Lunch In The Shade

It’s definitely cooler out there – cool enough to enjoy lunch outside! But it’s still beastly humid as I’m sure it will be until September. Humidity is ok though – heat is not!

After Pump this morning, I went out to lunch with 2 girlfriends, Jessica who just moved to Cville, and Robyn. We dined at Eppie’s – one of my favorites for the veg plate!

I “chose four” for the plate –

Black beans

Sweet potato (they cook them so perfectly!)

And the counts-as-two Santa Monica salad!

The cornbread, which tastes like corn cake, is complimentary and the best part!

Delicious enjoyed in the shade!

I am catching up on some things and then headed out for a doctor’s appointment – my last monthly before I go to every 2 weeks!

    Gotta love those complimentary carbs:) I just made some cornbread that I stuffed with roasted sweet potatoes and dried fruit (I think I see dates on your salad)…it was kinda like your lunch all rolled into one!

    When I stopped in Cville, I went to Eppie’s ! Only place I’ve been in Cville, but I must say that it was wonderful 🙂

    One of the things I love about your posts is that it looks like you actually eat. LOL I don’t mean overeat, but you truly don’t look like you’re starving yourself. Everything looks balanced and real and sustainable.

    we are total opposites, heat is OK, humidity is absolutely NOT 😉 Lunch looks delicious. I always love southern veg plates, maybe because in the south mac n’ cheese usually falls into this category (vegetable, really?)

    I do not prefer humidity! I cannot stand to sweat like crazy in the humidity.

    The food looks great! But you cant be serious when you say that salad is for two. Really?!? That’s an appetizer salad if I’ve ever seen one, LOL. The sweet potato and corn bread look awesome though.

    Oh, how exciting to be getting so close to due date! Praying that the good Lord blesses you with a healthy baby boy…and, know you and hubby are praying for an easy delivery. Take care and God bless! Glad you are not consuming alcohol while he is growing…and, at least now you know you don’t have to indulge. Especially is breast feeding 🙂

    Corncake/cornbread is a favorite of mine. It looks really good! 🙂 That sweet potato looks good. I love when it’s cooked perfectly. Some restaurants don’t cook it enough.

    This lunch looks yummy! I love how you get to choose 4 small portions. It reminds me of “the trio” at corner bakery, have you ever tried that? They have very tasty options.
