When You’re Out Of Yogurt

Ice cream will do!

Just a tiny scoop of vanilla bean under a juicy nectarine after my chiropractic appointment! Must replenish yogurt soon – I can’t live without it! But this ice cream sure was a good substitute!

A few hours of writing later….we made shrimp scampi!

We polished off the shrimp from the low country boil and served it over Mona Lisa Pasta – fresh fettuccini that Karen picked up today.

The sauce was a mix of butter, olive oil (about 1.5 tbsp of each for 4 servings), with about 4 cloves of garlic, salt, pepper, the juice of a lemon and 1/4 cup white wine (which was cooked down so it was alcohol free).

    That icecream looks great!!

    The rubber snake reminds me of one that was in my bathroom in my apartment one night. Except it turned out to be real, and had a impromptu meeting with my frying pan.

    mmmm. i had a big bowl of 2% plain fage yogurt with cherries and blueberries this morning. it was my favorite part of my work-day, i think. :p

    karen is adorable, but i think i would’ve passed out at least once by now from all her pranks! but i know i’m a wimp already. hahaha.

    Good thing you’re aware of her trickery. I wouldn’t do that to a pregnant lady, but then again if I did that to one of my friends they’d probably fake contractions as payback.

    ice cream with a fresh sliced peach is one of my favorite desserts! any ice cream with fresh fruit is good though.

        But I guess there are other things to consider too. I honestly don’t know the type of compost we used – but it was compost.

    You are so good at remaking your leftovers into a whole new meal! Whenever I have leftovers, I just reheat them and that’s it. Ha.

    And ice cream and fruit looks like the perfect snack 🙂

    That shrimp scampi looks incredible. And HA. I’m in Vermont right now and have actually been dealing with REAL snakes! Friendly, but snakes nonetheless 🙂

    I had previously over done it on and got to the point where I never wanted to eat a shrimp again. But – I think that enough time has passed and your meal made me crave a delicious shrimp filled meal!

    Not that I really care if you consumed a tiny amount of EtOH, but I have been told that all EtOH doesn’t get burned off during cooking..? I might need to consult my little cicerone beer expert.

    The pasta dish looks amazing. I always get so hungry after looking at your blog. I always substitute ice cream for milk in my coffee. I might run out more often than not in the summer…just saying.

    Red pepper flakes are the best. I am a huge fan of throwing those on top of Italian food…even though no one else in my family does it! Same goes for parmesan cheese…I can use that on anything (even used it on chili last night!)
