Sunny Side Up

It was an absolutely gorgeous afternoon here in Virginia. My bike ride home had me soaring through pockets of cool air under trees twinkling with setting sun

. I almost forgot how much my legs were burning going up the piedmont hills!

We ended sales with a bang today, selling out of most of our sweets + breads. We also had a great day for sandwiches!

Matt took the afternoon off and went out for a BBQ lunch with a friend, so he was still kind of full at dinnertime. I ate too much granola bar! So we declared tonight a simple salad dinner instead of the millet + bean fiesta I had been planning.

There is one key to keeping sanity + health on busy weeknights: have versatile ingredients in your fridge! You can do anything with staples of veggies, grains, and proteins. Of course a little bread helps too!

Tonight we made tropical salads

We started with garden greens mixed with green peppers, carrots, and cucs.

Then dressed those in just a drizzle of olive oil and lavender salt.

Then for fun we added mango + avocado for a tropical splash.

And cubes of Parrano cheese (SO GOOD!)

And finally, a pan-seared smoked paprika egg on top

Just munched on a piece of cashew brittle for dessert.

I’m so tired tonight! Not sleepy, just tired. I’m glad I took today as a rest day (minus the active commuting) for the muscles. Tomorrow morning I am getting a MASSAGE! Matt and I won one at the Joel Salatin event we went to back in May and I’m finally cashing it in. Can’t. Wait.

    I always put hard boiled eggs on salad ( just spelled salada!) maybe I should switch it up every now and then?

    Mmmm that salad looks awesome, that’s actually a great tip about having things on hand because I often don’t and find myself in a pinch when I don’t feel like “cooking” dinner!

    Just curious – do you photograph every meal you eat? Like daily for how long now?…don’t you ever just want to eat and not document everything at times – y’know just you and Matt?

    I don’t know – truly just asking out of curiosity! I guess some people thrive on it! It would make me anxious I think! 😉

    Massages are fabulous! Around here we have a massage therapy school which means that I can get an hour-long massage by someone who is *almost* fully trained (within a couple months) for only $25! It’s AMAZING. Perhaps you have one near you??

    I so agree- a few versatile ingredients make all the difference! On evenings I can’t be bothered to cook/think, eggs are my go-to and they never fail to hit the spot…more gooey the yolks, the better!

    I actually thought the egg was chicken breast at first glance! Your salads always look amazing! I bet if people knew salads like these exist (and actually taste fantastic), so many of them wouldn’t be so repulsed by the words “salad,” “greens,” and “veggies”. I have friends who think salad is bagged dried up lettuce drenched in globs of ranch… *shudder*. The only veggies they “like” to eat is the one that comes with the pizza… and even then, they pick most of them off!

    I love throwing together quick, easy, and unique salad combinations, especially when time is limited, the desire to cook is lacking, and the heat conquers any desire to actually “cook.”

    Mango in salads is amazing!
    I have a Vietnamese Salmon & mango salad that I adore, but I think I will give this one a try next time I get mango in.

    Kath, I have been loving all the bakery happenings in your world lately. I have looked and looked for GH locations near me and the only one is about 45 minutes away. But after reading your posts and drooling over your bread photos I may just have to convince the husband to join me in a little yeasty road trip!

    I have read lots about him in Michael Pollan’s and Jonathan Safran Foer.

    Two things that are VIP:
    1. Make mango, avacado, corn, blackbean, jalepeno, and lime juice salad asap. Though i bet the addition of cheese would also make the salad over the top.

    2. We have been REALLY into smoked paprika every since we started living off of chimichurri marinated meats- and on eggs like you, we find it amazing. Really glad to see that we are not the only ones (lots of folks we know have found it strange that we paprika everything…)
