What I Ate Wednesday!

I am fired up and focused today! (I am making my way through Racheal’s book and loving it! Except for the email part. There is no way I could only check mine once or twice a day.) I tend to read 1-2 fiction books a month and one non-fiction and flip flop between them. I finished Sarah Jio’s Morning Glory and loved it, and I just started Lilac Girls by Martha Hall Kelly. Here are some “What I Ate” meals!

Breakfast

Muuna sent me a few samples of their cottage cheese, and it’s very good! Love the raspberry flavor. I had this with an apple and Naturally Nutty almond butter for a simple breakfast one morning.

Lunch

In the winter I really need to have warm lunches! I love these breaded fish filets from Whole Foods. They make a salad feel like a meal! This salad had greens, homemade dressing, carrot chips, tomatoes, leftover sweet potato fries, and two hot and crunchy fish filets.

Outing

I had to stop into Walmart the other day and had to share that I found these cute rose gold baskets for $1.50 each! (Really they are 2 for $3). I bought 4. Now I have to think of where to use them! The two-packs are only sold in stores, but you can get a 6-pack for $11 online! I swear Walmart is the place to go for inexpensive storage. I always see their Better Homes & Gardens line in my magazine, and am shocked at how cute and farmhouse-y everything is for such low prices. I found these great seagrass baskets for $13.97 on my visit as well, but I decided I didn’t have a spot for them. How cute is this blue and white cloth toy bin for $6?! It would be $30 at PB or Land of Nod.

I never go to Wal-mart without stocking up on more Giovanni Rana pasta! Ever since my blog post with them we’ve been hooked : )

Dinner

Simple salmon with garlic, salt, and pepper (salmon is on the menu once a week over here) with asparagus and grits made in the rice cooker. (Not as good as the Quaker Grits, which I am a convert to!)

    Last night I made Brittany’s (Eating Bird Food) spiced almond-meal coated chicken with freshly grated parmesan, and it was incredible! I also have made Alexis’ vegan banana bread that has been fabulous. All of your meals look so so good!

    I’ve been making lots of homemade flatbread. They’ve turned out awesome.. My go to veggies have been braised kale, onion, and mushroom seasoned with EVOO, garlic, balsamic and other spices/herbs. So between the flatbread and veggies all I have to do is cook up a protein and I’m good.

    Why is cottage cheese making such a come back? I always wonder what drives food trends. I just remember being a little girl in the 80s and adults would eat cottage cheese to lose weight and hate it. LOL

      Cottage cheese is my daughter’s absolute favorite food. She’s three. 🙂 She gets it for snack at daycare and her teachers crack up because she gets so excited for it. It’s funny because at our house the girls love it and the boys won’t touch it!

    Ohhh Lilac Girls. So good! It’s a tough one to get through, but so good. It’s a book you’ll keep thinking about long after you finish it!

    Made a pizza for dinner last night – yum!

    I am also reading Lilac Girls (well, I’m listening to it on audiobook). And also reading Lab Girl, which I’m loving. It’s non-fiction, autobiography. Reads like a novel.

    oohhhh that cottage cheese does sound good! hope i can find it at the grocery store soon – i always think cottage cheese with some fruit is such a great snack! this week we made herb roasted chicken breasts in the oven with broccoli and purple potatoes for a one-sheet meal – it was delicious!

    Last night we had chicken thighs that I covered in Sweet Baby Ray’s honey mustard dipping sauce and roasted for an hour. So incredibly good. Fall-off-the-bone, succulent and sweet. Paired with a loaded green salad and my boys had rice since they need the extra carbs but I don’t.

    Wal-Mart has such cute home items! Some of their area rugs are the best I have seen.

    I made Kylie of Immaeatthat 2 pb cookies receipe, and they were delicious! I really loved being able to quickly assemble & bake just 2 cookies because while I LOVE homemade cookies, I sometimes get overwhelmed making such a large batch because I don’t want them to go to waste buttttt I don’t want to eat too many cookies. ha

    I made a gluten-free dairy-free frozen pizza for dinner and it was SO good! haha But really, I had been craving pizza which can be hard with my food allergies so it hit the spot. I had some roasted asparagus alongside it which was DELICIOUS!

    Kath,
    You should read up on Walmart and the many cases of employee misconduct, not to mention the Walmart owner’s political and social leanings and donations. I can’t support a store like Walmart, no matter how cheap their items are. Also, I encourage you to think about exactly why and how a store like Walmart can provide these goods so cheaply. These are not built to last items and contribute directly to our disposable everything culture. This doesn’t seem to fit your “brand” and is anything but local. I realize you make money off your blog and therefore you need sponsors, but this seems a step in the wrong direction to me.

      I’ve heard rumors about Walmart’s values. I much prefer Target and go to Walmart just a few times a year. They also aren’t a sponsor – I was just sharing my experience going into the store. I don’t intend to become a Walmart ambassador.

    I love your book recommendations. But seriously how do you find a time to read 1-2 +books every month with a child? I need ideas from you. We’re you doing the same when he was younger, too? I have an active 4 -year-old. After he goes to bed, I am tired.

      I just read in bed every night. I’m also exhausted at 8pm so instead of watching TV for 2 hours, sometimes I just get in bed and read for 30 minutes and fall asleep at 9!

        I will try your way from tonight. It also would help me to have a longer sleep. I always feel bad not to be out to the living room after my son sleeps because that is the time to have a time with my husband with no interruption. But at the end I also need me-time, book, and good sleep. Thanks for sharing your reading habit!

    Lilac Girls is a fantastic book. I had tears in my eyes starting at chapter 2. Tough to read a lot of it knowing that it’s based on real people. Hope you enjoy it.

      I’m finding that I am enjoy 2/3 of the storylines but the one set in NY I’m just so confused. I hear they all intertwine soon, and I’ve been told not to give up on it. I love historical books, so I think I will like this once the story line develops. The war scenes so far have been tough to read.

      I do the same with other bloggers! PB Fingers and Eat Live Run always have good book recs. I sent a sample to my Kindle! I’ll try to read quickly so I can rec some more too!

      Oh that’s a good idea, Christy! I come across so many recommendations and eventually forget all about them. If I just save them on amazon at least they’re there and I can download and buy if/when I want to!
