My favorite lunch is from a fabulous restaurant in New Haven, Connecticut- Miya’s Sushi. They have an extensive and creative menu, with plenty of vegan and vegetarian options. I am sure there is something for even the pickiest of eaters! The perfect springtime lunch for me consists of some of Miya’s famous pumpkin miso soup and a roll or two of some of their delicious vegetarian sushi. One of my favorites, Kiss The Smiling Piggie Roll, a combination of sweet potato, pine nuts, and mango chutney, wrapped up in a mixture of brown rice, quinoa, and other grains. It pairs together perfectly, and is brought to a whole new level when dipped in some of their house made soy sauce.

AH, I love Miya’s sushi. I recommend the salmon roll with goat cheese and dried cranberries, as well as the Wandering Poet and anything with banana leaves–incredible!
