Sunny Side Up

June 29, 2011

It was an absolutely gorgeous afternoon here in Virginia. My bike ride home had me soaring through pockets of cool air under trees twinkling with setting sun . I almost forgot how much my legs were burning going up the piedmont hills!

Afternoon conference call:

Granola bar crumble munching:

We ended sales with a bang today, selling out of most of our sweets + breads. We also had a great day for sandwiches!

Matt took the afternoon off and went out for a BBQ lunch with a friend, so he was still kind of full at dinnertime. I ate too much granola bar! So we declared tonight a simple salad dinner instead of the millet + bean fiesta I had been planning.

There is one key to keeping sanity + health on busy weeknights: have versatile ingredients in your fridge! You can do anything with staples of veggies, grains, and proteins. Of course a little bread helps too!

Tonight we made tropical salads

We started with garden greens mixed with green peppers, carrots, and cucs.

Then dressed those in just a drizzle of olive oil and lavender salt.

Then for fun we added mango + avocado for a tropical splash.

And cubes of Parrano cheese (SO GOOD!)

And finally, a pan-seared smoked paprika egg on top

The combo of mango, avocado and cheese was outstanding!!

Of course the lettuce was really good too. Riiiiiiight.

Just munched on a piece of cashew brittle for dessert.

I’m so tired tonight! Not sleepy, just tired. I’m glad I took today as a rest day (minus the active commuting) for the muscles. Tomorrow morning I am getting a MASSAGE! Matt and I won one at the Joel Salatin event we went to back in May and I’m finally cashing it in. Can’t. Wait.

Have fun getting a massage that sounds fantabulous!!!!

6 Lauren @ Lawfully Wedded Wife June 29, 2011 at 8:07 pm

Mmmm that salad looks awesome, that’s actually a great tip about having things on hand because I often don’t and find myself in a pinch when I don’t feel like “cooking” dinner!

7 Lauren June 29, 2011 at 8:14 pm

Mango and eggs? Heck yes! :)

8 Kelsey June 29, 2011 at 8:15 pm

12 Allie (Live Laugh Eat) June 29, 2011 at 8:25 pm

We’re putting those chickens to work aren’t we? And we put our teeth to work munching granola bars!

I’m such a fan of eggs as salad dressing. Your forkful looks beautiful.

22 Gina @ Running to the Kitchen June 29, 2011 at 8:45 pm

24 Baking 'n' Books June 29, 2011 at 8:53 pm

Congrats on a successful day!

Just curious – do you photograph every meal you eat? Like daily for how long now?…don’t you ever just want to eat and not document everything at times – y’know just you and Matt?

I don’t know – truly just asking out of curiosity! I guess some people thrive on it! It would make me anxious I think! 😉

25 Stacy June 30, 2011 at 8:06 am

She does photograph pretty much every meal. I don’t know how Kath feels about that, but the frequency and consistency of her posts is the reason katheats is my favorite blog!

26 E June 30, 2011 at 9:11 am

Same here as to why Kerf is my favorite :)

27 staceyhealthylife June 29, 2011 at 8:54 pm

A massage, wow you deserve it. Enjoy it I’m super jealous.

28 Averie @ Love Veggies and Yoga June 29, 2011 at 8:56 pm

The combo of mango, avocado and cheese was outstanding!! = That bite by that caption looks like it was. Oh, soooo tasty looking!

Enjoy your massage. I have not had a professional massage in ages and could totally use one!!

29 Laura (On the Threshold of Greatness) June 29, 2011 at 8:58 pm

Beautiful simple summer meal!

I’m sure the massage will be awesome after all the biking, walking, lifting at the bakery! Enjoy!

30 Heather June 29, 2011 at 8:59 pm

Enjoy your massage – I haven’t had one in so long – my back could use it!

I haven’t tried an egg on a salad yet – one of these days – I have tons of greens from my CSA!

31 polly June 29, 2011 at 9:08 pm

hi Kath!!!
Loved the combo of egg, fruit, cheese, and avocado. Have you every tried egg + blueberries + goat cheese + avocado?

Totally yummy. 😛

Enjoy your massage, sweetie!
I thought of you when eating my chili last night. You would have loved all the stuff in it. If you see the photo, it looks like a KERF soup. 😀

Love ya! XO

32 Margo @ Peanut Butter Trees June 29, 2011 at 9:09 pm

Mango and avocado sound like such a great combo! It was really beautiful here in DC too, so refreshing after how hot it felt earlier today.

33 Liz @ Something To Chew On June 29, 2011 at 9:10 pm

Super jealous of the massage appointment! Enjoy it – you deserve it!

That salad looks phenomenal. I’m a huge fan of eggs + salad. Also a fan of anything involving avocado. So I think I’d enjoy that sucker!

34 [email protected] June 29, 2011 at 9:10 pm

I really need to use avocado more often. I love it in sushi, but never use it anywhere else! It looks so yummy in your salad!

35 J3nn (Jenn's Menu and Lifestyle Blog) June 29, 2011 at 9:13 pm

Love the tropical salad. The cheese looks tasty!

Enjoy your massage :)

I saw your smiling face on an add while on mapquest today!!! It was so cool to think to myself “hey I ‘know’ her!”

Egg on salad is one of my favorites!! This looks delish :) And with that mango and avocado!! What more could you ask for??

45 kaila @ healthy helper! June 29, 2011 at 10:17 pm

Avocado and mango is AMAZING together! One of my favorite summer salad combos for sure!!!

I bet that massage will be heavenly~I’ve never gotten one myself, but I hear it’s the most relaxing thing ever :)

48 Alison @ Hospitality Haven June 29, 2011 at 10:30 pm

Massages are fabulous! Around here we have a massage therapy school which means that I can get an hour-long massage by someone who is *almost* fully trained (within a couple months) for only $25! It’s AMAZING. Perhaps you have one near you??

49 Angel7 June 29, 2011 at 10:30 pm

Massages are my FAVORITE thing to do to pamper myself!!! I am long overdue for one!

Enjoy your massage!

50 Noya - gluttonandstudent June 29, 2011 at 10:35 pm

This looks so yummy! My meals are so lame compared to yours – and its not because I don’t have the ingredients, I’m just lazy, haha. I love the idea of adding an egg.

51 sally kate @themoxiegirl June 29, 2011 at 11:14 pm

so i know everyones commented on your egg- but i just have to say, i love when i see people putting eggs on unexpected places in unexpected cooking methods (not just a hard boiled egg on salad) man i bet that yoke was spectacular on it!

52 Khushboo June 30, 2011 at 12:28 am

I so agree- a few versatile ingredients make all the difference! On evenings I can’t be bothered to cook/think, eggs are my go-to and they never fail to hit the spot…more gooey the yolks, the better!

53 Rebecca June 30, 2011 at 1:13 am

I actually thought the egg was chicken breast at first glance! Your salads always look amazing! I bet if people knew salads like these exist (and actually taste fantastic), so many of them wouldn’t be so repulsed by the words “salad,” “greens,” and “veggies”. I have friends who think salad is bagged dried up lettuce drenched in globs of ranch… *shudder*. The only veggies they “like” to eat is the one that comes with the pizza… and even then, they pick most of them off!

54 Teniesha @ Vegan on the Go-Go June 30, 2011 at 1:37 am

I love throwing together quick, easy, and unique salad combinations, especially when time is limited, the desire to cook is lacking, and the heat conquers any desire to actually “cook.”

Have a wonderful massage today! You deserve it!

55 Aine @ Something to Chew Over June 30, 2011 at 3:23 am

I LOVE egg and avacado in salads. Have a serious guacamole craving that needs to be satisfied soon!

So glad you had a good day at the bakery :)

56 Kie June 30, 2011 at 4:42 am

Those sweets look to die for! Check out Hong Kong desserts at

57 Angela June 30, 2011 at 5:01 am

Mango in salads is amazing!
I have a Vietnamese Salmon & mango salad that I adore, but I think I will give this one a try next time I get mango in.
I hope everything with the bakery is going well!

58 Kim @ Spoonful of Sass June 30, 2011 at 5:05 am

Never would have thought to combine mango, avocado, and cheese!

59 Anna @ Newlywed, Newly Veg June 30, 2011 at 6:08 am

Mmmm…why is it that a sunny-side egg always seems to make a salad “fancy”? :-)

60 Hillary June 30, 2011 at 6:20 am

I would never think to combine mango and avocado, even though they’re two of my favorite foods! That looks awesome!

61 Karen June 30, 2011 at 6:20 am

Yum…mango and avocado combination! Must try!

62 Lauren June 30, 2011 at 6:23 am

Kath, I have been loving all the bakery happenings in your world lately. I have looked and looked for GH locations near me and the only one is about 45 minutes away. But after reading your posts and drooling over your bread photos I may just have to convince the husband to join me in a little yeasty road trip!

63 KathEats June 30, 2011 at 6:46 am

You won’t regret it! (Just make sure they’re open :) )

64 Katie June 30, 2011 at 6:33 am

SO happy for you and Matt on the bakery sales! I know it will continue to do amazing!!

Enjoy the massage!!!

65 [email protected] Flying ONION June 30, 2011 at 6:52 am

Oh. A massage! Enjoy it! 😀

The greens of a salad aren’t so spectacular by themselves, but with all those tasty flavor additions, I could eat mounds and mounds of them. Love that you added mango to the mix! 😀

66 Molly @ RDexposed June 30, 2011 at 7:04 am

Oh gosh…an egg on top of a salad is amaaaazing!! I need to do this soon!

67 Chelsea @ One Healthy Munchkin June 30, 2011 at 7:33 am

I love mango + avocado + feta together. I’ve never heard of parrano cheese – is it sort of like a gouda??

68 KathEats June 30, 2011 at 7:44 am

Yes – like gouda

69 Hope June 30, 2011 at 7:40 am

I love the egg ontop of a salad! That is so creative. I bet it tasted great with the mango and avocado. Must try this! :)

70 Sarah June 30, 2011 at 7:52 am

I love the mango avocado combo! What a great summer salad :)

71 Kristin @ eat healthy. be happy. live well. June 30, 2011 at 8:04 am

72 Stacy June 30, 2011 at 8:13 am

Kath– would you mind sharing a few photos of your garden? I’m so impressed by your straight-from-the-garden greens every day! I’d love to see where all these gorgeous greens are coming from :)

73 KathEats June 30, 2011 at 8:13 am

Sure, I will try to remember. It’s quite overgrown right now!

74 Andrea @ Onion in My Hair June 30, 2011 at 8:18 am

Just searched for the Joel Salatin posts from earlier this year. Very cool!

I have read lots about him in Michael Pollan’s and Jonathan Safran Foer.

He’s a little farming rockstar these days, isn’t he? :)

75 Hadley June 30, 2011 at 8:34 am

I love eggs with smoked paprika — this looks spectacular. Can’t wait to try it.

76 Danielle June 30, 2011 at 9:17 am

I love, love, love the combination of avocado and eggs. But who knew you can put them on salads!? Great idea. Going to do that right now! Njoy the massage:)

77 Foodie June 30, 2011 at 10:29 am

I love salad dinners! especially in summer.

78 AshinMT June 30, 2011 at 10:49 am

Two things that are VIP:
1. Make mango, avacado, corn, blackbean, jalepeno, and lime juice salad asap. Though i bet the addition of cheese would also make the salad over the top.

2. We have been REALLY into smoked paprika every since we started living off of chimichurri marinated meats- and on eggs like you, we find it amazing. Really glad to see that we are not the only ones (lots of folks we know have found it strange that we paprika everything…)

79 Sara June 30, 2011 at 11:08 am

Avocado, mango, and cottage cheese is one of my favorite combos!
