Lunch In The Shade

July 9, 2012

It’s definitely cooler out there – cool enough to enjoy lunch outside! But it’s still beastly humid as I’m sure it will be until September. Humidity is ok though – heat is not!

After Pump this morning, I went out to lunch with 2 girlfriends, Jessica who just moved to Cville, and Robyn. We dined at Eppie’s – one of my favorites for the veg plate!

I “chose four” for the plate –

Black beans

Sweet potato (they cook them so perfectly!)

And the counts-as-two Santa Monica salad!

The cornbread, which tastes like corn cake, is complimentary and the best part!

Delicious enjoyed in the shade!

I am catching up on some things and then headed out for a doctor’s appointment – my last monthly before I go to every 2 weeks!

Sweet potato + black beans in one meal is one of my all-time faves. Thankfully DC is much cooler too!

Gotta love those complimentary carbs:) I just made some cornbread that I stuffed with roasted sweet potatoes and dried fruit (I think I see dates on your salad)…it was kinda like your lunch all rolled into one!

Funny, I have to start going every two weeks at 28 weeks (can’t remember when with my first pregnancy)!

It’s hard to believe that you’re coming up on the time where appts are spaced every two weeks. Counting down…

9 Cait's Plate July 9, 2012 at 2:15 pm

So you had cornbread and beans. Good girl! You know what I thought? To me it looked corn cake and blueberry sauce! :D

When I stopped in Cville, I went to Eppie’s ! Only place I’ve been in Cville, but I must say that it was wonderful :)

14 Katie @ Peace Love & Oats July 9, 2012 at 3:05 pm

those black beans look like they’d go so well with the sweet potato and corn bread!

15 Kaila @healthyhelperblog! July 9, 2012 at 3:10 pm

One of the things I love about your posts is that it looks like you actually eat. LOL I don’t mean overeat, but you truly don’t look like you’re starving yourself. Everything looks balanced and real and sustainable.

21 KathEats July 9, 2012 at 4:09 pm

:) Thanks

22 Andrea @ The Skinny Chronicles July 9, 2012 at 4:05 pm

Ah man, I could really go for some of that corn bread right about now…My tummy grumbles…

23 Averie @ Averie Cooks July 9, 2012 at 4:06 pm

Milestone appt for you…and then, you start living at the dr’s office :)

24 Betsy July 9, 2012 at 5:51 pm

we are total opposites, heat is OK, humidity is absolutely NOT ;) Lunch looks delicious. I always love southern veg plates, maybe because in the south mac n’ cheese usually falls into this category (vegetable, really?)

25 Angel7 July 9, 2012 at 6:11 pm

I do not prefer humidity! I cannot stand to sweat like crazy in the humidity.

That cornbread looks great!

26 Angela @ Health, Happiness and Harmony July 9, 2012 at 6:16 pm

I absolutely love cornbread! Looks delicious! What was in the salad??

27 KathEats July 9, 2012 at 6:43 pm

Corn, dates, goat cheese..

28 Sami July 9, 2012 at 6:31 pm

The food looks great! But you cant be serious when you say that salad is for two. Really?!? That’s an appetizer salad if I’ve ever seen one, LOL. The sweet potato and corn bread look awesome though.

29 KathEats July 9, 2012 at 6:42 pm

No, it counts as two sides!!

30 kay July 9, 2012 at 7:02 pm

Oh, how exciting to be getting so close to due date! Praying that the good Lord blesses you with a healthy baby boy…and, know you and hubby are praying for an easy delivery. Take care and God bless! Glad you are not consuming alcohol while he is growing…and, at least now you know you don’t have to indulge. Especially is breast feeding :-)

31 Fran@ Broken Cookies Don't Count July 10, 2012 at 5:33 am

Great lunch…I need that cornbread! ;-)

32 Hope @ With A Side Of Hope July 10, 2012 at 6:13 am

Corncake/cornbread is a favorite of mine. It looks really good! :) That sweet potato looks good. I love when it’s cooked perfectly. Some restaurants don’t cook it enough.

33 Millie Snyder July 10, 2012 at 11:21 am

This lunch looks yummy! I love how you get to choose 4 small portions. It reminds me of “the trio” at corner bakery, have you ever tried that? They have very tasty options.

Hey there, that lunch looks pretty tasty :)
