Best. Sandwich. Ever

I’m so frustrated! I haven’t gotten a thing done today except eat and exercise. My Eye-Fi card is NOT working and I have no clue what is wrong with it. I thought I fixed it the other day but now it’s not working again. It just sits there and no photos import and there’s no way to start the import (although I can always use the USB drive to get my photos). So sorry to be such a whiner, but the past 3 days I feel like each of my posts has taken me an HOUR to do and is draining all of my time.

The husband Matt and I went to the gym at 11:30 and at least that part of the day went well! We biked there under sunny skies and had a good workout. I did 28 minutes on the Stepmill (hate to do that two days in a row but I felt like it) and then I did 15 minutes on the Stat bike before biking home.

After a shower and some beard trimming, we came down to lunch. Yes, he’s growing a beard! It won’t stick around, but it’s for fun. Our friend Justin has cool facial hair and at the Valentine’s party we joked about Matt trying to grow some. He trimmed it today like so. I think it’s going to be shaved off in the next week or so because we both like a clean cheek on him!

So back to the best sandwich ever. Recall my tempeh + pumpkin butter sandwich from Wednesday? I made it again today and decided it’s a magnificent sandwich!!! This Flax Oat Bran bread is the foundation. It’s SO dense and heavy and the walnuts in it are so good. And then the almost crunchy 3-grain tempeh makes the sandwich even crunchier. It’s 1/6 of a plank of tempeh so it’s about 75 calories with 6.5 grams protein and 4.5 grams fiber. Then the pumpkin butter just adds a touch of sweetness to the otherwise neutral flavor. And it’s such a firm, heavy sandwich that doesn’t fall apart with each bite. (The bread may be small sliced but it is dense, so this sandwich is probably nearing 400 calories, FYI). You will be seeing this more because I find it filling.

I also had a side romaine salad drizzled with lemon olive oil and fig balsamic vinegar and a bit of feta.

I also prepared this yogurt, strawberry and Weetabix bowl (Jenna reminded me I’ve had an open box of these in our pantry since before KERF was created!). However, I did not eat this because I felt full when I finished my other two. It’s in the fridge to have around 5:00 if I need it. (I just got the new Windows Live Writer and it’s awesome! Not only do things automatically link for me, but I can tilt photos and do a few more cool things 🙂 )

Tonight we’re going to Karen’s for dinner along with a Spanish professor from Davidson and another friend of hers. Cool!

OK – i have GOT to get to work!!!

    What is it with boys and facial hair making them cooler or more manly? My bf is the same way “how cool would it be if I got a beard!” oh dear cant live with them and you definitly cant live without them!!

    i LOVE facial hair. my husband wears his beard like how matt’s is right now, but he’s a redhead and i call him my lepachaun. 🙂

    I need HELP!!
    I have a big giant beautiful eggplant that I need to cook up or it will be a waste but I have no clue what to make with it since I just recently found out I am allergic to tomatoes!! Please help!

    Your lunch post reminds me that you mentioned a short while ago that you finished Intuitive Eating, I’d be curious read your thoughts on the book with us if you are so inclined. I picked it up after you wrote about it a few weeks back and it has been eye opening for me. I’ve been maintaining a 35 lb weight loss for about 7 months now. Eating healthy foods and exercise are easy for me, but after reading this book I realized that I was NOT always honoring my hunger or made peace with food. I was setting myself up for overeating come the weekend. I was really getting sick of it and wondering what was wrong with me until I read this book! I’ve spent the last two weeks honoring my hunger and making peace with food and I can’t believe how free I feel, it’s amazing! The scale is still staying in the same place, probably because my caloric intake is the same over the course of the week…. along with making healthy choices the majority of the time (sweets are my weakness! 😉 ) and regular exercise.

    Anyway, whether you have time to comment on your thoughts or not I wanted to share that I found the book extremely helpful and wanted to say thanks for writing about it. It couldn’t have been more timely for me.

    I had a box of Weetatbix and eventually had to throw it away because they had expired! The expiration date should be on the box (mine was), you should check that, Kath! I’m thinking yours isn’t good anymore????

    I like when guys have a little facial hair like that…..but it makes kissing them “scratchy”!

    I find facial hair to be so scratchy and irritating during kissing! Luckily my husband doesn’t really grow much of it.

    Do you by chance have an HP laptop?
    I had an HP and the whole Wi-Fi card thing happened to me.. and almost everybody I know who has an HP! And it eventually comes to a point where it can’t be fixed 🙁

    I think he looks good! When my husband wanted to grow a beard I was like “ew no way!” But now when he talks about shaving it off I’m like “ew no way!” I agree with others though, it does make for scratchy kissing!

    Delicious sandwich. I MUST remember to make a combo like that. I love the whole lunch layout too. It just looks especially beautiful today!

    Yum. I love tempeh, and I love pumpkin….who woulda thought to combine them! I bet that is tasty! BTW…..I like the facial hair. It’s very rugged & manly. When my hubby grows his out I tell him he’s my mountain man! Ha!

    I buy tempeh just as I would tofu in the store. It comes in a slab in a package kinda like the polenta logs do. This is Lightlife’s 3-grain kind.

    It’s “raw” in the sandwich, but it’s save to eat raw and really doesn’t change in flavor much.

    Last time I tried perparing the tempeh it was super dry. So I wanted to ask how you prepare yours. Do you soak the tempeh in a marinade and then bake or saute the tempeh? For how long? I wasn’t able to find your method on your previous two posts or the recipe link page.

    Yes it was raw on this sandwich. When I use it in a recipe I just saute it. Like in the one I just did with kale and sweet taters, we sauted it in olive oil and tamari. It is on the dry side because it’s congealed together, but I love that texture.
