A-Day-Late Easter Eggs

I arrived home around 5:30 a bit hungry to this scrumptious bag of dried fruit and nuts fresh out of the trunk from Costco (Matt went to pick up a few things: spinach, bananas, toothpaste, seltzer, toilet cleaner). It’s got a HUGE variety of dried fruit, and was only about $3/lb – not bad for dried strawberries, tropical fruit, banana chips and nuts. This bag should last us ages too – if I don’t eat it all too fast! I hid the bag in a hard-to-reach cabinet just for that reason.

I made a little snack bowl with some of the mix (and had a little more from the bag) and a few kashis. I promptly spoiled my appetite for dinner 2 hours later. Guf!

I had some bizness to take care of in the form of a call meeting and told Matt to pick something to make for dinner. (Actually, I told him this morning to pick something but by the time I got home he β€œcouldn’t think of anything.”) We debated getting take-out something, but decided that was not the budget friendly choice since we have plenty of food in this house. Finally I took charge and told him to make fried egg sandwiches and I’d do a quick spinach salad. He needs direction :cross2:

Dinner turned out to just hit the spot!

Fried Eggs topped with some Kerrygold Cheddar on Great Harvest Honey Wheat.

Plus a Fruity Spinach salad with feta and almonds drizzled with EVOO and  honey (the best dressing ever).

Off to try to squeeze in some studying!

    The strawberries in that mix are like CRACK! They are sooooo frickin good! I was a bad house guest and picked many of them out of that bag once. I seriously couldn’t help it though!

    Huh..looking at the dried fruit pack, I now recall that I had purchased it too last week. i guess I hid it too, but its so far hidden that i completely forgot about it!

    Hi there, I’ve been REALLY enjoying your blog for a few weeks now. Just thought that I should stop lurking and let you know that I’m reading…seems like the polite thing to do.     Yum – thanks for the dinner inspiration. Me thinks I’ll be having the same tomorrow – I have all the necessary ingredients (well – besides the AWESOME GH bread – but my homemade honey, flax &sunflower is the next best thing πŸ˜‰ )

    First of all, I love your blog – I lurk around on ejshea.com, and she linked to you a while back, while you were visiting the tea plantations in Africa. Now, I’m hooked!

    Second, if you want a great treat, try the trail mix in one of your salads. Salty, sweet and crunchy with the fresh veggies. One of my favorites! (I have to hide it too, or I’m snacking all day long!)

    I’ve had that trail mix before, too. The only reason I don’t get it is because of the fried, sweetened bananas. Are they as bad as people say? I guess I would just rather eat a real banana. But they’re great when combined with all the other yummies in the bag!

    Oh I could do some serious damage to that bag of dried goodies. Their textures can be so addicting! Hide them far, far away.

    Mmm a simple egg toast with a spinach and fruit salad sounds like a delightful ending to a Monday. I love every single flower pic too, by the way.

    oh those fruits sound yummy!! i can’t wait for strawberry season so i can properly experience dried strawberries w/ my dehydrator. this week i did kiwi and it was a little bit awesome.
    my problem with eating too much dried fruit is that it expands in my tummy.

    The encredible edible egg does it again. Mmm… Eggs are so easy and tasty any time of day. Good for you for eating the yolk too – that’s where all the goodness (nutrition) is.

    And WOW! That fruit and nut mix looks awesome! They pack so much variety into that one bag; I’m impressed!

    No jar – just drizzle them on. Maybe only a quarter tsp to half a tsp each? Since they are both “clingers” you don’t need much.

    I haven’t heard people say bad things about the bananas – just that you probably shouldn’t eat a whole bunch of them. But in a mix – no big deal.

    I was thinking of that yesterday! That if I drink water with my fruit it will expand and make me more full. I think it worked!

    I purposely do not buy that dried fruit and nut mix from Costco anymore cause I can eat the whole bag. Its so good! Enjoy πŸ™‚

    Do you find a Costco membership worth it with just the two of you? I’ve resisted getting a Sam’s or Costco membership thinking I would spend MORE money, even with four of us.

    Apropos of nothing, I had tempeh for the first time today after reading several times about your sandwiches. I can’t say that I loved it, even with peanut butter and pumpkin butter on grainy bread, but it sure kept me full for a long time! I had 2 oz of rempeh on one piece of bread, about 1 T of Justin’s Nut Butter (plain), and pumpkin butter.

    It must have been an eggs kinda night because I made frittatas! When all else fails- eggs are such a great choice! Must look for a giant bag of dried fruit and nuts!

    EVOO + honey huh? I might have to try this. It will be hard to veer away from my fav dressings, but this sounds like it’s worth trying.

    I’m not sure if we really save money, but our membership was a gift (Matt’s birthday from Karen) so it has been very nice. I think you have to make an effort to get only what you need to not be sucked into the rest.

    Give tempeh some time – it’s an acquired taste!
