White Blanket –> White House

SNOW DAY!!!! Winthrop classes are canceled!! But I didn’t have any anyway. Still fun to see it though!

I had the same excitement as Christmas morning when I opened my eyes this morning and hopped out of bed to peek outside – a white blanket covered everything!! We’ve got about 2″ and it’s still coming down. It doesn’t look like sledding snow (to fluffy and wet, plus I don’t own a sled) but boy would that be fun. The husband went to work in it at 4 this morning, but he should be home mid-afternoon. Hopefully we can take a walk. I just heard the word that we’re expecting 60* on Friday, so I better enjoy it while it’s still in solid form 🙂

I did 20 minutes of Heart Opening Flow this morning followed by a big bowl of pumpkin. I think I’m going to turn orange this week because I opened a 28 oz can of pumpkin!

Today’s bowl was amazing:

  • 1/3 cup oats, vanilla soy milk (Costco), water, half large banana, pinch salt, pumpkin pie spice
  • 1/2 cup canned pumpkin, stirred in at end
  • 1/4 cup cottage cheese, stirred in at end
  • Drizzle pumpkin butter
  • Coconut + coconut butter (in honor of snow!)
  • 1 crumbled coconut oatmeal cookie
  • Spoonful Barney Butter

I’ve got my space heater on and blew a fuse this morning!!! I had to trek out in the snow in my slippers and pajamas to reset the box. Ugg. Then the cable was out for about 15 minutes while the box reset. It’s back on now and I’m watching some inauguration commentary. I actually got a good 30 minutes of school tasks complete between yoga and breakfast, so I will be able to watch TV today.

I also need to go grocery shopping (I might walk there in a few actually) and hopefully get to the gym at some point today.

Back to the tube!

    hahaha a snow day?! Won’t the snow be melted by 11am? I’m just teasing you- I know you guys don’t have any snow equipment down there! 😀 When I lived in Georgia the town shut down for days from only a few inches of snow! It was crazy.

    I LOVE SNOW DAYS!! Enjoy it!

    not sure if anyone has mentioned this but i just saw this news article online this a.m. (new details on the pb recalls):

    Here’s how my mind works: I saw that first photo of the 28oz of pumpkin and thought, “Is that your breakfast?” I can just imagine eating spoonfuls of pumpkin right outta the can. Now that’s dedication. 🙂

    That bowl looks great. I really want to make pumpkin oats, but I never know what to do with all the leftovers? How long can it keep in the fridge?

    God, I wish I could like pumpkin in oats! No matter how I’ve tried it, it just tastes NASTY to me in oats, yogurt… except in desserts!

    Yay snow day! It’s still coming down pretty hard here! We’ve been told not to go out on the road unless it’s necessary! Crazy! Guess I’ll be figuring out some inside exercises to do!

    hehe, we’ve had 104.5 inches of snow this year so far in Syracuse!! Your snow looks great though!! I remember those days when I lived in SC. There are never any snow days here, especially for colleges. I really need to get out and take advantage of it though, we get so much it’s hard to enjoy it sometimes but especially when it’s been so cold like lately – single digit highs last week. I just hate that the roads get too slushy/slippery to run. 🙁 I don’t think I can make myself go back to a gym for cardio ever after running outside so much.
    Definitely have a snowball fight with the husband or something later!!

    snow days are awesome, though i was always disappointed when they happened on days that i didn’t have class anyway!

    although i’m not a kid and i do live in a part of canada where a ton of snow is a regular occurance (i have 7 foot tall snowbanks on either side of my driveway), i am still enthralled by big snowfalls. we went snowshoeing in the woods this weekend and it was almost magical. everything is prettier when covered in white, and the snow makes things so perfect and quiet.

    I lived in Virginia for a year, worked at a bank, and as I was getting ready I heard that my bank was closed because of the snow. What?? I looked outside, and there may have been an inch of snow and no one was driving – so strange!

    This coming from growing up in Chicago, where the only time school got closed was when the air temperature was -10 degrees – never for snow!

    Enjoy it while you can, and if you could send your 60 degree weather my way, I would appreciate it!

    Okay, I just had to laugh about the snow day with that amount of snow!

    We’ve got feet of snow up here in upstate NY, and the kiddies still have to get to classes.
    Moving south could be appealing.

    I love your snowy oats! I am also curious as to how you are going to use up that can of pumpkin. I have the same large can and am scared to open it unless I know I can use it before it goes bad. Obviously I can bake pumpkin goodies til my hearts content, but I am hoping to come up with some uses for it in meals instead.

    A snow day for 2 inches of snow, hilarious! Snow days are a good time though!! I get one everytime we get enough snow to require a state of emergency, which is about once a year. Already had one in December!

    Question re pumpkin oats. I love all things pumpkin but do not like bananas. I am trying to start liking them and/or sneaking them into things where I won’t taste them much. Can you taste the banana much in your pumpkin oats?

    Hi Kath! I’ve never commented before, but I’ve been reading your blog for a few months now. I just want to let you know that you’ve really inspired me to be healthy for myself — not to refuse a second cookie because it’ll make me “fat,” but rather because I’m satisfied and it’ll make me feel better. 🙂

    Those oats look amazing, as usual! Do you alternate between 1/3 and 1/2 cup of oats? Like, do you use 1/3 cup when you want more leeway with the toppings?

    Hi Kath I have been meaning to ask you… For xmas I got a heart rate monitor!! 🙂 It has been working great and I love it. It is great to be able to change activities and weight lift and know how many calories I am burning. I was wondering when you turn yours off to get an accurate calorie count. I have been waiting until my heart rate goes back down to normal and then turning it off and using that to determine my Net calories for the day. But I just wanted to make sure I was doing this write since I am trying to lose a little weight gain. Thanks!!

    This is the first time I have commented on your blog. I LOVE reading it and today’s post had me laughing. I love that your classes were canceled due to two inches of snow. I live in Jackson Wyoming and we get pummeled with snow all the time and school has not been canceled here since the 70’s. . .isn’t that crazy? Just to let you know what you’re missing out on, we got 5 feet of snow in one day. . .Christmas Day. Don’t you wish you lived here. . .ha ha 🙂 Enjoy your snow day.

    Thanks and welcome! Yes, I alternate depending on my mix-ins. If I’m doing a huge bowl of pumpkin, I’ll use less oats, or if I have wheatberries, I use less. If I’m just doing banana, I’ll do 1/2 cup.

    Yes, I just let it dwindle on during my cooldown and turn it off when I’m leaving the gym. Your HR will be elevated for a bit after a workout, and that counts.
