12 Months of Real Food: PUMPKIN!

Remember the other week when I said I wasn’t quite ready for pumpkin-flavored everything? Boy, a few days sure can change things! It only made sense for the October edition of 12 Months of Real Food to be the one and only pumpkin!!

Pumpkin is truly a nutrition powerhouse. It’s a fantastic source of beta carotene and fiber. Beta carotene is a precursor to Vitamin A, which is related to eye, skin, and immune health. Pumpkin is brimming with beta carotene, providing about 246% of the average person’s Daily Value of Vitamin A!! Check out some other fun pumpkin facts below!

Pumpkin NutritionPumpkin is so versatile. It can be added to many recipes to boost nutrition without a lot of calories. Pumpkin can also be used as a substitution for fat in recipes. Personally, I love hiding it in unexpected recipes such as chili or meatloaf to up the fiber and nutrition.

    We need more days of the month to get all of these recipes made and eaten! I love pumpkin season, and adding just a bit of the puree to any dish helps. So far, I’ve put it in oats and that’s it. I better get busy. Happy pumpkin eating, Kath! 🙂
