I love sneaking kale, cucumbers, carrots, and even celery into smoothies! And to all you kale in smoothie skeptics out there… TRY IT! Start with just 1 or 2 leaves. It’s good and much better for you than spinach!!

    Definitely check out the Linwoods products if you get the chance. The one has ground flax, cocoa, blueberries and strawberries. They are definitely great to add into yogurt and smoothies. I always feel guilty if I don’t have veggies with dinner, but your “dinner” last night looked delicious and definitely worth skipping the veggies. Wine and chocolate are superfoods right?

    I haven’t tried kale in a smoothie yet, but I love spinach! I juiced kale one time and it was so bitter. Do you remove the stems before you add it to your smoothies?

    My breakfast is eaten out of a jar every morning I have to commute & eat breakfast in the car…fits much better in the cup holder than a bowl, haha!

    Some notes on smoothies!!!

    -Spinach you can’t taste, kale you can. It’s a bit earthy. It’s not overpowering, but somewhat detectable
    -I don’t use the stems
    -I have a Vita-mix blender that I got from the company to review. If it broke, I would spend $400 on a new one. LOVE it. It blends the kale completely.
    -I mixed the toppings into this smoothie and it was so fun to find a lump of nut butter on the bottom 🙂
    -Yup, that’s an iced tea spoon! I always eat breakfast with them. Love the leverage!
