An Afternoon Gift

Getting up at 5:15 is never very fun but the gift of an afternoon was enough to make my week.

I got home from work at 4:30. Finished my evening work (sans dinner blogging) around 5:30 and lounged on the couch for a good hour watching GLEE!! They played my song last 🙂

While I chilled, I chilled down a Green Superfood by Amazing Grass. Using up the pantry! I wasn’t very hungry but I was very thirsty and had a slight headache so I thought a beverage would work well. It did – my headache was gone in 20 minutes!!

Then Matt and I whipped up an easy dinner and I finished eating an hour earlier than usual. Which means I have LOTS of time to relax and read in bed!!

Tomorrow’s going to be busy – I’m going to a party with my work friends in the afternoon so I’m pulling another morning workout. This time up at 4:45 so I’ll have time to eat breakfast at home.

And on to our DELICIOUS quick + easy dinner: Mexican Scoop!

One of my very favorite easy dinners.

This was a base of sautéed mustard greens (bitter but chewy good!) with frozen okra, frozen corn, and canned kidney beans. Matt used a little Garlic Gold for seasoning.

Toppings

-Nutritional yeast sprinkle for a cheesy taste (more on nutritional yeast from Emily here!)

-Avocado!

Voskos original full-fat yogurt. Thick. Creamy. Did I say thick? SO perfect as "sour cream."

    I love, love LOVE FSTG chips – they are so insanely addicting! I almost ate an entire bag of the sweet potato ones in one sitting once! 😯

    My 9 year old was looking over my shoulder just now and saw your Mexican bowl and said, “Yum, that looks good”! I would have to agree. Sadly, I tried avocado again and did not like it. I feel like I should…oh well. Oh, have you been to 1900 Mexican Grill in South Park? I went there on Sunday with a group and it was really good! Their chips and salsa are dangerous! Enjoy your evening! I am going to sit with my boys now.

        The service was great and the food was very fresh and seasoned well! We had a huge group there and everything was perfect! It is always a good sign when all the food is hot, fresh and served at the same time when you have a large crowd! I mentioned the chips at first, because I never eat chips and salsa because they always seem greasy and gross. These were crisp, thick and not greasy at all. I would definitely recommend it!

    Nutritional Yeast is my SAVIOR. I just got diagnosed with lactose intolerance and it made me so sad whenever my parents pulled out the sprinkle cheese. No more!!!

    What did you mix the Green Superfood with? I have a packet in my cupboard that I’d like to try; I’ve been thinking about adding some to a smoothie, but I’d like to hear your thoughts.

          I tried one in a fruit smoothie (banana, mango, and rice milk) this morning, and it just added a mild nutty flavor.

    Hot sauce makes everything better. It’s a proven fact that I probably consume too much hot sauce and kimchi everyday. (It sucks having kimchi in the fridge because it stinks and gives everything a nasty taste and smell. I put apples in the fridge and they tasted sooo gross!)

    Mexican scoop! Lol this is so me. I do this at least once a week, but I’ve always referred to it as “mexican mess” since I’m not a big chip eater. I just throw together whatever veggies + beans + grains that I have on hand, and top with guac and salsa. Delish and quick!

    Mmmm looks good! All the Food Should Taste Good chip flavors are so interesting. I’ve only tried a few of them but sure want to try them all! Nutritional yeast is another must try. It’s just so hard to find!

    I always wake up early to have breakfast at home. There is something so calming about waking up and having a peaceful breakfast before getting into a rushed day. Have a good rest!! YOU DESERVE IT!

    I went to bed last night when it was still light out too…. it was awesome.

    I LOVE the idea of a scoopable dinner! I am on a quest to make cooking as easy as I can in the hot weather and this is just the kind of idea I needed before creating my shopping list! And, more importantly, thanks for pointing me in Emily’s direction. I’ve had nutritional yeast for a long time, but I don’t know what to do with it! Haha.
