TO-DID

Yee-haw, my TODO list hasn’t been this empty in YEARS!! I’m all caught up on life and just chipping down the school work list for now (and have only 6 freelance articles left for Year 2009!).

After Matt got home this afternoon we hopped on our bikes for a quick ride over to Michelle and Ben’s to check on Tillman the cat. He was still under the bed, but his food was lower and his bowels have been moving! Good kitty. The bike there and back took us about 10 minutes each way and was a fun way to chat about our days.

Once home, you should have seen the look on Matt’s face when he presented me with Great Harvest‘s newest muffin: Apple Strudel. It’s 2/3 whole grain and made with all-natural ingredients 🙂

When I got hungry a little later, I prepared a nice bowl of yogurt with Strudel crumble for a snack. That would be a whole apple slice I found in the muffin there in the middle! Yes, it’s exactly as you would imagine, and the strudel topping is the best crunchy part!

A few hours and an MNT case study later it was PIZZA time! I had a craving this weekend and put it on the meal plan. Pizza is so cheap!

Matt made his whole wheat pizza crust into two pies: a small personal pan for me (I like to maximize crust surface area!) and a larger one for him and the leftover fairy.

For toppings, we baked eggplant and mushrooms at 500* for about 20 minutes (just with cooking spray and salt and pepper) until the eggplant started to melt away. Some leftover mom’s homemade tomato sauce, a Bilinski‘s Jalapeno cheddar chicken sausage and a handful of TJ’s Lite Mexican cheese later…mine was ready.

Matt ate a slice of mine while we waited for his. We use a pizza stone (which is scary because it’s SO hot). I owe you all a video on how to use it. I know. Keep reminding me!

We watched a little of the first Austin Powers after dinner. GREAT movie!! Hilarious humor.

Matt hit the sack for work tomorrow and I’m debating doing work or taking tonight off after 2 nights in a row of working late. I’m planning a run in the AM so it would do me go to get up a little earlier for a head start on my day.

    That pizza looks great! I’ve never made pizza crust from scratch before. I usually by the pre-made whole wheat pizza dough from Trader Joe’s… I’m gonna have to check out Matts recipe 🙂

    I had pizza for dinner, too! Yours looks better, though. I pile way too many toppings on mine…and now I want a muffin. Good thing I have a freezer full of homemade ones. =D

    You are seriously motivating me to stop leaving assignments until they are due…read: the last minute!
    It must be such an amazing feeling.
    One thing though, do you not find that you need the lectures and reading that precede the assignment to adequately prepare yourself for completing it?
    I WANT to find a way to be as ahead of things as you are!!

    Pizza stones are amazing, my uncle used to own a pizza place in Missouri and has taught our whole family some great recipes and introduced us to stones, which makes the pizza taste way better!

    I bought some pocket-less pitas to make pizza this week. I have an eggplant too so that might go on mine after this idea.

    I will have to look at that google tutorial. I only know the basics. And I just figured out the task list after you post about it. I’m eager to use it even more. I’m totally addicted.

    Hi Kath,
    I have a question about using BMR to calculate how many calories to eat to *lose* weight. For instance, you said you have a BMR of 1300 plus given a light lifestyle, you would need about 1800 to maintain, before exercise. So if my stats were the same as yours, and I wanted to lose one pound per week, would it work to eat 1500 calories plus burn 200 through extra exercise (to make a 500 calorie deficit per day)? Thanks so much for letting me know if I’m understanding this BMR thing correctly!

    Matt’s muffin looks sooooo delicious too. Do all of the Great Harvests have these beautiful baked goods, or is he just a master baker who comes up with this stuff on his own? I wish I had a live-in baker…

    The Great Harvest owners decide what to bake, so it will vary from store to store. You could always put in a customer request though!
