The Night Shift

My did this bowl of overnight oats work hard for me last night!

IMG_3172 (640x427)

I woke up to this perfectly doughy glop of delicious –

IMG_3163 (640x427)

1/3 cup oats, 1/3 cup vanilla soy milk, 1 container honey flavored Oikos, minus the honey on the bottom, pinch of kosher salt.

I got out the toppings and couldn’t wait to dig in!

IMG_3173 (640x427)

  • ~5 grapes
  • Half banana
  • Spoonful Fortnum and Mason raspberry preserves
  • ~1 heaping tbsp walnuts, toasted to a buttery perfection in the microwave 1 min on high
  • The rest of the bag of Nature’s Path Granola (~1/4 heaping cup?)

IMG_3176 (640x427)

I have died and gone to texture heaven!

IMG_3181 (640x427)

+ Tazo Refresh tea. I’m holding off on caffeine because I’m meeting Victoria at a coffee shop to study and am hoping for a fun flavored cappuccino there! I can’t do double caffeine 🙂

I love overnight oats, but for some reason they are not nearly as filling as a bowl of classic warm oats! Even with nut butter on top!! Wonder why that is…

That’s a bummer when something gets cancelled you really want to do.

I’m taking a nutrition seminar tonight at my trainer’s studio…I really hope it doesn’t get cancelled because I’m interested to hear from a RD about some tips for busy people!

Does it work to make several batches ahead of time and eat them throughout the week?

I just want to thank you Kath for giving me so many exciting breakfast ideas. Now I look forward to waking up and having a delicious KERF-inspired bowl or oats or yogurt every morning
