A Girl Walked Into A Salad Bar

After a little relaxation at home with this furball…

We headed to Ruby Tuesday for the infamous salad bar with my padres

I love salad bars so much! I was starving from my smallish lunch, so my salad was piled sky-high with veggies and toppings. Dad didn’t know it, but he and I were in a competition for the biggest (because no one loves buffets more than he does). Upon declaration of the contest, he said I won for volume, but his won for topping variety.

The Layers:

  • Greens: Mixed greens + romaine + spinach
  • Veg: Carrots, peas, broccoli, zucchini, green pepper, mushroom, cucumber, beets
  • Beans: Edamame + garbanzo (2 tbsp ea.)
  • Animal: Some egg, some bacon bits, some ham, cottage cheese
  • Crunch: Croutons, saltine crackers, sunflower seeds
  • Flavor: Black olives, blue cheese, 1 apple from a mayo-based fruit salad

It was bigger than it looks (although that’s about a 9″ plate) and I’m stuffed now! But contributing to that, I also had 2 more packets of saltines, a few sips of dad’s Red Oak, a bite of the husband’s bison burger, 2 french fries and a bite of mom’s quiche! We’re a sharing-kinda-family. Thanks for taking us M + D.

To top it all off, I had another small oatmeal cookie x2. I hope these are as healthy as they taste! My stash is slowly shrinking 🙁

I’m actually typing this on my laptop in the third lane of I-85 South, near exit 132! I’m excited to sleep in my own bed tonight and wake up tomorrow for some yoga, pumpkin oats (I’ve already planned my bowl!), and a good workout. Plus tons of studying and inauguration watching.

OH and we’re supposed to get SNOW tonight!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Not just flurries – 2-4″!!

I am SO ready to get back to 100% healthy eating!

    haha snow…crazy!
    I remember one winter in Georgia we got a few inches…it was madness!

    You can have some of our snow if you want some…hehe. We have about 2 feet!

    Also, an advisory to you and all KERF readers: Kashi has some new granola bars that are totally awesome. I just bought a box of Dark Chocolate Coconut ones (!) that truly taste like a decadent dessert.

    Ah, I was really excited about the salad I made for lunch today, and then I saw your post and your salad gave my salad an inferiority complext 🙂

    hey kath-isn’t it fun getting back to normal scheduled eating–what is that pattern you call it?? there are certain times of year we eat more than usual…. i can’t remember it now. but anyways..!

    salad looks beautiful, didnt know ruby’s had a Salad Bar. i like the title, too. so creative!!

    I used to work at Ruby Tuesday, and I feel like it’s only fair if I let people in on a few things – especially about the crutons. They’re delicious, I know, I’ve scarfed my fair share.
    Then I was asked to make them…

    They’re actually deep fried. The cubes of buttered bread are taken out of their boxes, and dumped straight into the frier. Just like a french fry. In the same grease as fries and onion rings.

    Thought I’d let you know, I don’t know if that changes anything.

    They have limited locations, but Sweet Tomatoes/Souplantation does a really great spread. They also have bread, pasta, soup, dessert; while it’s easy to go un-healthy, they have many options for vegetarians and low-fat. When you walk in it’s about a 20 foot long bar of just vegetables, it’s wonderful.

    hey! i like the coffee maker. the only trouble is that the water tank doesnt have a large mouth so its difficult to get the water in without spilling when you are half asleep. otherwise, its awesome 🙂 i would get it again!

    Good to know, but it doesn’t change anything! I only eat about 5 croutons per salad anyways.

    salad bars are my fav bc you can put all the weird stuff you like on them, i love tons of pickle slices, and the healthy stuff you want instead of fried bacon, cheese and a side of lard.
