2 Great Meals

‘Twas a jam-packed day!

I spent the morning packing for my trip. I swear, this is the most minimalistic and organized I have been on a trip. Let’s hope it feels that way mid-flight tomorrow! I am packing my DSLR in my suitcase (carry on) for the first time to lighten my bag a bit. It’s kind of like leaving a baby with a babysitter (sort of

I went for a walk too, before lunch, and made myself late for the rest of the day!

Lunch was a “Burger In A Bowl” –

Garden greens topped with a No Bull Burger, pickle, and cheese. I didn’t know how I’d feel about ketchup touching my greens, but it ended up being OK : )

I had a chiropractic appt. this afternoon and a pre-natal massage. Heavenly and great to work out all the kinks before my flight tomorrow. My hips feel so good!

I met my friend Lindsey for a walk at the Meade Park Market

I spent the afternoon finishing up all loose ends before I leave tomorrow. I’m speaking (twice) at the conference and rehearsed…in my head.

Dinner tonight was incredible…!

Ketchup me up!

We had cod – pan-seared and seasoned with salt, pepper and some Delicious Dietitian Creole Seasoning. I bought the cod at Whole Foods – in the frozen section. What a yummy fish!

Served with a mountain of roasted red potatoes in ketchup (a spring/summer favorite of ours)

AND with our version of the kale salad I had at l’etoile this weekend! We had garden chard on the menu, but I didn’t think I could consume it all soggy-steamed. I suggested a choppy salad? Then we remembered the l’etoile method! Thus, talented chef Matt chiffonaded (is that a verb?!) the chard by hand and then tossed it in parmesan cheese (the key ingredient), a wee bit of lemon, olive oil and S+P. It was awesome!!

My flight leaves at 6:30am tomorrow, so I’ll be up very early. I’ll probably see you in Chicago!

    I love swiss chard fresh. I also saute it with onions, but I know that wouldn’t appeal to you. 🙂 It also works in a souffle, basically anywhere you’d use spinach you can use chard. Can’t wait for ours to be ready to harvest.

    Your dinner looks so simple and fresh. I finally found some good organic ketchup with no HFCS – so yay. It’s definitely popsicle time! Jelly 😉

    roasted red potatoes in ketchup, the stone fruit, the popsicle….it all looks great!

    What herbs did you put on the potatoes? What temperature did you roast them on? Sounds so good! I’m going to make some this week 🙂 Thanks!

    By the way I have been having Cheddar and Jam sandwiches for lunch! So delicious! I love melting the cheese on the bread.

    I’ve heard melted cheese is more fatty than when its in whole form…from the perspective of an RD is that true? (Considering the melted and whole cheese are the same ounce per ounce)

      400* for about 30 minutes – and they were covered in thyme from our garden!

      Cheese is cheese no matter which forms it’s in – unless you blot or drain off the grease after it melts (which doesn’t sound very fun!)

    I love doing roasted red potatoes with ketchup in the summer, too! I toss mine with olive oil, S&P and fresh rosemary from my herb garden – delicious 🙂

    You don’t even look pregnant in those pictures! We had grilled Swai the other night with a fruit salsa and grilled/baked red & sweet potatoes. We love roasted potatoes, so good with fresh herbs. Love the lemonader. I kept looking at this word because I’m reading a book with my kids about a dog named Tippy Lemmey, but I said Tippy Lemony the first time I read the title and now I can’t stop saying it! Enjoy your trip. Glad you feel organized. Do you think your dream affected your packing?
