Clementines In Brussels

Hey there mountain mamas!

[Currently listening to this version of Country Roads!! Found this guy on You Tube when searching for Daydream, which he also plays amazingly well!]

Grocery shopping was a blast. I really love it and wish I had a million dollars and a million-dollar appetite so I could try every product in the stores! We went to Trader Joe’s, then EarthFare and came home with our turkey and a stuffed fridge of delicious ingredients!

We arrived home at 12 and quickly put everything away, laced up our sneakers and biked to the gym for a couple’s workout. I did 26 minutes on the Stairmaster (Matt joined me for 20 of those) and a few sets of pushups, which have gotten surprisingly easier – perhaps thanks to chatarangas and my more frequent hot yoga visits?

We got home at 2PM and picked up my car, which I had sent in to get inspected but came out with a $500 bill and radiator leak  She’s all fixed now though.

I prepared a batch of maple roasted brussels sprouts to take to Kelsey + Eric’s Thanksgiving Party this afternoon. Beauties!

I roasted ‘em in the oven at 400* for 26 minutes after tossing in about 2 tbsp maple, cooking spray and a hefty dose of salt and pepper. Hope they are still good in 2 hours!

Did some more cleaning – our house is truly sparkling these days!! – and then finally had a little bit to eat at 3PM! I don’t know if it was the 9-grain mix or the portion size, but that breakfast held me over allllllll day with zero phases of hunger.

For lunch I had a salad with romaine + spinach + almonds + raisins + balsamic

IMG_9318

Plus some POM water. This is the nectarine flavored kind. I’m not as fond of this one as I was with the kiwi, and the original is still my favorite.

Two slices of leftover pizza

And two clementines!

So excited to have a bowl of these! LOVE them and found them pretty cheap at TJs

Beautiful post as always. I have a question. I have never eaten much sodium, and I can honestly say (because I am very aware of what I eat) that most meals have no added sodium or very low sodium. I bought some soy burgers I would like to try that have 350 mg sodium in one patty. If I eat this at lunch tommorow , will it cause me to bloat unreasonably since I am not used to it? Or is that not a large amount to worry about? Thanks Kath. I trust your opinion.

I just bought gigantic brussels from the farmer’s market today. Thanks for the awesome recipe idea!!

I also love Country Road – it reminds me of a friend’s wedding (who live in West VIrginia) and it was a major crowd pleaser. Complete with serious boot stomping!

I saw some Clemmies at WF’s yesterday, but they were “on sale” for $7 a box! I can remember paying $4 for the same brand at Meijer’s back in MI :(

I’d never seen brussels sprouts on a stalk like that. I always wondered how they grew. :)

Have fun!

I wish there was a TJ’s here! I can’t find a grocery store in my area that offers really good produce, much less affordable, beautiful produce like you always reveal to us here! Thanks for letting me know just how good fresh food can be!

I’d never had brussel sprouts until my husband and I went to Charleston on our honeymoon and ate them in a restaurant and LOVED them. Two years later I finally cooked them at home and discovered that I really do like them, but it’s all in the preparation.

Have fun at the party!

Just love your abundance of Clementines. I found some organic ones on sale a few days ago and stocked up! They are so good for breakfast in the mornings OR with a simple salad lunch.

Beautiful centerpiece. Clementines are a favorite of mine as well, but I don’t think I could eat that many! I could eat that many apples though! Enjoy the partay. And no one can party like a sprout!

Carrie,
It’s really impossible for me to predict what your body will do, but 350mg isn’t’ that much sodium. I think something like 10-20% of the worlds population is sodium sensitive, so perhaps you aren’t even one of them. Give it a try and see how you feel and then you’ll know :)

Sam,
Hope you got some great bread!

I got the same brussels! I was so excited, I had never seen them on the stalk like that before! No one was quite as amused as I was, and decided to make fun of me by using it as a center piece haha. But no one was laughing when I roasted them with balsamic, cranberries, and a touch of maple syrup. Yum!
