Waiting for the Sunrise

Just sitting here waiting for the sunrise 8) Then I’m going to open the patio doors and let in the fresh air!

I started the day early with a cup of tea (with just skim).

When the husband came down at 7 I made Kath Classic Oats –

With coffee. I did use splenda today. I think I’m going to use splenda in coffee only – that will keep it to the minimum in my diet. I will also work on using less and less. I seem to have already adjusted to plain tea, so that’s the biggest hurdle! I actually went by EarthFare yesterday to check out the options. Sugar cubes would be a great way to use portion control, but they were much more expensive than regular sugar. And unfortunately the liquid vanilla creme stevia was $12. I talked myself out of buying both because I didn’t think I should be spending money on either.

I used a whole banana today: 490 kcal, 10 grams fiber, 19 grams protein.

I am doing Physio and Stats until 9, when I’m either gyming or running. Undecided! We’ll see what my mood is at the time.

I have to say, I’m already excited about the menus for both lunch and dinner!

    I’m so jealous of your 70* weather!!!! We’re going to be in the 50’s close to 60’s this week….

    It’s going to reach 65 degrees here in Lincoln, NE! Hooray! I started this soon-to-be-sunny day with a bowl of pumpkin yogurt (thanks for the recipe, Kath!) topped with 1/4 cup Kashi GoLean Crunch cereal. It tasted so indulgent first thing in the morning. 🙂

    boo it’s not hitting 70* til Thursday for me…

    Does anybody have any ideas on what to do with buttermilk?? I used some to marinate some tilapia yesterday (before dredging and baking!) but now I’m stuck with almost a whole quart leftover. I tried some plain– it tasted kind of like kefir– but I don’t think I could drink it straight up. Most of the recipes I found are for pancakes or biscuits, neither of which I’m in the mood for, so I’m open to suggestions…! Thanks in advance. 🙂

    looks yummy! I have on off-topic question – I noticed in some of the archives that you were having shoulder tension a while ago, Kath. How did you remedy that? Mine is pretty severe (I’m going to physical therapy starting next week) and leads to headaches. Is there anything you changed or altered that I can learn from?

    QUESTION – What is yuka? what does it look like? Last night I was trying to make sweet potato fries and the guy showed me where to get them. and this looked like a sweet potato on the outside but inside was white with a sweet taste. is that yuka? what did i eat?

    Kath why don’t you just measure out 1 or 2 teaspoons when adding sugar in your coffee? Seems like the most cost effective portion control strategy to me considering you portion out/measure most things.

    Morning everyone!
    I am very jealous of your 70* weather Kath! It’s 37* here in Canada and we’re all excited because it is absolutely beautiful weather considering the time of year!But considering it was -40 last month, it’s quite the change!
    I made myself French toast for breakfast this morning-and tried your trick Kath of having the syrup on the side-and felt kind of stupid for never having done it before! I used maybe 1/10 of what I usually do, and tasted it way more! Thanks for the great way to make my favourite breakfast WAY healthier!

    NC—I made a really tasty “fried” chicken recipe with buttermilk once. The buttermilk really helps to tenderize the meat, and made for an amazing and healthy baked chicken that actually had the crispiness that a regular fried recipe would have.

    This isn’t the recipe I used, but I’ve wanted to try it and it did get good reviews…:)

    DaisyMAY- yucca (that’s how it’s really spelled, I believe) is a root vegetable that comes from the warm parts of North, Central and South America and a lot of it is grown in Africa as well. It is pretty distinctive from a sweet potato or yam- the thing you ate was probably a yam, which is different from a sweet potato and a yucca (or cassava as it’s sometimes called). All three are delicious and nutritious!

    Ummmm, if I sound like a walking dictionary that’s because I looked yucca up in my “Food Lover’s Companion” Food dictionary. I’ve had yucca before and it’s quite good although it’s different from any other vegetable I’ve had before. It’s yummy mashed like potatoes with buttermilk and chives (there’s a buttermilk recipe for you!)- it just needs to boil longer than potatoes if I remember correctly. Fun veggie!

    the website doesn’t really do it justice–it’s a small, quaint bakery that makes more “rustic” pastries and breads. and great coffee! my husband gets their chocolate scones. they use interesting flavors, ingredients and combinations, like pumpkin ginger scones, cinnarmon raisin rolls with wheat flour and no refined sugars etc…they also have woodfired pizzas. it’s worth the 2 hour trip from charlotte.

    $12!?! Jeez, I wouldn’t have bought it either. I’m going to check out my Stevia options this afternoon at the grocery store. Hopefully, I can find something affordable.

    I’m still trying to keep my Splenda use to one packet a day. Using 1/2 a packet actually adds quite a bit of sweetness.

    i have to chime in on the discussion on cassava/yucca. i have had cassava/manioc in africa–it is not very nutritious. it’s basically a very starchy white yam that is pounded into a pile of mash that provides very few nutrients–many people are forced to live on this alone (the name of the final product varies from country to country–i had “fufu” in west africa). i saw a lot of signs of nutrient deficiency in children who were filling up on cassava. some people are fortunate to have beans or peanut sauce to pour over it–i suppose that makes it more palatable too!

    Please be careful when jumping on this Stevia bandwagon. It has not been approved by the FDA. I hope this doesn’t start an argument, but there have been studies thatshow is does have some bad side effects. There is a reason it is not sold in grocery stores and is only marketed as a dietary supplement. Many people use the reasoning “they’ve been using it in other parts of the world forever.” Well, we could probably say the same about marijuana…but is that the healthiest? Anyway, do some research and decide for yourself. For me, sounds a little risky.

    There are some great chocolate cake recipes that use butternilk. This is THE BEST CAKE IN THE WORLD!!!! If you like chocolate, and want to splurge…this is the cake for you!

    Mom’s Denver Sheet Cake

    Melt: 1 cup butter
    4 tablespoons of cocoa
    1 1/2 cups of water

    Add: 1/2 cup of buttermilk
    2 eggs slightly beaten
    some cinnamom and some nutmeg. 2 tbs. vanilla

    Add to dry ingredients.

    Dry ingredients:
    2 1/3 cups of flour.
    2 cups of white sugar
    1 teaspoon of baking soda.

    Cook at 350 degrees and frost while hot.

    Frosting’
    Melt
    1/2 cup of butter
    4 tablespoons of cocoa
    6 tablespoons of butter milk
    1 teaspoon vanilla
    1 pound of powdered sugar (one box)
    Pecan nuts (optional)

    P.S. This is my mom’s recipe, and I’m not sure how long she bakes it for…just does the toothpick test (poke, and see when it comes out clean) I think it is around 30 min.

    Also, be sure to bake it in a sheet pan, that way the frosting and do it’s thing and make the cake chocolatly-gooy and good.

    Hi Kath!!

    Question- when you do your “reverse” workout day, do you ever feel discouraged as time goes by to go to the gym, does getting the workout over first thing in the morning help get it out of the way and make you feel better? This morning I FINALLY got up to workout in the morning! My friend came along with me and that definitely helped me get up! It feels like it was so long ago since I was up at 530 but I have to say I am very proud and it feels soooooo good 🙂 The only thing that bummed me out was an issue I was having….

    I usually run but since I was kind of tired and didn’t want to feel tired running, I started off the first half hour walking while continuously increasing the speed and incline but I noticed towards the end I was getting a cramp. Then when I hit 30 mins and went to run, I could barely make it to 5 minutes because it hurt so bad! I continued walking the entire hour and managed to get about 15 minutes running in towards the end, but when I got off that cramp was really killing me!

    Do you think it was because I was walking at first and talking and I normally don’t do that? I didn’t eat anything beforehand so I can’t put my finger on a specific food that caused it because my stomach was on E. I was actually nervous to eat because when I normally workout after dinner at night time, I notice I get cramps if I eat things with fat, like peanut butter. But if I have a salad, I am usually good to go about an hour afterwards. What do you guys think?

    I know this is a long one… sorry! I just want to figure this out because I would hate for this pain to cause me to stop going in the mornings… it’s only been 1 day so far!

    I appreciate any advice….

    Okay, this might be kind of a bratty question, but I’m sure, Kath, you’ve faced it, as well as others. Since losing this weight, I’ve dropped almost two and half sizes already. Today I put on my ‘work jeans’ (casual office), and they fell off. So I had two options: wear baggy nice clothes and feel crappy or wear closer fitting weekend/going out clothes and feel crappy/weird. I don’t really want to invest in new clothes while I’m still losing…but aside from buying a few cheap items to last me through, any suggestions for Kath/anyone? I’m even especially pissed because I have some really nice investment pieces that are too big on me now. Grrrrr.

    I would say a week and a half if you leave the shell on and peel it when you eat it. A week if you remove the shell after boiling.

    They keep best in a tupperware container with the shell on but do okay in tupperware (try and keep it dry) with shells removed.

    Thats not bratty at all….my pants are way too big, and I don’t want to buy new ones because I still have like 15-20 lbs left to lose. I think I would take the route of buying cheaper clothes to get you through. I’m wearing baggy pants today, they don’t fall off, but look a little ridiculous. They are (were?) my fav because they are so long(I’m 5’10” ish)…guess I have to take my own advice soon.

    Katers – A friend of mine who lost a lot of weight chose select items that she loved and went to a tailor to get them taken in. It is less expensive than buying new clothes when you are still losing weight – she even got some things taken down by 4 sizes and nothing looks weird at all! I hope this helps!

    its ok caitlin, I’m just sensitive on the issue of pot bc my boyfriend was addicted to it in hs and had a lot of trouble. To each her own though! have a good day

    I can understand that. My late father was an alcoholic and about three years ago lost his battle. It’s taken me a long time to learn how to hate the disease, not the symptom.

    Unfortunately it took a job change to rid myself of my shoulder tension. I was sitting at a computer all day and not very happy about it. I used to keep a tennis ball in my car and “roll around on it” during my commute. It definitely helped and worked on my knots and pressure points. You do look a little weird at stop lights rolling around in your seat though!

    Isn’t syrup on the side better!? I do the same with lots of condiments (hence the peanut butter on a spoon). I just like getting a more concentrated taste 🙂

    Most of my clothes were unwearable after a few months – it was sad to have to get ride of some favorites. Throughout my weight loss I just bought a few staple items like jeans and khakis on sale to wear when my old ones were too big. Since I didn’t know where my weight loss would head next, I didn’t want to replace my wardrobe, but the staples got me through. Most of my shirts fit me until the last 10 lbs or so so that was easier. It’s so sad to have to give clothes away, but at least it’s for a great reason.
