This week’s eats. Salad heavy and breakfast light – my hands were full!

Overnight oats blended into a Dough Boy Smoothie drizzled with Wild Squirrel and buckwheat!

Smoked salmon over a salad with avocado, carrots, and bleu cheese. This was a different kind of smoked salmon – a filet instead of the thin lox kinds. I loved it!!

Served with buttered toast and an apple with Wild Squirrel.

I lovely salad topped with a No Bull Burger, Red Hot & Blue Chip crumbles, avocado, bleu cheese, celery, peppers, and Maple Sesame Almonds.

A frozen salmon patty (Whole Foods brand) over a salad with veg and blue cheese. Orange. Whole Wheat Cinnamon Swirl bread.

Lunch at Great Harvest!! Our best sandwich toppers as a salad – plus Pesto Parmesan Swirl!

The second No Bull Burger in my pack on an arugula salad with goat cheese, carrots and torn pieces of Cville Crunch bread

With a pear! <3 pears and need to eat them more!

Cake pops at a moms group meetup!!

Amazing cappuccino foam on a walk

Tofu for dinner!

Roasted in a 400* oven for about 40 minutes on a cooling rack and served with sautéed portabella mushrooms and kale. All drizzled in a 50/50 blend of Dr. Pete’s Praline Mustard Glaze and soy sauce.

Take out sushi! Matt worked late and I failed on my planned crockpot meal. Next week!

California roll. Philly Roll. Spider Roll (love!). Tempura Sweet Potato (it was good!)

Have a great weekend!

Filet of smoked salmon, oh my! :) Where does one find that? All your meals look healthy, nutritious and delish! :)

2 KathEats February 23, 2013 at 9:08 am

Whole Foods : )

3 Katie @ Talk Less, Say More February 23, 2013 at 8:52 am

That tofu looks amazing!! I made some baked tofu last night which was delicious and the first time I have ever SUCCESSFULLY made baked tofu. :)

4 Ashley @ My Food 'N' Fitness Diaries February 23, 2013 at 9:01 am

I always love your salad creations! You inspire me to get more creative with my salads. I’m sure I’d get a lot less bored with them that way!

5 Lisa @bitesforbabies February 23, 2013 at 9:06 am

That’s my favourite way to eat tofu, nice crispy chunks! By the way, what is wild squirrel???

6 KathEats February 23, 2013 at 9:08 am
7 Lisa @bitesforbabies February 23, 2013 at 9:21 am

Oh, lol! Now, it makes sense 😉

8 Angela @ Eat Spin Run Repeat February 23, 2013 at 9:24 am

Ooh the dough boy smoothie! I’ve been craving one these days but it has been so, so cold and gross here that most of my recent breakfasts have been in veggie scramble form, and nice and hot! Your Whole Foods patties look delicious. I’ve been making my own but I’m going to look for some when I’m there tomorrow!

9 Krissy @ Make it Naked February 23, 2013 at 9:59 am

Just wanted to pop in and say I love this new direction of your blog. I hope you’re finding it’s a better fit for your new life as a momma! He’s adorable! Have a great weekend!

10 Lindsey @ Pas de Deux February 23, 2013 at 10:17 am

From where did you get your takeout sushi?

Lovely eats this week :-)

11 KathEats February 23, 2013 at 10:27 am

Now + Zen. It was pretty average, but not too expensive

12 Carly @ Snack Therapy February 23, 2013 at 10:28 am

The last pear I bought had that weird gritty texture that pears sometimes get. Ick! That salad with the sandwich toppings looks amazing. That pesto-parm bread looks fantastic as well. Yum!

13 Tiffany February 23, 2013 at 10:30 am

Everything looks great, I love this new way of blogging.

So your overnight oats were just blended after you stirred everything together the night before or in the morning before you ate? was it still as doughy and delicious?

14 KathEats February 23, 2013 at 10:31 am

Thanks and yep!

15 Tiffany February 23, 2013 at 10:47 am

Ok great Thanks! Sorry so you blended at night or in the morning?

16 KathEats February 23, 2013 at 11:41 am

In the morn!

17 Katie @ Peace Love and Oats February 23, 2013 at 10:44 am

All that salmon looks amazing! I haven’t had any in ages and now I’m craving it!

18 Ella February 23, 2013 at 11:18 am

Yes to the filet of smoked salmon! This is what I grew up with in the northwest. Thick slabs of smoked salmon is what we eat. I had never had lox until I went to college in CT. Everyone was raving about the bagels with smoked salmon served on Sundays in our dining hall and I thought “that is a bizarre combination” until I realized it was thin, barely smoked salmon LOX. I didn’t eat it for years because I thought it was weird but I eventually came to love it. Both are delicious in their own ways though I will always love a hearty chunk of smoked salmon.

19 ashley February 23, 2013 at 12:19 pm

M is my fave blog baby! Sooooo cute. Shhhh.

20 sara @ fitcupcaker February 23, 2013 at 12:24 pm

sweet potato sushi sounds amazing. I bet it was :) And I love cake pops!

21 Alicia @ Wanna Be Ina February 23, 2013 at 12:44 pm

Your smoked salmon salad looks just like one I had earlier in the week, except my salad also had red peppers, sunflower seeds and the bleu cheese was smoked. Later in the week had the same salad with apricot white stilton instead. If you haven’t had that cheese, you should seek it out. So good!.

On a side note, I get HUGE hunks of honey smoked salmon at Costco, it looks very similar to what is on your salad, and my 5 year old happily takes it in his lunch to eat wrapped in spinach leaves. D-E-L-I-S-H.

I just wanted to say that I absolutely love your photos! Always so vibrant, crisp and inviting. You’ve had some amazing meals this week…they all look amazing!

24 Elise @ Expeditions of Elise February 23, 2013 at 1:16 pm

I don’t like the smoked salmon filets as much as lox! I’m always disappointed when I order something with smoked salmon and they give me filet instead of lox.

25 Miss Polkadot February 23, 2013 at 2:37 pm

Pesto Parmesan Swirl? Please open a Great Harvest bakery around here :).
And aww, Mazen’s such a cutie.

26 Shel@PeachyPalate February 23, 2013 at 2:38 pm

LOVE portobello mushrooms! Totally need to try the combo! I used to think nothing could beat a crisp juicy organic apple…a ripe drippy still retaining a little bit of bite pear is so much more amazing!

27 Averie @ Averie Cooks February 23, 2013 at 2:39 pm

The spider rolls (the saucy ones!) look so good! And the Pesto Parmesan Swirl – I don’t think I’ve ever seen a savory, swirled bread. Usually it’s cinnamon or sweets, fruit spread, etc. Fun idea!

28 Meagan February 23, 2013 at 2:53 pm

Kath – where did you get the little stuffed vegetable basket for Mazen? I love it :) and he’s getting so adorable :) My little nephews would love it, I’m interested in purchasing it for them!

29 KathEats February 23, 2013 at 8:23 pm

I bought them at IKEA, but you can also find them on Amazon here.

30 Kristen @ Change of Pace February 23, 2013 at 2:58 pm

Oh the food! I just love the variety of things you eat :)

31 Louise February 23, 2013 at 4:02 pm

Your food is so vibrant this week! It makes it so much easier for me to eat healthfully when the food is visually appealing.

The cake pops from your moms’ group look delicious.

32 Amy Bortnick February 23, 2013 at 4:36 pm

Baked tofu looks awesome! Do you do anything to it before you bake it at 400? Like add olive oil…or just pop it in the oven?

33 KathEats February 23, 2013 at 7:46 pm

We do coat in olive oil but otherwise kept it simple ready for sauce

34 Kaila @healthyhelperblog! February 23, 2013 at 6:56 pm

I’ve seen those whole smoked salmon fillets before! So tempted to buy one but they are so darn expensive at my grocery store! Glad to hear it was a good buy though…may have to splurge on that now!

35 Vegan Woman February 23, 2013 at 7:22 pm

The smoked salmon dish looks amazing and I love the design on the Cake Pops! Thank you for sharing all of these lovely dishes!!

36 Christina February 23, 2013 at 8:24 pm

Your salads look so delicious and healthy. Do you eat them dry or do you add dressing of some kind?

37 KathEats February 23, 2013 at 8:56 pm

I usually just drizzle them in olive oil and some sea salt. I don’t really care for bottled salad dressings and don’t always have time to make my own, so I’ve gotten used to olive oil alone

38 Nelly February 24, 2013 at 5:59 am

Oh my your food pictures are amazing. Everything looks so fresh and delicious!

39 Chelsea @ One Healthy Munchkin February 24, 2013 at 7:41 am

I don’t crave salads as much in the winters, but reading your posts always inspires me to eat them more often!

40 Sarah (The Simple Dietitian) February 24, 2013 at 7:44 am

I have been on a salad kick lately myself! I love the idea of adding blue cheese. 😀

41 Liz @ iheartvegetables February 24, 2013 at 9:37 am

I love those No Bull burgers! They’re so good!

42 Jess. February 24, 2013 at 9:41 am

I’d be in trouble with that pesto parm swirl bread around! Your salad’s look delicious too! Unfortunately salads are making me gaggy lately (it happens for awhile every couple of months :/). Looking forward to spring when I enjoy them again.

43 Cait February 24, 2013 at 11:35 am

do you buy the smoked salmon at the fish case?

44 KathEats February 24, 2013 at 12:32 pm

It’s nearby….across the aisle at our store

45 Karen February 24, 2013 at 2:05 pm

It always pleases me when you show some love to the bosc pear – homely, but oh-so-delicious (in a earthy way, that is.)

Oh, and check out the opening sequence to Friday night’s episode of Portlandia…you’ll get a kick out of it!

Happy Sunday, Kath! :)

46 Jillian February 24, 2013 at 8:53 pm

The smoked salmon fillet on salad and the apples with buttered toast looked delish and super easy to make. I’ve got some fabulous ideas for this weeks meal plan, thank you!

47 Alyssa February 24, 2013 at 8:57 pm

Hey Kath! Not sure if you or Matt are interested, but I’m having a magazine giveaway on my blog:

Hope you’ll stop by!

48 Christina @ The Beautiful Balance February 25, 2013 at 12:47 am

All of your swirl bread looks to die for!

49 Babs February 25, 2013 at 5:25 am

I love all the different breads – yum!

50 Ashley February 25, 2013 at 6:29 am

One of our stores sells a couple different flavors of Wild Squirrel and I always eye it when I walk by lol. What flavor do you usually get?

51 KathEats February 25, 2013 at 9:32 am

Chocolate coconut or vanilla espresso!

52 Sarah @ The Smart Kitchen March 1, 2013 at 8:25 am

LOVE that praline glaze! [If it is the one I tasted at Feast…] Also, I need to get my hands on some more of those No Bull Burgers. I don’t think I’ve found a veggie burger that tops those in my opinion.

I, too, have been having pear revelations. Why do I always forget how delicious they are?

53 Maritza May 9, 2013 at 1:03 am

Hey Kath!

Your web site is great and I just was thinking, maybe you have tried them? Sunshine Burgers. I was recommended them by a dietician and they are so good! Just wanted to inform in case They are one of my favorites.
