Another Lunch To Go!

Packed up and ate in my nook before class – kept things simpler today to avoid drawing too much attention to myself 🙂

Salmon Salad with carrots, celery, pickle, jarred jalapeño, jalapeño mustard, zesty mustard, S + P and hot sauce. I left out the mayo this time and didn’t even realize it until I was done. Guess if you like mustard it’s really not that necessary. I ate my tuna in pitas instead of on a plate –

Also had a cottage cheese –

And pomelo. I found this in the grocery store last week and thought I’d give it a try. It was SO GOOD! Kind of like a cross between a grapefruit and a lime. Sort of like a margarita if you ask me….

Got (almost) all my food groups in again:

Protein: Salmon, cottage cheese

Grains: Whole wheat pita

Fruit: pomelo

Veggies: carrot, celery, jalapeños

Dairy: CC

Fat: Low-fat CC. I could have used a few nuts or avocado for some monounsaturated fats!

All together for ~ 469 kcal.

Not as high as usual, but heavy on the protein. I got a little hungry earlier than usual around 3:30, but I suppose that’s because I got out of class and it felt later since I didn’t have lab. I had a LaraBar on the ride home. Yum for chocolate (and MUFA from the nuts)!

Tonight I’m on my own – the husband is away at his class (Financial Accounting – perhaps the first step of a night MBA but not sure yet) . Shhhhhhhhhh, don’t tell him, but I kind of like being home alone some nights 😉 It’s just kind of fun to turn on “Carolinas Jazzzzz 88.9” and make dinner solo. I already did a bunch of chores (folded laundry, cleaned bathroom) and now I’m getting started on some work. It would be the perfect time for a glass of wine, but I had 3 glasses this week and have a big weekend coming up so I think I’ll stick to a virgin tonic when it’s time to start my …..recipe is a surprise!

    That’s awesome that Matt might be getting his MBA! Ryan actually just got his last year from UF…..its such a great thing to have and can open so many doors! If he needs anyone to talk to about it I know he would be glad to help!

    mmm I LOVE larabars too! I love the apple pie one the best though 🙂

    Good to know about the pomelo! I’ve seen them but never tried them. I will definitely pick one up on my next grocery trip!

    Ooooh, I’ll have to try a pomelo. I love trying new fruits! I had kumquats for the first time a couple weeks ago. They are sooo good!! They look like olive-shaped oranges, but they have a sweet rind and sour flesh. You just pop one in your mouth and eat the whole thing!

    Kath,

    I like to put fat free plain yogurt (as well as mustard) in my tuna salad…a couple of tablespoons does the trick! I actually like the flavor better than mayo, but it gives it the same creamy consistancy but ups the calcium and eliminates the fat. I don’t know if you’ve tried this before, but thought I’d offer the advice!

    Hey Kath,
    I’ve been meaning to ask you what it is you do for your ab workout. You always seem to be sore from it, so do you add reps/sets/new types of workouts each week? I’m always looking for great new ideas to make me sore again (sounds crazy right?). After awhile I get used to my workouts which disappoints me because I actually like the sore feeling since it’s sign that I worked my butt off! Any tips you or others have to feel pain? :o)

    Hey Kath,
    I REALLY love your blog-I have been reading for a few months now, and find it to be a great inspiration for varied eating and otherwise healthy living! Thanks for putting it out there for all of us.
    I am just curious, when you exercise with your heart rate monitor, how much time do you spend in the “target zone”? Is that something you strive for? Thanks; can’t wait to see what you’re having for dinner…

    I second the comment to have some wine! One small 4 oz glass won’t hurt..in fact a glass a day is beneficial to health.

    We don’t know if he will apply to a program or not, but he’s taking a basic course that will transfer in just in case. I haven’t had the apple pie yet – I don’t usually like fruity flavored things, but I guess I should if it’s your favorite!

    I’ve done that with yogurt too – it’s an excellent binder!

    THE AB ROLLER!!!!!!! Seriously, that 1990’s guy that’s bright yellow. I found it in the “toys” box at our gym and boy does it rip my abs! I have a hard time with ab workouts – the exercises I do are either too easy or too hard – nothing inbetween. But this guy is great. I usually do 10 rolls middle, 10 to left, 10 to right, rest, repeat and it’s quick and effective. Sometimes I do a few crunches after as well.

    Thanks for reading!! I don’t really monitor the “cardio zone” at all, so I don’t know what percentage of time I’m in it, but when I’m doing cardio I’m rarely below 140 – I’m usually 150-165 or so, which is in “the zone.”
