July’s real food is WATERMELON!! I am eating it like crazy this summer (and so is Mazen!) I might have even spiked some with some vodka : ) But seriously, watermelon is so good for you – eat up!

    Hey Kath! Just FYI, that Alexandra’s Kitchen recipe doesn’t actually contain watermelon. It is “watermelon radish” not “watermelon, radish”. It still look likes a beautiful recipe though – as per usual with the stuff Alexandra cooks!

    Yum! I’ll definitely try the Popsicles!

    I went MANY years thinking I hated watermelon only to discover I loved it! My husband and I eat at least 2 or 3 large watermelons a week in the summer!

    I don’t think there’s watermelon in the first recipe…..it’s actually watermelon radish.

    Ugh, I have had ZERO watermelon this summer and I am so sad about it!! I keep saying I’m going to go get a watermelon, then I forget… haha need to do that before it goes out of season! 😉

    I had no idea that watermelon was so high in vitamin A! I’ve noticed that when my vitamin A intake is high, my skin is super clear- time to pick up some watermelon today!

    Your first recipe doesn’t actually have watermelon in it, but rather watermelon radish! Still tasty, but FYI:)

    For years I avoided watermelon because I considered it an annoyance to cut up and I was always scared that I would pick a gross gritty one. Last summer I decided to give it another try and I am glad I did! Worth the effort and the gamble maybe getting a gritty one. Watermelon has been a summer staple in our home. Looking forward to trying a few of the recipes! Thanks!

    Such an awesome roundup of recipes! I just recently heard of yellow watermelon-has pretty much the same taste, but the color definitely left me a bit confused for a minute.

    Can you clarify the nutritional deterioration after seven days of storage? Is this from the moment it hits the grocery shelf? The delivery truck? Your house?

      From WHFoods.com, here’s what they say:

      Recent research has shown that the lycopene content of watermelon also remains very stable over time. When two-inch cubes of fresh-cut watermelon were stored in the refrigerator at 36°F (2°C) over 48 hours, researchers found virtually no deterioration in lycopene content. That deterioration did not start to become significant until about seven days of storage, when it decreased by about 6-11%. While we do not recommend waiting seven days before consuming fresh cut watermelon, we believe that the excellent stability of watermelon lycopene over a two-day period is great news for anyone wanting to enjoy fresh cut watermelon over the course of several days.
