I arrived home around 5:30 a bit hungry to this scrumptious bag of dried fruit and nuts fresh out of the trunk from Costco (Matt went to pick up a few things: spinach, bananas, toothpaste, seltzer, toilet cleaner). It’s got a HUGE variety of dried fruit, and was only about $3/lb – not bad for dried strawberries, tropical fruit, banana chips and nuts. This bag should last us ages too – if I don’t eat it all too fast! I hid the bag in a hard-to-reach cabinet just for that reason.
I made a little snack bowl with some of the mix (and had a little more from the bag) and a few kashis. I promptly spoiled my appetite for dinner 2 hours later. Guf!
I had some bizness to take care of in the form of a call meeting and told Matt to pick something to make for dinner. (Actually, I told him this morning to pick something but by the time I got home he “couldn’t think of anything.”) We debated getting take-out something, but decided that was not the budget friendly choice since we have plenty of food in this house. Finally I took charge and told him to make fried egg sandwiches and I’d do a quick spinach salad. He needs direction
Dinner turned out to just hit the spot!
Plus a Fruity Spinach salad with feta and almonds drizzled with EVOO and honey (the best dressing ever).
Off to try to squeeze in some studying!
