Not shortage of pumpkin in this house!!

Although Matt has laid claim to 4 lbs of this for pumpkin beer brewing today. But that still leaves me with 2 lbs plus a whole second can…when I’m ready

I put it to good use in a smoothie today.

Pumpkin Pie Smoothie

Tasted JUST like mom’s pumpkin chiffon pie!

  • 1/2 cup canned pumpkin
  • 1 cup milk
  • 1/4 cup plain yogurt
  • 1 small or 1/2 large banana
  • 4 cubes ice
  • Pinch each of cinnamon, allspice, ground cloves and nutmeg (4 grinds on a grater)
  • Cville Cluster + Biscoff on top!

Vanilla tea to round it out. So much pumpkin!!

    Wow the smoothie looks so thick! Did you use Xanthan gum to get it like that or is it just from the pumpkin/yogurt/milk? My smoothies have been so watered down lately and I can’t figure out what I’m doing differently!

      I don’t use any gums. I think you are using too much liquid? Also, ice helps fluff it up

    That is deliciously orange… love it! I’ve been on *such* a pumpkin kick already. (Well, all winter squash to be honest… yesterday alone I ate pumpkin, butternut and spaghetti squash!).

    I just acquired 12 cans of Libby’s… in addition to the 5 I already had stashed away. No pumpkin shortage in my house, either! 🙂

    That is a BIG can of pumpkin! And to think, I was nervous to open up my “big” can of Libby’s which is only 1 lb 13 oz. Are you going to try freezing any of it? I would imagine it would be ok especially for smoothie use.

    Yummmm! What a perfect fall breakfast. There’s no shortage of pumpkin in my house either.. every time I go to the grocery store, I usually pick up a can, ya know, just in case there’s a shortage coming up that I don’t know about. You can never have too much! 🙂

    I just roasted two sugar pumpkins last week, so I’ve had a ton of pumpkin on my hands too! So far, I’ve made pumpkin pie, oatmeal, pancakes, bread and my favorite …. pumpkin soup. I like my soup with a little bit of apple, coconut milk and some fresh sage. It’s wonderful! And yes, you can freeze pumpkin! I do it all the time! Your new house looks wonderful! Congrats, again!

    I went last night and stocked up on 8 more cans of Libby’s since there’s supposed to be another pumpkin shortage. First I went to Meijer where there were only 2 large dented cans, so I had to go to Kroger. The shelf was sparse, but I managed to snag some cans without totally clearing them out.

    alright, so i’ve been on the depressed side with summer being over and haven’t really been craving fall foods like pumpkin and squash (which for me is weird because autumn is my favorite). then this morning every blog i read has pumpkin in it…getting more excited… but then as soon as i read your words of “pumpkin beer” i just got SUPER excited about fall. and pumpkin everything 🙂 so thanks ! hahaha

    So much PUMPKIN! I’m pretty sure I need 6 pounds of the stuff, myself. That smoothie looks so good and may be just the thing to transition myself from summer to fall. I’m having trouble letting go of my strawberry coconut smoothies, but now that strawberry prices are going up I’m thinking pumpkin may be an adequate replacement! It looks so FROTHY! Mmmmm…

    That is SOOOO much pumpkin! hahaha I get nervous buying large cans like that because I just won’t go through it quickly… it’s too much of a commitment for me. How long do you think an open container like that lasts? Do you leave it in the can on transfer it to Tupperware??

    Have you ever bought “Farmer’s Market” brand pumpkin? I’m sure I have photos of the can on my blog somewhere. It’s awesome- you can get it at Wegmans, My Organic Market (don’t know if you have those in Cville?) and other natural food stores. It tastes WAY better than Libby’s to me and is organic.
    I just bought a bunch of cans at TJs but haven’t cracked one open yet. We’ll see how that compares!

    so today is the feast day of Good King Wenceslaus- guess who he is the patron saint of???

    Second, I picked up the October issue of Oxygen today and I found a recipe that seems like it
    would be right down your alley….”Baked Ginger Pumpkin Oatmeal”. It also has cottage cheese
    in it. I’m not a big pumpkin fan but in the photo it looks really good. I haven’t checked out
    the website to see if the recipe is there or not. Just in case you are interested…
