5.31

Tomorrow is JUNE!!! That means July 1 is almost here. Wheeeeeeee!

I had trouble sleeping AGAIN last night – although this time it was on the nighttime end. My brain would not stop thinking of ways to pack our house up even when I was telling her to go to sleep.

I also may have been thinking about this:

And THIS!! I had a $1 off coupon and WOW. It’s the vanilla hemp milk experience all over again! Since Living Harvest changed their recipe, this is my replacement. Marshmallowy!!

Matt whipped up the oats today! My portion:

  • 1/3 cup oats, coconut milk, water
  • 1/4 a banana
  • 1/4 cup cottage cheese, stirred in at end
  • 1/4 cup blueberries, stirred in at end
  • Nuttzo PF!!!
  • Chopped almonds
  • Chai granola

The coconut milk didn’t curdle, but it didn’t emulsify either…?

We’re waiting on:

1) House counter offer

2) Bakery location response to our letter of intent

3) Email back from potential cute rental house (although this is just an inquiry – not anything set)

I’m also up in the Surgical/Trauma ICU for the first time.

Gonna be a big day!

    Wowzers, surgical/trauma? That sounds exciting!!
    Do you like vanilla hemp milk? I have some Hemp Bliss which I got given for free by the lady in the shop – apparently it’s so horrible, noone will buy it :s I’m scared to try!
    Coconut milk on the other hand (the carton, not can, kind) is SO good! I’ve just finished my 1st carton 😀

      I used to love the Living Harvest but they changed it. Now it’s like all the other hemp milks: earthy, mushroom.

    And your breakfast looks yummy as always…I didn’t even know there *was* such a thing as coconut milk beverages. I’m looking out for that next time I’m at the store. 😀

    I love So Delicious’s brand of coconut creamer for my coffee, so I can only imagine how amazing their coconut milk would be in oats! I’ll have to see if I can find this at my local WF! 🙂

    That bowl is delicious! I don’t know why the coconut milk wouldn’t dissolve or curdle in the coffee… did it taste coconuty, though? Hmm… coconut coffee… sounds intriguing!

    Yum I bet coconut milk in oats is so good! Is that carton basically the same type of coconut milk that you buy in cans to use in curries?

    “sleep until 7:30”- seriously, it’s a Sunday- I couldn’t stop laughing at this, thinking at how happy I was to get up at 10:45 snuggled in my man’s arms.

    Surgical/trauma unit should be interested. I always dreaded trauma call at the start of my M3 year, but I think it will be a much better experience from the nutrition end. Hope it goes well, and good luck with the rental!

      They will be back! The reason they go out of stock so quickly is because they are handmade and we don’t want to overwhelm the artist. So we have to do small batches. But they’ll keep coming back and back so you’ll get one eventually!

    I don’t think I have ever seen that coconut milk – I will need to keep my eyes open for it (for my husband – I’m allergic to coconut).

    Have you tried pacific brand hemp milk? Also, you MUST try Pacific’s Oat Milk. It literally tastes like liquid oats!! The nutrition is about the same as hemp milk. Also, Silk recently started making Almond Milk in a 1/2 gallon container that is insanely delicious, and soy free. It’s smooth and creamy, hands down the best AM I’ve had yet. Also [hehehe], So Delicious makes creamer that is pretty good and even comes in flavors! I used it for awhile but then switched back to organic half/half because really, nothing is quite the same 😉

    Totally rediscovered Great Harvest this week, thanks to your blog. Passed it by every day on my way to work, hadn’t been for a year since I moved/ got married. LowCarb Whole Wheat makes the best cinnamon french toast made w/ coconut milk and topped with warmed, smashed berries. Dakota is by far the best sandwich bread EVER. Now, why oh why do they not make the Flax Oat Bread out by me in NJ?!

    Kath,
    You have to stir the coconut “milk” for it too look all milky, or emulsify…I have been drinking it for awhile now and its a really great product: especially when you freeze it in ice cube trays and use it to make “icecream” in the vitamix! Try it; I promise you wont be disappointed!
    Congrats on finishing your internship, or almost finishing it; I start mine in August.

    sounds like you’re waiting on a lot – no wonder you’re not sleeping! i have been having similar issues lately; i keep a pad by my bed so i can just write down what’s worrying me and then i’m not allowed to think about it again until morning!

    Hey Kath- Check out that same brand’s coffee creamer. It will emulsify perfectly! They even have a hazelnut flavor! Yum!
