Achy Breaky Heart

Thank you guys so much for your nice comments. They make my heart swell with happiness

this !

Matt and I drove to the gym in the rain at 12:30 so I could hit up the 1PM cycle class. I had an awesome workout!! The theme was songs you can dance to and she ended with Achy Breaky .  No one knew it, but I was secretly dancing in my seat – it just looked like I was pedaling :mrgreen:

We got home at 2 and made some lunch. During cycle I went through our fridge to think about what to have for lunch and got a serious craving for a scrambled egg sandwich!

I scrabled 3 eggs for the two of us to split along with some dill, salt, pepper and a splash of milk. We put on a few cheese slices of the Wisconsin cheese batch and spinach for nutrients.

Plus a delicious grapefruit. I LOVE grapefruit all winter long!

I’m studying solo this afternoon while Victoria tries to get better from a sickness! We’re now studying together bright and early tomorrow. This may be the last test I ever study for!!!

[Except that big test called the R.D. exam of course 😉 ]

    Holy yum. That sandwich looks so good…and actually! Very much like the one I just got at Flour Bakery in Boston! Haha. I guess you don’t have to spend a lot of money to eat delicious food 🙂 Though I don’t have amazing bread at home like you do!

    Looks like such a good lunch! I had my first grapefruit of the season yesterday and am hooked. I started out with just 1/2 of one but had to go back and finish off the other half…it was so refreshing!

    I totally dance/pedal during cycle class too. I also sing to myself and hope I don’t look like a complete weirdo. 🙂 One of the cycling instructors at my Y likes to teach one class during the holidays to Christmas music. It’s very festive, especially when they have Christmas lights up!

    I love grapefruit, too, but sometimes all the fiber doesn’t agree with my digestive system. 🙁

    Your sandwich looks SO good! I made something similar for breakfast after the gym, but with Arnold’s Sandwich Thins instead. It was good, but your bread looks so much better!! Hope studying went well!

    you know what? with the exception of being in mexico or some other warm weather vacay spot, i’ve never eaten grapefruit in the winter….

    What a wonderful feeling to know that you’re almost all done studying. And I bet after your intership, the RD exam will be a breeze…well, maybe not a breeze. But at least you’ll be well prepared for it from the hands on experiences. 😀

    The sandwich looks great! I love grapefruit as well, but haven’t actually picked any up recently. I *have* been on an orange binge though. They’re so big and juicy right now…love ’em!

    I had a very similar lunch – except it was a fried egg and apple slices on the side. Sooo good! Perfect Sunday lunch 🙂

    I’m an awful dancer, I think I like spin class so much cause it’s like dancing with my feet strapped in. No risk of hurting myself or others 😉

    omg that’s so funny you eat a grapefruit like an orange! i’ve never seen anybody do that hahaha i eat them with spoons still in the skin like they’re a little bowl. i’m gonna try the orange way!

    Enjoy the times when you don’t “have” to get a tree! Once there are kids (with expectations), you won’t have the luxury of skipping the tradition!!!

    I just started on your blog and am LOVING it! I stalk you a few times a day to see what you’ve been eating :p The oatmeal instructions are awesome and I can honestly say I wish I could eat oatmeal 5 times a day.
