To The Tune Of ‘On Top Of Old Smoky’

After an entire day doing business things, I decided to redeem my activity level with a WALK! The bakery is on the edge of such beautiful historic neighborhoods (where we want to buy!) and I need to take advantage of that more often! I ventured out for about 40 minutes, talking to my mom and just soaking in the fresh air. Wonderful!

Before I left I had a cube of Apple Crunch Bread Pudding (whole grain, but loaded with the good stuff!) and made a tiny bowl of cereal out of blueberries, milk and Cville Cluster! Apparently 1 cup’s worth – heh!

I did more closing-the-books work and then before I knew it it was 6PM! We counted the cash, entered the day’s sales, did predictions for tomorrow and biked on home.

Easier said than done! (And I mean the biking part!)

Dinner tonight was a Karen Special!! She made a greek chicken bake with artichokes, feta and olives the other day and brought us our own little container of it. The recipe was not healthy (cream, butter + feta cheese were the stars) but it was DELICIOUS!! Maybe Karen will share the recipe or provide a link if it’s online in the comments!?! I think these were the best artichokes I’ve ever had.

When she brought it over, she told me to serve it over pasta. But had I done that I probably would feel stuffed right now! Instead we served it over garden greens (which Matt says are dwindling 🙁 ) dressed with olive oil and kosher salt. YUM!

Served with sparkling water and a bug spray cocktail. So far this eco stuff (which is mostly strong herbal oils) works pretty well. I felt like I got a bite or two on parts that I didn’t spray (my pinky toe) but in general my legs were bug-free. The only downside is a pre-bedtime shower is a must!

    replant some greens so they come up again in september! the heat is a bit too much for them now which makes mine bitter, but usually i replant so i can enjoy them again 🙂

    Nothing wrong with an early bedtime if you ask me – I was PASSED OUT by 8:30pm last night and it was like the greatest thing ever.

    I definitely would’ve served that over chicken bake over greens as well – a heavy item with another heavy item is usually delicious but can leave you feeling uncomfortably full in my experience. I always try to balance one heavy thing with a lighter thing for “upper stomach” comfort (the picture of the cow you showed so long ago still comes to mind when my “upper stomach” gets full by the way, haha).

    Now “On Top of Old Smoky” is stuck in my head…2nd song you’ve got there today! You’re on a roll 😉

    I love serving things over greens. I do it with chili a lot, and for the 4th bbq, I made a pesto pasta salad and mixed in a heap of chopped up spinach. There was none left to take home.

    Everything you ate looks delicious! I absolutely want lovely artichoke chicken. You can probably do a second planting of greens and have new ones by the time this batch is through.

    Apple Crunch Bread Pudding is stealing my heart. I have told you before how much I adore bread pudding and have a serious crush on the G.H. bread pudding pics you post…now the apple crunch takes my crush to new levels!

    And bug spray. I posted 2 days ago how i HATE it. The smell, the feel, everything about it creeps me out! I will keep that natural one in mind if I ever need some…in San Diego, we don’t have mosquitoes. Where I grew up though, in the midwest…two seasons: blizzards and mosquitoes. Oh, and road construction 🙂

    Oh, that chicken looks so good! She certainly comes up with great recipes. 🙂

    BTW, I ventured out to our local Great Harvest today. 🙂 I bought a loaf of Tuscana Tomato bread which reminds me of pizza and a brownie. The bread is out of this world! They had High 5 and Dakota which I was tempted to get but you know I’ll be back. 🙂

    I can’t fathom how you still are harvesting greens at this time of year! I guess the weather is vastly different there, compared to here (Clt). Greens here have been gone for weeks and weeks. Only Tega Hills (greenhouse grown!) greens can be found at our Farmers Market here in the dead of summer. Jealous!
    I can’t wait to replant greens for fall, but that seems so far away!
    On the upside, I have tomatoes coming out of my ears… erm, garden! 🙂

    I always hate that with bug spray. I don’t like showering before bed (I’m a morning person) but when I use that stuff I have no choice. That chicken looks great! I definitely vote for getting the recipe!!

    Hi Kath! I’m a loyal reader who is currently doing charity work in a rural village in India. When internet is available I try to read your blog even if it just to torture myself with the pictures. Thanks to a few shopping trips to Delhi I can still recreate the oatmeal bowls, although everyone thinks I’m crazy. But a salad is out of the question. A) they aren’t eaten here B) the greens wouldn’t be safe to eat because of the water. Imagine 6 months without a salad!

    I can tell you that that bug spray is no match for the bugs here, but you may have more luck with the US insects. To quote Eat, Pray Love, the mosquitoes in India are “big enough to mount a chicken.”

    Kath, had to tell you this. Last weekend I finally bought some gluten-free oats. Talk about expensive – $7.96 for 2#. Anyway I tried your strawberry cheesecake dough smoothie breakfast and it was EXCELLENT!!! I am in love with it. Can’t wait to try some of the other combinations – like banana and PB. Thanks again for the wonderful taste in my mouth.
