Meds + A Lunch Date

November 4, 2009

The patient is doing better! The sock-full-of-ice trick worked well this morning and he can now see better. I went to the gym for a speedy 26 minute stair climb and went by Rite Aid on my way home (all on bike!) to pick up this prescription. I got some Prednisone in him at noon and he seems to look better. Hard to tell if it’s just the ice from this morning though.

The day moved on when Kelsey arrived for a working lunch!

On the menu: Pumpkin Risotto Quesadillas with Arugula Salad

IMG_7565 (640x427)

The quesadillas were just leftover risotto (maybe 1/3 a cup?) mashed into a tortilla and cooked in a skillet. We all agreed it made an excellent stuffer!! Very cheesy and creamy.

IMG_7568 (640x427)

The salad was a mix of greens – mostly arugula – with walnuts, goat cheese, white bean hummus and a drizzle of olive oil

A POM + water cocktail

I made the patient lunch too – he munched it up on the couch and then cleaned the kitchen before I realized what he was doing! xoxo

Such a great idea! I never know what else to do with all my leftover pumpkin.

I hope the meds and ice help Matt feel better soon! I have really bad reactions to mosquito bites and bee stings and I’ve had to go to the ER a few times…ugh. Swelling is a bummer.

But thank goodness I don’t have a peanut allergy – that would be the worst! I LOVE my pb…

Glad to hear the patient is doing better!

You’re right about the vitamins/supplement – I was thinking I was overloading on them.

In your opinion, do you think chia seeds or flax seeds are better?
I only buy one bag at a time and 1-2 tablespoons a day on my food. So I was curious to see which you prefer. Thanks!

I can’t believe you left Matt in that state and went to the gym before Rite-Aid! Thank goodness he didn’t need to see while you completed your 26 minutes of cardio!

I agree with Anne. If that was my boyfriend I’d go to the pharmacy and wait for the Rx no matter what I had planned that day. How sad.

Hope Matt is feeling better asap! Just a warning, I had to take prednisone after an oral surgery this summer and work up with a KILLER headache on day two. The only thing that worked were two naproxin (only in the first dose, of course) and staying in bed until it went away. Hopefully he won’t experience the same thing!

I hope the meds help! I looked like that on one half of my face a few weeks ago, but I at least felt fine otherwise. I hope Matt feels better soon.

Your food always looks so delicious. I generally can’t have grains, so I live vicariously through you. :)

Hey Kath!
Great looking lunch!
I was wondering I soak/cook dry beans?

Reply

45 Kath November 5, 2009 at 10:13 am

Suzanne,
Why not alternate? One one month, another the next? Or biweekly? That’s what I do.

Anne + Jordan ,
Oh please. His prescription hadn’t even been called in by the doctor yet. I was going to go at 8:30 but when I called it wasn’t ready. I called back at 11 and told her to call me when it had been called in, which was eventually noon. Don’t assume you know everything.

Thanks, Kath!
That’s what I have been doing with the chia powder and the ground flaxseed – alternating.
I just got through the flaxseed, and am now on my first ever bag of chia powder.
But, I was just wondering if one was better than the other.
I can get flaxseed at my local healthfood store, but I have to order the chia powder online.
So the flax is just more accessible for me.
