Working Dinner!

Geez, I’m just working through my meals today! This weekend I will fully enjoy the pleasures of eating with no distraction!

In-between gastric secretion and the Krebs Cycle, I whipped up some Mac and Cheese with some veggies we had on hand – a small head of broccoli, 1/2 a red pepper, and frozen peas. In honor “National Blog About Flax Week,” I added a tbsp of flax! A little Asiago on top –

This bowl was about 425 kcal.

This is as close as I can get to the good old boxed shells and cheese I lived on during elementary school. We must have had it at least once a week, and I’m sure I could eat a whole box! Mmmmmmmm! The kind by Annie’s, although high in sodium (600 mg per serving) and saturated fat (25%), is all-natural (so no junk) and made with whole wheat pasta. And it’s super cheesy because it comes in a pouch instead of those weak powdered kinds.

I had some glucose for dessert (Edy’s Slow-Churned Peppermint) to fuel my brain 🙂 Amidst flash cards…

    I’ve only ever seen the white cheddar kind of annie’s mac and cheese, which i dont like very much because the cheese tastes a bit weird. Thats a lot of saturated fat, but sometimes its worth it! study hard! good luck!

    sadly-being a student-that’s about how i eat everyday! very stressful and rushed! can’t wait till summer…not only is it warmer, sunnier, and funner (not a word-i know -_^), but also so much more relaxed!!! (relaxer just doesn’t quit work there! lol!) did the flax actually taste good on the macncheese? i’m a little skeptical as to what that would taste like…yuck! sry! don’t mean to put down your dinner (or the super power of flax!) guess it’s one of those dishes you have to try to judge^_^

    Oh my gosh we had practically the same dinner! Except I made my mac n cheese from a recipe from eatingwell.com- sooo yummy. Here’s the link if you’re interested: http://www.eatingwell.com/recipes/mac_cheese.html

    It’s a little high cal, but I altered it- left out the oil from the topping, used 2% cheese (and only 1 cup, plus 1/2 cup cottage cheese), skim milk, and a package of frozen brocolli along with a little spinach. I think it took my cold away too 🙂

    kath, whenever you have time to answer! –
    regarding the serving size of the mac and cheese, it says on the box one cup cooked is a serving. how many grams is that? just curious!

    breakfast: creamy banana oatmeal
    snack: orange, cup of melon, handful of baby carrots
    Lunch: 1c plain yogurt, 1c kashi go lean, mixed berries, dash of cinnamon
    snack: apple (gala), raisins
    dinner: 1/2 pita pocket filled with 1egg, mushrooms, and salsa; kiwi and berry mixture
    Favorite healthy food:
    fage 0% yogurt, chick peas, cauliflower, grapefruit, peaches, and butternut squash (ya, way too many up there on the list!)
    Indulgence:
    diet coke…I NEED to brake this habbit!

    OMG, I love Annie’s! I eat it quite a lot. Besides veggies, I also mix it with ground turkey. So yummy!

    What type of dish and spoon is that you are eating the ice cream with- they are both so cute!

    Also, would brown sugar taste good on your butternut squash soup, or would it taste strange with the chicken broth etc. You never top you soup with it.

    The diagram in your science book looks like a butternut squash-haha!

    Your dinner brings back childhood memories! Although I suppose I still am sort of a kid – I’m 18 🙂 I used to eat mac & cheese with peas all the time! I’ll have to bring that back sometime soon!

    Can I just say that I love your blog more and more each day? Especially after today’s dialouge in the lunch post … what a great group of women here! Thanks for all you do!

    Hey, I’ve just started visiting your blog and find it a really useful source of ideas for eating better. I can’t think of any reason why people might want to criticise what you’re doing (unless it’s jealousy!) Who cares what they think anyway… they don’t have to read it! I personally love KERF 🙂

    Hey Kath! Love the blog! You seem like youv’e got it “so together”! Do you have any advice? This is a strange question.
    I have struggled with an eating disorder and compulsive exercise IN THE PAST, and now I don’t exercise at all. (besides walking on campus) haha.
    Do you have any advice how to get started again and have the motivation? I also eat about 2-3 times as much as most people who do exercise. ( I am not overweight but I feel so lazy and guilty about it.) Take your time to answer-and again sorry so weird!!!

    I’ll admit it, I eat the whole box of Annie’s every time. I think it’s because I smother it in Sriracha and who can stop eating Sriracha once you start? Who would want to?

    UGH the Kreb cycle, i just finished a test on this particular subject as well and im so glad to be done thinking about that untill finals! As a fellow college student getting her RD i must say KUDOS to you for having the time to blog and study, i barely have time to comment! 🙂 keep up the good work!

    I ate about 40% of the mac and cheese.

    Flax was GOOD in it! Kind of nutty.

    Mel,
    Fun!! I’ve never liked the baked kind as much – it gets too dried out! I like the gooey stove top mixes, but I suppose I should make a homemade stove top kind.

    My box says a serving is 85 grams. But if you add veggies it will obviously change some.

    I think both bowl and spoon are from Crate and Barrel – love that store! We just got one CLT last year. And brown sugar tastes good on ANYTHING!

    I cooked all of it, portioned out my dinner, saved a serving in tupperware, and froze the last bit.

    Natalie,
    Just start slow with exercise. Make an effort to walk more. Go to the gym a few times a week (or just get outside and MOVE!). Take a magazine to the gym or watch a fun TV show to keep your mind happy. Schedule it in, as they always say. “They” also used to say 21 days make a habit, but I think the latest is 3 months to create a habit. Lastly, find something you ENJOY doing. If you despise running, try spinning classes or find a pool where you can swim. If you don’t like it, you won’t stick with it.
