The Rest Of The Story

One thing’s for sure – for the first time in 2 weeks I am completely and totally well rested! I slept from 9:45 to 6:26 and had a calming pancake breakfast. Recharged!!!

KERF reader Dani from Vermont visited our bakery last week and brought us some Vermonty treats, including this Maple Buttermilk pancake mix! I decided I was in the mood for cake and put some on the skillet this morning.

I made the mix with lots of flax and mashed banana instead of an egg because I like my pancakes gooey and doughy, and it turned out fabulous! Topped with blue + rasp, coconut and sunflower butter

I love berries so much!! Remind me of this when they are $4-5 a pint. They are worth it!

I brewed some Choffy in my coffeemaker to have on the side. I love the hints of coffee, but it’s just a wee bit too bitter for me. Maybe I’ll add some sugar next time?

This cute little baby Cardinal was rested in the shade and was very cute chirping to me [Had to snap his photo before I opened the door or he might have flown away!]

    I try to remember the same thing when I pick up my $4 bloobs! Oye.

    Kath – what’s your opinion on organic foods? Do you buy organic? Is it really far healthier or does washing help?

    …and can someone tell me the BEST way your supposed to wash produce?

      I believe they have fruit and vegetable wash you can purchase at either Trader Joe’s or Whole Foods {or online}.

      I try to think about the planet (and my budget), so buy as few processed things as possible. I heard a feature on National Public Radio about a wash you make yourself:

      1/4 c white vinegar
      3/4 c water

      Keep it in your kitchen cabinet near the sink in a spray bottle for a one off, like an apple or a basket of berries. If washing spinach, etc., just mix appropriate amounts in a bowl (after sand has been rinsed off of the leaves) to kill any bad guys. Oh, and they emphasized that with an apple, be sure to spray carefully the stem end and the blossom end.

      Have done this since then, no problems so far. Rinse with water after the vinegar wash, unless you really like vinegar!

        Thank you to both! I appreciate that. Yes, I’ve been really (really) bad about not washing my produce (no good excuse – just time, thoughtlessness, …laziness, thinking it “doesn’t matter”) and I really need to change that.

        I assume you spray them with whatever spray or home-made mix you use, then rinse right after – it doesn’t have to stay on for awhile I guess? …do I have to hit every angle of the blueberries…? 😉

          Re the blueberries, I put them in a bowl and spray until they are all pretty wet. Then I mix it around with a spoon (or my fingers), which probably gets most of the spots. I rinse a couple of times w/ clear water and eat!

    These look oh-so-wonderful! I’ve missed pancakes and waffles desperately while here in France–and berries, which are either nonexistent or ridiculously expensive! I’m already dreaming of/planning my first waffle breakfast upon my return home. 😀

    You gotta try Blueberry Buttermilk Pancakes from The Cake Bible by Rose Levy Beranbaum. They are UNBELIEVABLE! While you’re there, try the Yeast-Raised Waffles. Twice as unbelievable but without blueberries.

    The cookbook is really amazing. All ingredients are listed by volume and weight. So now, flour is measured accurately. No more dip-and-sweep method!

    I’m (finally, forgot about it for a little while) drinking Choffy too! I mixed mine with coffee though and it’s pretty tasty, especially with some steamed milk!

    I made your whole wheat yogurt pancakes for dinner last night. They are seriously the BEST pancakes ever! I topped them with some Justin’s nut butter and it was a terrific breakfast for dinner- Thanks Kath!

    I don’t mind paying a little extra for quality berries and produce in general, but cheaper is always a bonus. I wasn’t happy to discover that my $3 cantaloupe and my $5 papaya that looked fine were basically rotten when I took them home from the store and cut into them. I do love this time of year for all the fresh produce, but I am disappointed in the quality of some of the fruit, probably due to the weather. The strawberry picking here in Nebraska has been cut short so the kids and I won’t be going this year. I guess we’ll have to use store bought berries to make jam. Glad you are well rested, it feels so good to start the day refreshed. I’m hoping maybe tomorrow will be my day to sleep a little longer. Enjoy your adventure and your afternoon at the bakery.

    Those pancakes look amazing – I actually had a hankering for some myself this morning but unfortunately I just had no time. Perhaps this weekend I’ll bust out the spatula and whip some up. REAL DEAL syrup and all! Haha

    Ah, sleep sounds so good… I’ve gotten into this horrible habit of staying up into the wee hours of the morning and then getting up at 7. This results in only about 5 hours of sleep. I’ve always devotedly gotten 9 hours every night until this past week. My body’s definately starting to feel it!

    Glad you got completely rested. I did that unintentionally yesterday when I slept right through my alarm and woke up an hour later. I guess my body needed really needed the extra sleep. I hate how fresh berries can be so expensive. Delicious looking strawberries at the farmers this past weekend were $6 a container! I didn’t buy them, but almost wished that I had.

    RE: Your comment about Mondays being slow…

    Make sure you advertise WELL that you are open on Mondays. For the first 6 months our Great Harvest was open we never went on Mondays because we thought it was closed like most bakeries are on Mondays. So make sure you spread the word “OPEN ON MONDAYS!!!!”

    those pancakes look SO GOOD! i wish i had time to make pancakes in the morning but my little one is usually fussy and ready for breakfast asap so i always end up eating a bagel w/nut butter and fruit. love it but it gets old after a while.

    It must be pancake Tuesday! I put blueberries in my pancake mix this morning. We are knee-deep in blueberries here. There are at least 10 u-pick blueberry farms around Gainesville, and plenty more at the Farmer’s Markets. I love summer berries!

    Kath – it appears I may be moving to Charlotte, NC within the next year. Can you tell me where your favorite areas to live would be? we’re looking for safety, and close proximity to restaurants/shopping without spending a fortune (duh – guess that’s what everyone looks for?) Anyway, would love to have your opinion!!

      If you can afford it, anywhere in Dilworth, Myers Park, Plaza Midwood or SouthPark. Along Providence.

      We lived south of Tyvola/Fairview and traffic gets really bad down there.

    My family and I were in Vermont a few years ago, and I wish I would have bought a big container of maple syrup–the real deal 🙂

    Berries are a bit costly, but are so wonderful to eat from time-to-time.
