Title IX

Help! Someone think of a title for me!

I got home today excited for my bike ride to the gym. But also wishing I could just lounge on the couch. Remembering what I said yesterday about loving my bike ride so much I decided to do it just for the mental boost. It was worth it! A lovely ride, followed by a quick 30 minutes on the ET and about 10 minutes of heavy weights. My arms are feeling more toned – yoga? Swimming? Weights? x3?

Before I left for the gym at 5:00, playtime came in the form of a mixed up snack:

A tablespoon– of yogurt (all that was left!) mixed with a fruit cup I brought home from work, some chai granola, chia seeds, coconut – I think that was it!? Workouts are more fun if you have a big snack first and don’t feel the need to rush home for dinner!

But dinner was worth rushing for anyways. We bought some red quinoa the other week, which I have never had. I have no idea if the red kind is any different than the yellow, but I swear this tasted waaaaaay better!

Matt and I had no plans for dinner tonight (traveling on weekends means we basically just wing it each night for dinner). I told him to make a grain and roast some veggies and we’d figure it out when I got home.

We ended up making a salad with it and it was awesome!!!!!!!

Red Quinoa Sweet + Salty Salad

  • 2 cups cooked red quinoa
  • ~2 cups roasted veggies (we used mushrooms, pepper, zucchini and roasted them at 400* until charred)
  • 4" long English cucumber, diced
  • 1/2 an avocado, diced
  • Chopped almonds for garnish

Dressing to pour on top:

  • 2 tbsp tamari (or soy sauce)
  • 2 tsp honey
  • 2 tsp rice wine vinegar
  • Juice of half a lemon
  • Pinch Garlic Gold (or comparable garlic flavoring)

I did a few hours of homework for my internship 🙁

And then got a little hungry. Found this in the back of the fridge. Put on some cacao nibs. Chomped. Checked the expiration date: 4.5.10. Threw the rest way. It didn’t taste bad, so I hope I’m OK! I’ve eaten yogurt expired by a few weeks, but never more than a month….

    I did the same thing with 2 week old Coconut Milk. I was surprisingly okay too! Thank GOd! 🙂

    You should be okay with the yogurt as long as it didn’t look or taste strange. I just saw that quinoa at Tj’s the other day. I haven’t tried it but now I might need to.

    I eat expired stuff all the time! Well maybe not all the time, food doesn’t usually last that long around me haha. I guess what I mean is that I will eat something that’s expired without so much as a second though. I figure as long as it looks/smells/tastes fine there’s no harm in eating it. Unless the RD-to-be knows something I don’t??

    Mmmm… more avocado! Happiness! That reminds me to go by the farmers market this weekend and pick up some more avos. They are so expensive here compared to Australia but totally worth it. Yum.

      throw them in a blender with frozen berries and carnation instant breakfast…greek yogurt works really well as a smoothie base 😉

    You should be ok! I eat expired dairy WAY past the date as long as it tastes ok. 🙂

    I have read/heard that red and white quinoa have the same nutrition properties and basically no differences, except that red has a nuttier flavor/texture when eaten. I prefer a mix of both. 🙂

    Since that is how it is said and you had never tried red before.

    I think it is cute, or maybe I am just a bit silly….

    I eat expired daily sometimes too…. There’s that fine line though.

    It’s more of a mental thing for me… if its expired fast a few weeks, I just feel weird eating it.

    OK, seriously NOT kidding… I had the EXACT same dinner tonight (minus the dressing + avocado): RED quinoa w/ roasted veggies! Great minds think alike! ;o) I don’t think there is any difference, but I think the red is a bit chewier…

    I have a mental thing with eating anything even a day past it’s expiration date. Sometimes I can’t even eat things on the day they expire! I err on the side of caution always. 🙂

    love that quinoa recipe, and eating yogurt that has gone bad i’ve done that, as well with bars and i never think that they taste off…but i must get that oikos again, had it once and love it, greek yo + caramel = divine.

    I am going to try this quinoa recipe! My mom just bought some quinoa and I have had it at restaurants but I am going to try to make it myself for the first time. Do you think this recipe would still be good with the gold/yellow variety? That’s what we bought…

    Title idea: Quinoyeah!

    My first taste of quinoa was the red kind, but I didn’t really know what to do with it, so I cooked it and then threw it into a stew. I’ll have to take your salad out for a spin.

    I’ve had the red before! It definitely takes longer to cook and I thought it was crunchier than yellow quinoa. That salad seriously sounds so simple and awesome. Perfect flavors! I had an ezekiel wrap today with mixed berry jam and the OV sharp white cheddar..yummm…I melted the cheese and it was sooo good!! I think adding pear or apple might put it over the top!

    I LOVE avocados!! your meal looks so yummy!

    Does your tamari have soy in it? I am allergic to soy (blah!! so annoying!!)and I have not been able to find a tamari sauce that does not have soy in it.

    If it is straight tamari please let me know what the brand is.

      The definition of tamari is a fermented soy sauce, so I doubt you are going to find it without unless it’s a special imitation kind.

        Oohhhh! I seriously thought that tamari was a different type of bean/seed/plant than soy. No wonder I can’t find it!

        I can’t believe all this time I had this misconception! Thanks for clearing it up for me now I can stop my search for something that doesn’t exist 🙂

    I, too, have eaten a lot of expired food in my past. But I have actually never gotten sick from it. Most of the time I didn’t even know until afterwards. But it all tasted and smelled ok!

    I have never had red quinoa, only the yellow. I have a ton of it in my cupboard, so I don’t know when I’ll need to stock up again, but I’ve made a note to check out the red!

    I’m another expired dairy eater, though the only dairy I eat is yogurt..in any event, it just adds some extra tang…

    I like red quinoa better than white/yellow too. And I just saw black quinoa the other day – I wonder how it will compare? So sad I live in the wrong country for the Summit!

    Hi Kath!
    Long time reader, first time commenter! Just wanted to chime in on the red quinoa…I had it for the first time this week as well, and I agree, it is totally different from yellow! I think it is better too! I think it is crunchier and even has a bit more flavor. And it didn’t stick to my rice cooker the way yellow always does 😉

    I have yet to try Quinoa… it always looks so good, but it is one of those things I am kind of afraid of because I don’t know how to prepare it! :/

    I agree with Tracy. Red quinoa is much crunchier! Yellow quinoa can be creamier so I think I like it better, but red has a lot more flavor. They’re both awesome, I can’t decide! 😉

    My roommate made a great red quinoa recipe she got a Trader Joe’s the other night…red quinoa mixed with chilli lime cashews and golden raisins. It looked delicious!

    I’ve seen red quinoa all over the place and I’ve wanted to pick it up (couldn’t justify it with all the other stuff sitting in my kitchen waiting for me to eat it! :-p) – but I will definitely add it to my list. It looks absolutely delicious.

    I like the quinoa salad idea! I want to make something like this this Sunday for the LOST finale. Among other things. Thinking about adding some pineapple and nuts… but overall I want to make a bunch of stuff, like a Hawaiian style “pu-pu” platter! You know, cause LOST is filmed in Hawaii…
    I’m weird.
