Wishful thinking:
Another jar bites the dust!
Chia Charger, you were so good to me.
I filled this bad boy with:
- 1/3 cup Coach’s oats (I love these cooked, but not overnight. I need more rolled oats!)
- 1/3 cup greek yogurt
- 1/2 cup milk
- 1 tbsp chia seeds
- 1/2 cup frozen berries
- Peanut butter residue
Hot diggity tea
It may be colder outside, but the cheerfulness of this week’s warm weather is still in the air. A sweet Robin is dancing around my desk window!

Oh I miss fresh summer berries! I can’t wait for them this spring/summer!!! Happy Friday!
These were frozen – go get some now!
Love the place mat
So springy!
Yumm berries! I might just have to pick myself up a package of them this weekend. I know they’re totally not in season but I’ve been seriously craving them at breakfast lately. Have a fabulous Friday Kath (and get that chia charger re-stocked!)
Good play on your title
And can’t believe those berries were frozen– they look so plump and un-smushed!
I’ve got to try this chia charger… or better yet, I need to try to make my own chia infused nut butters at home. I bought a big bag of peanuts at Whole Foods last weekend with the intention of making peanut butter, but so far I’ve just been eating them by the handful.
All that beautiful sunshine! We are being buried in a blizzard over her in Colorado…I’m so envious!
I went through my entire 3-jar OpenSky stash of Chia Charger by January! Haha. It was so sad to see them go but I just couldn’t stop myself!
Hopefully spring is right around the corner and that’s not such wishful thinking afterall!!
that looks like a mighty tasty OIAJ!!! i sure am loving the sunshine lately too… i hope it stays around!
That is about the cutest tea towel I’ve seen! Don’t do that to me yet though, then I’ll start craving Cadbury Creme Eggs! (They had them out the day after Christmas here! The nerve!)
Have a great weekend!
Had my first Cadbury Egg about a week ago. They didn’t show up here till the end of January. Very yummy, but I probably won’t have another till Easter.
The World’s Best Food!
This is really true for me. Cadbury Eggs are my #1 favorite food. One year I bought several boxes to save/freeze and eat throughout the year, but they didn’t even make it past Easter!
I will never make that mistake again!
Last year I got my hands on one well after Easter was over (I had been meaning to get one and kept forgetting). I saved it until the SUMMER and finally ate it. I didn’t think it tasted as good in June as it would have in April
I much prefer the Reese’s eggs to Cadbury
Yum!
Hope you have a fabulous weekend. I am enjoying the weather but I worry about how HOT it will be when it’s actually summer.
I just had my first oats in a jar today!! YUMMY!
Seriously, who would think breakfast in a used jar of peanut butter could look so scrumptious! Those berries look amazing for frozen! I was at the dollar store the other day and happened to see a cute bowl and mug and all I could think was: “Kath would love those!”
You’re thinking spring, and it’s a snow day here. I couldn’t be happier about not teaching today! Chia seeds have recently made a comeback in my life. I feel so much healthier after 3 days of eating them!
I love the colors of your placemat! It is very springlike
you should have put hot coaches oats in there! I love pouring hot oats into my old PB jars because it melts the PB, soooo good!
Now that’s a great jar I would use! Wider opening for easier access
I’ve noticed more birds chirping the past few days. They probably think spring is coming!
It’s feeling so “springish” here too! Warmth is in the air, even with the chilly temps.
Kath, I know a few weeks ago there was a big to do on here about the your lack of content.. I have to agree. I am moving on to other healthy living blogs and I know that you don’t really care and that’s ok but I just wanted to maybe get you to think about it at least for a moment. I have probably been reading your blog for 3 years or so, even have your app on my phone. I guess as time goes on we all grow and change, but your blog isn’t growing with me. I know your gig is to make a photographic journal of your food intake but I really think you waste your knowledge and talent on just taking pictures of the food you eat (which is pretty much the same old thing everyday). You are a registered dietician and you don’t even really share any of that knowledge with your readers, if someone asks you a specific question about say “what are the benefits of chia seeds and why do you choose them?” you pretty much just give a link to another site somewhere. I don’t know, something has just changed on your blog and it is time for me to go. I wish you well and may you have continued success, but please reconsider your content and maybe change things up with maybe a topic of week regarding say nutritional supplements, diabetes, obesity, vitamins, water intake, fat loss, weight training and aerobic activity, caloric intake vs intuitive eating … anything really that a RD would address.. I would find any of that more interesting than just a photographic journal of your food intake. Please don’t anyone respond in ugly fashion to my post, the intent of this is not to start a Kath bash but to maybe have Kath think about posting some sort of nutritional content on her blog other than photographic journal . It was a good ride while it lasted, but I gotta move on.
P. S. and i know it isn’t gonna happen, but it has really bugged me that you don’t iron your linens that you photograph on.. it really takes away from your pics to see those folds.. but hey, that is just my OCD tendencies coming through and we all have our quirks.
best to you and your family Kath.. take care.
Kath! I absolutely LOVE your blogs..every little thing about them:) Thank you!
Hey Cheryl,
Thanks very much for your comment. KERF has always been a food journal. Rather than answering the question “why should I eat healthy,” its mission has always been to answer “HOW do I eat healthy” via creative dishes and real life, real food photographs of meals. Most people (especially ones who come here) know what to do or why healthy eating is important, but it’s harder to put it into action. Since day one, KERF has first and foremost been a food journal. The only thing that has changed was the removal of calorie counts when I stopped counting myself.
When I went back to school, my hope was to open a brick and mortar nutrition private practice. As my blog grew, that dream shifted to an online practice. Then the game changer happened: Matt and I decided to open a bakery. This meant trading in one side job for another, and I veered away from nutrition and towards entrepreneurship. I still finished my degree because I was so close to the end (and because education is never wasted!), but my career plans were no longer seeded in nutrition research.
I tell you this not to make an excuse, but to point out that any lack of nutrition research on KERF is not out of laziness – it is because the blog was never intended to become a nutrition research site and my career plans changed away from building a separate one.
I share links out of efficiency. If I find a site that already lists all the same reasons I would on why chia seeds are beneficial, there’s no need for me to re-type everything. When someone asks for my opinion on a food or topic, I almost always give it give it in my own words, but facts are facts. There are tons of sites where you can go that summarize nutrition research that do it in a much more efficient and concise way than for me to spend time re-writing it all in my own words.
Nevertheless, I appreciate the feedback on why you are leaving and wish you the best in your blog searching journey!
I liked your response Kath, except for:
“The only thing that has changed was the removal of calorie counts when I stopped counting myself. ”
As a reader since 2008 I must politely disagree. If you went back and read blog entries from 2008/9 you will see much more a difference than that. I still read your blog and don’t plan on stopping, but it is a completely different blog than it used to be. As you said, plans/people/goals change.
I agree it was much more seeded in weight loss then, as I had just finished losing weight. I guess it comes down to that I as a reader wouldn’t want to read those kind of details, so I took some of the weight loss talk out over time. I guess I write what I am most interested in reading.
Hi kath, a few weeks ago there were several comments from readers about your blog content. You mentioned a project that you would announce in a couple weeks. Just curious when we’ll hear your announcement?
Soon! Waiting on some feedback.
Wonderful respons, Kath!
happy friday, kath!
cute napkins (tablecloth?)!
I really need to try me some chia charger!
Does living in the south mean you are really thinking/wishing for Spring the the beginning of February? I still want SNOW! I’ll think about Spring and pastel things in late March or April.
yes!! February is our transition month
Your placemat makes me want spring to come, even though we’ve had a pretty mild winter so far!
I have to try those coach’s oats!
I couldn’t get past the texture of the chia charger. I think I am just so stuck on jif natural!!
I wish it was spring, too! Can’t complain about the weather lately, though!
Love the addition of the frozen berries – so many different textural combinations to lend a yummy flavor!
That chia charger sounds so good
I want a bite of that right now!
love the overhead shots and the opening collage. So pretty. Great spoon, great embroidered napkin…this reminds me of all the frilly things my grandma used to have. What I wouldnt give to have those things now!
Kath,
LOVE your blog!!! Was wondering if you will be restocking Chia Charger and Wild Squirrel nut butters on Open Sky anytime soon?
Thanks!
[Checking on this..]

I have really wanted to try Chia! Definitely time to look into it!
Love the Spring linens! Happy Friday!
I had a jar of OIAJ yday- forgot how yummy they are!
Yum! I really have to try that Chia Charger.
Kath, have you tried baked oatmeal? I just found this recipe and am going to give it a try!

It sounds really good and the kind of thing that you can make and keep for a few days (or maybe even freeze) for busy mornings. Not that yours are that busy anymore since you’re finished with school and have the bakery!
Hi Holly,
I make baked oatmeal all of the time. My recipe (from Heidi Swanson) is a bit different, but very yummy. It keeps several days and has sort of a bread pudding type of consistency. We love it with a layer of bananas and then berries, topped with the oat mixture and then the milk/egg mixture. I put nuts in it but not on top as they always burn.
Yes, I made it a few times years ago and haven’t done it since! Which is a shame because it was really good
I just made your baked oatmeal recipe and topped it with peanut butter. So delicious!
My 9 year old daugther Gabrielle wants to write something to you. Here she goes: I,m sorry about the mean stuff on the page! and still going to make your gift for chrismas enven if it,s Febuary.
Hi Gabrielle!
That breakfast looks ah-maze-ing!
I saw cadbury creme eggs in CVS this week. That’s my kinda sign of spring
Love the linen!
hi kath!being a current recovering food addict, EDNOS, etc., I’d just liek to say that I appreciate your modeling a healthful relationship with food…THAT’s why I read. Some people might argue that I am too poor to budget for the healthcare for which I budget, etc…however, I feel it’s the MOST possible thing I should be “affording” right now! And I pay my dietitian and treatment team at the hospital to give me the advice I seek…I don’t just go browsing around the internet looking for non-scholarly (no offense to your site, etc.) advice that suits my fancy…if I lived near you I might BED you to let me pay you for your nutritional services but like you said, you’re wanting to be a sale gal now, not necessarily med. prof….anywaysssssssssssss thanks for the gorgeous photos….i just made flax brownies go seeeeeee!
oh, and by the way…because I use their services quite a bit I WILL add that you always sound professional and present as backed by sound information to boot!
“if I lived near you I might BED you to let me pay you for your nutritional services ”
Best typo of the day

Springuary is here to stay for a few more days in NoVA
Super excited because my fiance and I are going to tour potential wedding venues tomorrow so they should all be looking lovely!
I love your “breakfasts in a jar” always…so fun! And I’ve never had chia charger but have started with chia seeds since seeing them here and I love them…big boost of energy and I can only imagine what good things they’re doing to my insides
Thanks for sharing the love!
Love your linen! Oats look good too!
Even though I am all about snow, it is nice that it is sunny and not too cold.

PS. Kath, did you get the title for this post from the song sung in South Pacific?
Yep!
Do you defrost your berries in the microwave before putting them in the jar? Thanks!
Nope, they defrosted overnight in the fridge
Mmm need to try some of that chia charger. I’m on a SB kick right now!
Love your coffee mugs.
